1/2 cup butter, cubed
1 cup packed brown sugar
12 slices French bread (1 inch thick)
7 large eggs
1-3/4 cups 2% milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups fresh or frozen unsweetened blueberries, thawed
Maple syrup, optional

Steps:

  • In a small saucepan, melt butter over medium heat. Remove from heat; whisk in brown sugar. Spread into a greased 13x9-in. baking dish; top with bread. In a bowl, whisk eggs, milk, vanilla, cinnamon and salt; pour over bread. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Turn bread slices. Bake, uncovered, 30-35 minutes or until a knife inserted in the center comes out clean. Top with blueberries; bake 10 minutes longer. Let stand 5-10 minutes before serving. If desired, serve with syrup.

I made this for Christmas morning brunch, perfect to put in the oven and go open presents while it bakes. You can top with syrup or whipped cream or nothing at all. I found several different recipes similar to this one, but none had everything I wanted to do with it, so I thought I'd try to make my own. I think it is a very good start, but please, let me know what you think!

1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
2 tablespoons milk
1 tablespoon vanilla extract, divided
2 cups blueberries, divided
2 loaves French bread, cubed
2 cups milk
8 eggs
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Mix cream cheese, confectioners' sugar, 2 tablespoon milk, and 1 teaspoon vanilla extract in a bowl until smooth and creamy; fold in 1 cup blueberries.
  • Cover the bottom of a 10x14-inch baking dish with 1 layer bread cubes. Spread cream cheese mixture over bread layer; top with remaining bread cubes.
  • Whisk 2 cups milk, eggs, 2 teaspoons vanilla extract, cinnamon, and nutmeg together in a large bowl; pour over bread mixture. Sprinkle 1 cup blueberries over bread-egg mixture. Cover dish tightly with aluminum foil and refrigerate, 8 hours to overnight. Remove from refrigerator 30 to 60 minutes before baking.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven for 45 minutes. Remove foil and continue baking until center is set, about 30 minutes.

1 (14 ounce) loaf French bread or 1 (14 ounce) loaf Italian bread
1 (8 ounce) package light cream cheese, cut in small pieces
1 cup fresh blueberries or 1 cup frozen blueberries
12 large eggs
2 cups milk
1/3 cup real maple syrup
1/2 teaspoon ground cinnamon

Steps:

  • Butter a 13x9-inch glass baking pan generously.
  • Tear bread into one-inch cubes; place half into prepared pan.
  • Evenly distribute cream cheese pieces over bread; cover with blueberries.
  • Place remaining bread cubes on top.
  • In a large bowl, beat together eggs, milk, syrup and cinnamon; pour over bread cubes.
  • Cover with foil and refrigerate overnight.
  • In the morning, preheat oven to 350F degrees.

1 loaf French bread, sliced 1-inch thick (probably wont need the whole loaf)
6 large eggs
2 cups milk
1/2 teaspoon ground nutmeg
1 teaspoon vanilla
1 cup brown sugar, divided
1/4 cup butter (or stick margarine)
1 cup chopped pecans (optional)
2 cups blueberries (fresh or frozen)

Steps:

  • Grease a 13 x 9 inch baking dish.
  • Arrange the bread in a single layer in the dish.
  • In a large bowl, beat the eggs. Add in the milk, nutmeg, vanilla, and 3/4 cup of the brown sugar. Stir well to mix.
  • Pour egg mixture evenly over the bread. Cover and let sit 8 hours or overnight.
  • When ready to bake, preheat the oven to 400 degrees.

