  • Place grapes in a food processor with mint, corn syrup, lemon juice, and salt. Puree; freeze until firm, at least 4 hours.

Steps:

  • Puree grapes, sugar, lemon zest and juice in blender until mixture is smooth. Place mixture in a saucepan and bring to boil over high heat. Let boil 30 seconds, then remove from heat. Strain puree through fine strainer and discard solids. Stir vodka into puree. Let mixture chill in refrigerator, then place in an ice cream freezer according to manufacturer instructions or freeze in a shallow pan, stirring every 10-15 minutes until frozen.

  • Place frozen peaches, separating any that have stuck together, into a food processor with sugar and lemon juice. Blend to the consistency of applesauce, adding orange juice as needed. Taste and adjust flavor with sugar and lemon juice. Serve immediately, garnished with mint sprigs.

1 ¾ cups water
½ cup fresh basil sprigs
2 cups fresh lemon juice
1 tablespoon lemon zest
8 slices lemon
1 sprig fresh basil

Steps:

  • Combine sugar and water in a saucepan over medium-high heat and bring to a boil, 3 to 5 minutes. Boil for 1 minute, stirring occasionally. Add basil sprigs, lemon juice, and lemon zest. Remove from heat and allow to cool for about 20 minutes.
  • Pour into a 9x13-inch metal baking pan or two 8-inch metal cake pans.
  • Place in the freezer for about 30 minutes. Remove basil leaves and stir. Freeze for 6 to 8 hours, stirring sorbet with a fork about once per hour until all the liquid is frozen.
  • Scoop sorbet into individual serving dishes and garnish with lemon slices and fresh basil leaves.

1/2 cup fresh mint leaves, and stems
1/2 cup fresh grapefruit juice (pink or green)
fresh mint sprig (to garnish)

Steps:

  • In a saucepan, combine sugar, water, mint leaves and stems; bring to a boil, lower heat and simmer for 5 minutes; remove from heat, cover and let cool.
  • Pour grapefruit juice and cooled mint mixture into a blender or food processor and blend well. Strain and transfer mixture to a shallow pan, cover and freeze until firm.
  • Transfer frozen mixture to a blender or food processor again and blend well. Freeze again in the shallow pan.
  • When ready to serve, use a melon baller and place 3 scoops in a stemmed glass, garnish with a sprig of fresh mint and serve.
