Amazing butter sauce can be used on anything from seafood to leftover chicken or beef to potatoes. Quick, easy, creamy, and delicious!

15 cloves garlic, peeled
1 ½ tablespoons extra-virgin olive oil
2 ½ cups chicken stock, heated
sea salt and finely ground black pepper, to taste
½ cup cream
5 tablespoons butter, cut into small pieces
¼ cup chopped fresh parsley
2 tablespoons chopped fresh thyme
1 ½ teaspoons chopped fresh oregano

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place garlic cloves in a small baking dish and toss with oil to coat.
  • Bake in the preheated oven until cloves are light golden brown, about 15 minutes.
  • Combine garlic and hot stock in a blender. Season with salt and pepper. Blend until smooth. Add cream, butter, parsley, oregano, and thyme; process until completely blended.
  • Transfer sauce to a container and allow to cool, about 10 minutes. Refrigerate until ready to use. Reheat the sauce over low heat when ready to serve.

  • In small bowl, combine all ingredients.
  • Cover and refrigerate for at least 3 hours.

1/2 cup herbs Note 1
2 small garlic cloves, minced
2 green onions
zest of 1 lemon (plus 1 tablespoon fresh lemon juice, optional)
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/4 teaspoon -1/2 tsp red pepper flakes for medium heat (adjust to your taste)
6 tablespoon olive oil

Steps:

  • MAKE HERBS SAUCE: Finely chop herbs and green onions. Stir together with other dressing ingredients except oil. Slowly whisk in oil. Alternatively (I do this): put all herb dressing ingredients in a processor and pulse to blend well. Or use an immersion blender. Taste and adjust seasonings to your liking. Serve at room temperature.

This marinade can be used for seafood, vegetables, chicken, and pork chops. General rule seafood & vegetables should only marinade for 30 minutes and chicken & pork or larger cuts of meat 1 hr to 24 hrs. Found this recipe in a Betty Crocker grilling brochure.

1/3 cup olive oil or 1/3 cup vegetable oil
1/4 cup lemon juice
1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves
2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme leaves
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped

Steps:

  • Mix all ingredients in dish or plastic Ziploc bag.
  • Add meat of your choice (approximately 1 lb of fish or seafood, 1 lb of boneless chicken or 3 1/2 lbs of bone in chicken, 1 lb pork chops).
  • Turn to coast with marinade.
  • Cover dish or seal bag and refrigerate at least 30 min for seafood and vegetables and no more than 24 hours for chicken or pork.
  • Remove meat from marinade; reverse marinade.
  • Grill meat as desired, brushing occasionally with marinade.
  • Heat remaining marinade to boiling to serve as sauce with grilled meat (with the exeption of the chicken).
  • Important to bring the marinade to a full boil for 1 min to destroy any bacteria that may have been transferred back and forth when the marinade was brush on the uncooked meat.

This a wonderful classical French dish, with a simple delicious butter sauce flavoured with fresh herbs and made from the reduced wine cooking liquid. Tips: Use any of the following chopped fresh herbs and herb mixtures; 3 Tbsp. basil or parsley, 3 Tbsp. parsley and 2 tsp. tarragon, oregano, rosemary, thyme, or marjoram; 1 Tbsp. each parsley, chives & chervil and 2 tsp. tarragon. If fresh hers are unavailable, use one-third of the amount dried herbs instead.

2 tablespoons chopped Italian flat leaf parsley
2 teaspoons fresh rosemary, minced
2 teaspoons chopped fresh thyme
1 teaspoon dried sage
3 cloves garlic, minced
¼ cup olive oil
½ cup balsamic vinegar
salt and pepper to taste
1 ½ pounds skinless, boneless chicken breasts

Steps:

  • In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
  • Preheat grill to medium high heat OR set oven to broil.
  • Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.
