MEATLOAF W/ SWEET AND SOUR SAUCE

Meatloaf W/ Sweet and Sour Sauce image

There are oh-so-many meatloaf recipes here, and I know that I will only ingratiate myself further by adding another one. No? Then consider it done for record-keeping purposes. Admittedly, the ingredients in the sweet and sour sauce seem less than appealing, but the end result is wonderful.

SWEET AND SOUR MUFFIN-TIN MEATLOAVES

Sweet and Sour Muffin-Tin Meatloaves image

These little meatloaves don't take long and are pretty darn tasty. A bit different from the other sweet and sour meatloaf recipes here at Zaar. I think the muffin tin idea is perfect and these are great for OAMC, especially because of their size. How convenient for those of us who cook for one or two to use the size as portion control too. Even if you don't like the recipe, use your own recipe in the muffin tins for quick OAMC opportunities.

Provided by Redneck Epicurean

Categories     Meat

Time 40m

Yield 6 serving(s)

Number Of Ingredients 8

1 cup ketchup
1/4 cup brown sugar
2 tablespoons vinegar
2 lbs ground chuck (not as fatty as regular ground beef!!) or 2 lbs ground sirloin (not as fatty as regular ground beef!!)
1 egg
1 onion, finely chopped
1/2 cup breadcrumbs (try Italian for a different flavor!)
salt and pepper, to taste

Steps:

  • Preheat the oven to 400 degrees and spray a 12-muffin tin.
  • Mix 1/2 Cup of the ketchup, brown sugar, and vinegar in a small bowl.
  • In a large bowl, combine the ground beef, egg, onion, bread crumbs, and the other 1/2 cup ketchup; season with salt and pepper. Combine ingredients well, but don't overwork the meat.
  • Place 2 1/2 teaspoons of the sauce in the bottom of the prepared muffin tin. Form the meat mixture into 12 equal balls and place in the muffin tin, pressing down to smooth the top of meat.
  • Cook the meat loaves until no longer pink in the middle and juices bubble around the edges, about 20 minutes.
  • Remove from the oven and rest 5 minutes before removing from the muffin tins. I find this is easiest if you place a platter on top of the muffin tin, grab it with oven mits, then flip, like you would a round cake. Most all of the sauce should come out with the meat if you let the tin sit upside down on the platter for a minute or two. Scoop out any of the sauce left and smear it on the loaves.

SWEET AND SOUR MEATLOAF

Sweet and Sour Meatloaf image

This is a southern meatloaf. It is the only one I will eat. The sauce makes it the best. Its a little sweet and a little sour. I promise you will love it. It is great on a sandwich the next day with a little mayo and cheese. My husband makes me double this recipe and he would eat it every day if I cooked it! We always fight over the leftovers!!

Number Of Ingredients 14

1 -1 1/2 lb ground beef or 1 -1 1/2 lb ground turkey
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup uncooked rice
1/2 cup cracker crumbs (approx) or 1/2 cup breadcrumbs (approx)
1 egg
1 (8 ounce) can tomato sauce
3 -4 tablespoons packed brown sugar
3 -4 dashes Worcestershire sauce
1 tablespoon yellow mustard

  • Preheat oven to 425°F.

  • Add egg.
  • Add rice, breadcrumbs or cracker crumbs (I've even used potato chips!) for firmness.
  • Open can of tomato sauce put in a little for moisture.
  • Add some salt and pepper and start mushin.
  • I always like garlic in everything so I usually put in a bit.
  • Make into a loaf.
  • Put in a loaf pan or a dish that will leave some room on sides.
  • I like lots of sauce so I put mine in a corning dish with room all the way around.
  • For Sauce: Pour tomato sauce in same mixing bowl.
  • Add all your remaining ingredients.
  • If you like it a little sweeter, add more sugar.
  • A little more sour, add more vinegar.
  • I usually put in quite a bit more Worcestershire sauce.
  • Mix well and pour over meatloaf.
  • Cook covered in oven for about 35 minutes, depending on altitude and oven intensity.
  • Keep checking it.
  • Insert a knife into the middle to check for doneness.
  • This recipe is served best with Mashed Taters and corn.
  • You mush em all together and it's delicious.

CORNFLAKE SWEET & SOUR MEATLOAF

Cornflake Sweet & Sour Meatloaf image

I got this from a co-worker a couple of years ago. THIS IS THE ONLY MEATLOAF MY HUSBAND WILL EAT!! It's the only one I make now- it really is THAT good. I think the nutmeg plays a big part in the taste...a little secret ingredient. Sometimes I double the sauce part, or else I half the meat mixture and keep the sauce part the same.
