Baked Sweet & Spicy Chicken image

Juicy and tender baked sweet & spicy chicken that comes together in 30 minutes with loads of flavor.

4 boneless skinless chicken breasts (pounded to even thickness)
salt and pepper to taste
⅔ cup brown sugar
2-4 tablespoons hot sauce
2 teaspoons minced garlic
1 teaspoon salt
1 tablespoon apple cider vinegar ((you could substitute white vinegar))
⅓ cup water

Steps:

  • Preheat oven to 400 degrees and grease a large baking sheet (with a raised side) or casserole dish.
  • In a medium sauce pan whisk together all sauce ingredients. Bring to a boil over medium heat and boil for 3-4 minutes. While sauce is boiling, season chicken with salt and pepper on both sides, grease a skillet and cook chicken on both sides 1-2 minutes over medium heat, just enough to brown the very outside.
  • Arrange chicken in a single layer (not overlapping) on prepared baking sheet. Brush with sauce. (there should still be plenty of sauce leftover - reserve for later). Bake for 20-25 minutes until chicken is cooked through. Pour remaining sauce over the chicken and serve hot.

2 teaspoons chopped fresh ginger root

4 skinless, boneless chicken breast halves - cut into 1/2 inch strips
1 tablespoon vegetable oil

Steps:

  • Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
  • Lightly salt and pepper the chicken strips.
  • Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.

2 ½ tablespoons paprika
2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon dried thyme
1 tablespoon ground cayenne pepper
1 tablespoon ground black pepper
4 skinless, boneless chicken breast halves

Steps:

  • In a medium bowl, mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper. Set aside about 3 tablespoons of this seasoning mixture for the chicken; store the remainder in an airtight container for later use (for seasoning fish, meats, or vegetables).
  • Preheat grill for medium-high heat. Rub some of the reserved 3 tablespoons of seasoning onto both sides of the chicken breasts.
  • Lightly oil the grill grate. Place chicken on the grill, and cook for 6 to 8 minutes on each side, until juices run clear.

This dish is actually best with Aguardiente de anís, a clear, anise-flavored brandy, that complements the cinnamon and other spices in this succulent chicken dish. Use dry aguardiente if you can find it or simply substitute Pernod. If you are using a larger skillet I would recommend doubling the first three ingredients, as the heated pan really reduces the liquid fast.

1/4 cup dry white wine
1/4 cup water
1 tablespoon Pernod or 1 tablespoon anis flavored brandy
1/4 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch of freshly grated nutmeg
4 (6 ounce) boneless skinless chicken breast halves
kosher salt
fresh ground pepper
2 tablespoons extra virgin olive oil
2 garlic cloves, minced

Steps:

  • Whisk wine, water and Aguardiente de anís or Pernod in a small mixing bowl.
  • In another small bowl combine cinnamon, cloves and nutmeg.
  • Season breasts with salt and pepper.
  • In a large skillet, heat the olive oil until shimmering and add breasts. Cook over high heat until browned on the bottom, about 3 minutes. Turn the chicken and scatter the garlic in the skillet.
  • Sprinkle the spices on chicken.
  • Pour wine mixture into pan, cover and simmer over moderate heat until the chicken is cooked through, about 4 minutes; season with salt and pepper to taste.
  • Transfer breasts to plates and spoon the sauce on top. Serve immediately.

2 tbsp olive oil
1 large onion , thinly sliced
2 garlic cloves , chopped
knob of fresh root ginger
1 tsp cinnamon , plus a pinch extra
1 tsp garam masala
100g bulgur wheat
25g sultanas
20g pack coriander , leaves roughly chopped
50g toasted flaked almonds
4 boneless chicken breasts

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the olive oil in a medium pan. Add the onion, garlic, ginger and some seasoning, and fry until soft, about 8 mins. Add 1 tsp cinnamon and the garam masala, then heat for 2 more mins. Cover the bulgur wheat and sultanas with water and boil for about 5 mins until soft, then drain any excess water. Add to the onion mixture, then add the coriander and almonds. Check seasoning.
  • Cut each chicken breast open so that it is flat like a book. Divide the stuffing between them and fold the top over. Rub the skins with a pinch of cinnamon. Place tightly packed into a small baking dish and bake for 25 mins. Serve the chicken with the rest of the mix alongside, with some green beans or a wintery veg salad.

1/4 cup low sodium soy sauce
3 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons honey
1 1/2 tablespoons chili paste
6 garlic cloves, minced
1/4 teaspoon salt

Steps:

  • Combine the soysauce along with the next 5 ingredients through and including the garlic cloves in a bowl, and mix together.
  • Place the chicken in a large zip-loc bag, and add the soy sauce mixture to the bag.
  • Marinate in refridgerator for 1 hour.
  • Preheat grill to medium-high heat.
  • Remove chicken from bag, and place marinade in a large saucepan, and bring to a boil, turndown heat and cook an additional 4 minutes.
  • Sprinkle chicken with salt, and place on a grill rack coated with cooking spray.
  • Baste with half of the sauce, and grill for 5 minutes.
  • Turn chicken over , and baste with remaining sauce, and grill for 5 minutes or until done.

Brown sugar gives these grilled chicken breasts a glistening glaze and caramel-like sweetness, while mustard powder and cayenne add an earthy kick. If you don't want to bother making a mustard sauce for dipping, just serve these with dollops of good, strong Dijon mustard on the side. A crisp salad and some grilled corn completes the meal. And if you prefer dark meat, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs for maximum crowd appeal.

4 (6-ounce) boneless, skinless chicken breasts
2 tablespoons dark brown sugar
2 teaspoons ground coriander
1 1/2 teaspoons kosher salt
1 1/2 teaspoons dry mustard powder
1/4 teaspoon cayenne
1 1/2 tablespoons extra-virgin olive oil, more as needed
4 tablespoons Dijon mustard
2 teaspoons minced fresh chives

Steps:

  • Place chicken breasts between two sheets of parchment or plastic wrap. Using a mallet or rolling pin, pound each to an even thickness of 1/2 inch. Do not make them any thinner or they could dry out.
  • In a small bowl, combine sugar, coriander, salt, mustard powder and cayenne. Place chicken breasts in a bowl and rub well with spice mixture. Cover and refrigerate 1 to 2 hours. Remove chicken from fridge while you heat the grill.
  • Light the grill, building a hot fire, or heat your gas grill to high. Once grill is fully heated, brush breasts lightly with olive oil and place chicken on the grill. Cook until undersides are browned and chicken is about halfway cooked, 3 to 5 minutes. Flip breasts and grill until cooked through, 3 to 5 minutes more.
  • Transfer chicken to a platter. In a small bowl, whisk together mustard and chives. Whisk in 1 1/2 tablespoons oil. Serve chicken with mustard for dipping.