SAUCE:
4 thick slices brioche bread*
1 package cream cheese, cut into cubes)
1 cup fresh blueberries (frozen works fine, too)
6 large eggs
1 cup milk
1 teaspoon pure vanilla extract
1/3 cup pure maple syrup (not pancake syrup)
1 tablespoon cinnamon sugar (optional but we love it)
1 cup granulated white sugar
2 tablespoons cornstarch (I use Instant Clear Jel)
1 cup water
2 cups fresh (or frozen) blueberries
Zest of one lemon
1 tablespoon butter

Steps:

  • *I buy Brioche buns at Whole Foods, because not only are they delicious, but they aren't horribly expensive. Using an "egg-based" bread will yield the best results. My second choice would be using a French bread that is stale. I don't recommend using plain white bread, but no matter what-- be sure that the bread isn't moist and fresh. Otherwise, you'll end up with gummy French Toast. For the casserole: Spray a 9x13-inch (I use an oval 11 x 9-inch dish) with non-stick spray Cut the bread into 1-inch cubes. Spread half of the bread into the pan, and then spread the cream cheese cubes. Note: I actually added all of the bread, then nestled the cream cheese cubes in between and sprinkled the blueberries throughout (rearranging them until I liked the way it looked. Sprinkle the cinnamon sugar on top. Custard: Whisk eggs in a bowl, add the milk, maple syrup and vanilla. Whisk until well combined. Pour, evenly, over the bread and berry mixture. Cover with plastic wrap, and refrigerate overnight. (I set an oval plate on top to weight it down a bit.) In the morning: Remove the casserole and allow to come to room temperature for about 30 minutes. Preheat the oven to 350°F. Replace the plastic wrap with aluminum foil, and bake for 30 minutes. Remove the foil, and bake for 30 minutes more-- or until it is set in the center and has a golden color. Blueberry sauce: In a medium saucepan, mix the sugar and cornstarch (or Instant Jel) together to evenly combine. Add the lemon zest. Add the water, while whisking (to prevent lumps). Bring to a boil over medium heat, stirring constantly. Add the blueberries (no need to thaw, if frozen), and reduce the heat to medium-low. Simmer for about 10 minutes, or so, or until the blueberries begin to pop. Keep on low heat until the casserole is ready. Remove the casserole from the oven, and top with the blueberry sauce. Be prepared for people wanting seconds!

I much prefer this one because it takes less ingredients and has much less sugar, and I never have sour cream in the house for more than an hour before somebody has devoured it with Doritos! I'm going to experiment sometime next week with making REAL stuffed (without the white bread--just thick hollow French Bread).

4 slices white bread, crust less
4 slices French bread, sliced
1 cup frozen blueberries
1 (8 ounce) package cream cheese
1/3 cup sugar
1/4 cup butter (preferred over margarine!)
4 eggs

cinnamon
1/2 teaspoon almond extract or 1/2 teaspoon vanilla extract

Steps:

  • When you cut the crusts off the bread, be sure to save as much of the bread part as possible, and cut off JUST the crust.
  • Grease an 8x8-inch glass dish.
  • Lay the slices of white bread, with crusts removed on the bottom of the dish.
  • Sprinkle bread with blueberries and ensure good coverage.
  • Place cream cheese and butter in microwave safe bowl and microwave for 2 minutes, stirring occasionally. If you're rather do this with a pan, feel free--remember to stir!
  • When the cream cheese goo is hot and well mixed, carefully stir in sugar and almond extract.
  • Carefully smear cream cheese over the blueberry mixture.
  • Layer the 4 (if your French bread is small, you may have to use more, the point is to have the French Bread cover the dish) French bread slices on top of the cream cheese.
  • In a tall glass or jar crack 4 eggs and add the milk and cinnamon.
  • Whisk with a fork until well blended.
  • Carefully pour egg mixture on the French bread and slightly squish the French bread with a fork to help the absorption.
  • Ensure that all the French bread slices are well covered.
  • Cover dish with aluminum foil (spray with cooking oil so it doesn't stick).
  • Let sit in the fridge overnight, or for at least 3-4 hours.
  • When its ready, preheat the oven to 375°F.
  • Cook covered for 45 minutes.
  • Uncover and cook an additional 15 minutes.
  • If you feel that its not cooked well enough, please cook longer--its at your discretion!
