Steps:
- Cut the pork in about 1 inch pieces and saute in a pan with the vegetable oil for about 3 minutes over medium-high heat, until the pork is no longer pink and starts to brown.
- In a medium bowl mix the rest of the ingredients. Pour over the pork and bring to a boil. You may think there's too much water, but it will reduce. Once it's boiling turn the heat down to low and let simmer for about 30 minutes uncovered, stirring occasionally, or until there's only about 3 tbsp of sauce left.
- Garnish with green onions. Serve over noodles or steamed rice.

Steps:
- Add soy sauce into a small sauce pan. Heat over medium high heat until boiling.
- Add the rest of the ingredients. Stir and cook until the sugar completely dissolves and the liquid starts to simmer again.
- Turn to medium low heat. Simmer until the liquid is reduced to about two-thirds of the original volume, and the soy sauce is thick enough to coat the back of a spoon. Check on the pan every 15 minutes. It could take anywhere from 30 minutes to more than one hour, depending on the heat and the pan you use. Remove the pan from the stove.
- Place a sieve over a heatproof airtight glass container or jar and pour in the soy sauce. Discard all the solid ingredients.
- Let the soy sauce cool completely. It is ready to use. Or you can store it covered in the fridge for a year.

SWEET SOY GLAZE RECIPE
TRADITIONAL JAPANESE RECIPE: Sweet Soy Glaze is that sticky soy glaze sauce perfect for Dango, Ribs, BBQ, Chicken, Pork and so on. Virtually, it's good for everything. Deliciously sweet. It requires a few ingredients and only 5-10 minutes to make it. You can keep it in the fridge, in a sealed airtight container for 1 week, but we believe it's best when it's consumed within 24 hours. The Sweet Soy Glaze will thicken a bit more as it cools so once you are about to reach the right consistency, turn the heat off and let it cool. The perfect consistency should be like honey at room temperature. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

The sauce can be prepared up to 2 days in advance, covered, and left at room temperature.
SWEET GARLIC SOY SAUCE
In Philippine cuisine, dark, fairly harsh soy sauce is favored, but it's often combined with sugar to create a syrupy dressing for vegetables. The added garlic gives this sweet and salty sauce a pleasant kick. This recipe originally accompanied Lumpia Rolls .

- Light soy sauce (生抽) When you see a Chinese recipe that asks for soy sauce, unless it very specifically states another type of soy sauce, it means “light soy sauce.”
- Dark soy sauce(老抽) Dark soy sauce is aged longer than light soy sauce and is often mixed with molasses or caramel and a bit of cornstarch. The resulting sauce is much darker than light soy sauce.
- Thick soy sauce(醬油膏) Thick soy sauce is made with sugar, more wheat in the fermentation process, and sometimes, a starch thickener. It tastes sweet and is usually used in stir-fry foods and dips.
