CANDIED SWEET POTATOES
These perfect candied sweet potatoes are soft, buttery, extra saucy, caramelized, and sweet. I especially love this Thanksgiving side dish because you can prepare the elements of this recipe ahead of time AND purchase the ingredients in advance, too.

Steps:
- Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9×13 inch or other 3 quart baking dish. Sprinkle salt on top and toss to coat. I just use nonstick spray to grease.
- Preheat oven to 375°F (191°C).
- Cut stick of butter in half. (Helps it melt easier.) Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium saucepan over medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for 2 minutes without stirring. Remove sauce from heat and stir in the vanilla extract. (And orange zest, if using.)
- Pour sauce over potatoes and toss to coat.
- Bake for 1 hour, stopping and stirring the sweet potatoes every 20 minutes. After the first 20 minutes, I cover the dish with aluminum foil so the potatoes bake evenly.
- Remove from the oven, sprinkle with rosemary and sea salt (if using), then cool uncovered for 10 minutes before serving. The sauce is thin right out of the oven but thickens as it cools.
- Cover and store leftovers in the refrigerator for up to 1 week. Sauce will be thick after refrigeration, but thins out as you warm the leftovers up. Simply warm in the microwave.

FRIED SWEET POTATOES
Most of my experiments aren't worth saving, but I actually want to remember what I did this time so am posting the recipe for the brown sugar caramelized sweet potatoes that I made. This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

Steps:
- Slice the sweet potatoes thinly, approximately 1/4-1/2 inch thick.
- Melt butter in a large hot frying pan over medium-high heat, then places slices in the pan in a single layer. Sprinkle with salt.
- Fry the potatoes until lightly browned on one side, then flip over each slice. You'll need to watch them carefully and move the slices in the hottest part of the pan to the edges so that they all get browned. Adjust the heat down to medium if needed to keep them from browning too quickly. Total browning time took me about 5-7 minutes.
- When both sides are lightly browned, sprinkle brown sugar and cinnamon across the top. Wait 1-2 minutes and then toss the potatoes until the brown sugar is caramelized (approx 1 more minute).
- Remove from pan and serve immediately.

- Wash sweet potatoes and place them (skin on) in a large pot. Cover with cold water and bring to a boil. Boil sweet potatoes until the outer part is fork tender, but there is still some give in the middle, about 20 minutes. It’s ok if the ends are a little mushy, but you want to be able to actually grate the sweet potato. Remove from water and let cool until you feel comfortable handling them.
- Remove the skins from the sweet potatoes and grate them on the large side of a box grater. It’s ok the the ends are a little mushy! Add everything to a large bowl and mix together really well so that the grated sweet potato mixes with the mushier sweet potato.
- Use a small spoon or tablespoon to scoop the sweet potato and then use your hands to form it into a tater tot cylinder. Place tots on the pan, spray the tops with cooking spray, if desired, and place in the oven.

- Use a knife or mandoline to cut the sweet potato into slices. I sliced mine into coins because my dog is small, but if you have a bigger dog you could slice them lengthwise for larger chews. You don’t want the pieces to be too thin, or they will just get crispy and not chewy, so make sure they are no thinner than 1/4 inch (see photos for reference). Arrange them in a single layer on the baking sheets and bake for 2 1/2 to 3 hours flipping once half way through until they are shrunken, dried out, and some pieces are a bit crispy, while others are a bit chewy. Let cool, then store in an air-tight container in the fridge for about 3 weeks.
