4 cups prepared strawberries (buy about 2 qt. fully ripe strawberries)
7 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine (optional)
1 pouch CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 4 cups crushed strawberries into 6- or 8-quart saucepot.
  • Add sugar; stir. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in pectin. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

2 pints strawberries, to make 2 cups crushed strawberries
1 1/2 tablespoons lemon juice
4 cups sugar
1 (3 ounce) envelope Certo

Steps:

  • Wash and rinse containers (make sure they are sterile).
  • Prepare the berries crushing one cup at a time using a potato masher.
  • Measure exact amount of berries and juice and place in a large bowl.
  • Measure the exact amount of sugar (no sugar substitutes) and stir into the prepared fruit; mix well and let stand for 10 minutes stirring occasionally.
  • While waiting, in a small bowl, stir the Certo fruit pectin into the lemon juice.
  • After the 10 minutes has gone by with the berries, stir the pectin mixture into the prepared fruit.
  • Stir constantly until sugar is completely dissolved and no longer grainy--about 4 minutes (a few sugar crystals may remain--it's O.K.).
  • Pour into prepared containers, leaving a 1/2" space at the top for expansion during the freezing; cover.
  • Let stand at room temperature for 24 hours till set.
  • You may store in the refrigerator for about 3 weeks or store in the freezer for up to one year; thaw in the refrigerator.

1/2 cup water
6-1/2 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine

This jam recipe is very easy to make and delicious! The strawberry and peach are a perfect combination. I use pectin because it cuts down the cooking time and sugar significantly. You can cut this recipe in half for a smaller batch. This recipe makes approx. 12 8oz. jars. Enjoy!

5 cups peaches (equals 12 large peaches, mashed)
3 1/2 cups strawberries (equals 3 pints, mashed)
2 cups sugar
1/2 cup lemon juice (1 Tablespoon per cup of fruit)
5 -6 teaspoons dry pectin (reviewers have added more pectin for a thicker jam)

Steps:

  • Wash and mash strawberries.
  • Slice, pit, and dice peaches. Next, mash peaches.
  • Place fruit in large pan on medium heat.
  • Cook until it boils, stirring a few times. Reduce heat and cook for 30 minutes.
  • In separate bowl, combine sugar and pectin and stir together.
  • Add sugar/pectin mixture into fruit and stir. Add lemon juice.
  • Boil (high boil) for 5 minutes.
  • Remove from heat and fill jars to 1/4" of top. Recipe makes approximately 12 8oz. jars.
  • Wipe rims clean and screw on 2-piece lids.
  • Submerge sealed jars into hot water bath at 200 degrees or boiling water for 10 minutes. Lids will "pop" once removed from hot water bath and you know they are sealed. Let cool on counter.

  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Refrigerate up to 3 weeks or freeze up to 1 year. Thaw in refrigerator.

1 cup kiwi, peeled and crushed
1 cup strawberry, crushed
2/3 cup unsweetened pineapple juice
1/3 cup lime juice
1 (1 3/4 ounce) package fruit pectin
3 cups sugar
1/4 cup rum (Try a Flavored rum)

Steps:

  • PREPARE boiling water canner. Wash and heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
  • COMBINE kiwifruit, strawberries, pineapple juice and lime juice in a large saucepan. Gradually stir in pectin. Bring to a boil over high heat, stirring frequently. Add sugar and return to a full rolling boil that can not be stirred down, stirring constantly. Boil hard for 1 minute, stirring constantly. Immediately stir in rum and green food coloring, if using. Remove from heat. Skim off foam if necessary.
  • Carefully ladle hot jam into hot jars leaving 1/4 inch headspace. Wipe rim. Center lid on jar. Center lid on jar. Apply band until fit is fingertip tight.
  • Process in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Lable and wrap a ribbon if giving for gifts.
