1/2 cup sugar
1 tablespoon cornstarch
4 large Land O Lakes® Eggs (yolks only)
2 teaspoons vanilla
Fresh raspberries, strawberries and/or blueberries

Steps:

  • Cook whipping cream in 2-quart saucepan over medium heat 6-8 minutes or until cream just comes to a boil. Remove from heat.
  • Combine sugar and cornstarch in bowl.
  • Stir together sugar mixture and egg yolks with whisk in bowl 3-4 minutes or until mixture is light and creamy. Whisk hot whipping cream gradually into beaten egg yolk mixture. Return mixture to same saucepan; stir in vanilla. Cook over medium heat, stirring constantly, 3-4 minutes or until custard is thickened and coats back of metal spoon. Do not boil. Remove from heat; cool 20-25 minutes.
  • Serve custard warm or cool over fresh berries.

Fruit custard is a delicious chilled dessert where fresh seasonal fruits are served with a creamy eggless custard. It is a summer dessert very popular in India.

2½ cups milk ((can use almond milk or soya milk))
3 tablespoons custard powder ((or cornstarch or arrowroot powder))
¼ cup warm milk ((to make dissolve custard powder))
4 to 5 tablespoons sugar ((adjust to taste))
1 medium apple
½ large mango ((ripe))
1 medium banana ((ripe))
½ medium pomegranate

Steps:

  • Rinse the fruits thoroughly and chill them in the fridge. Refrigerating after chopping will let out juices from the cut fruits making the custard runny.
  • Heat 2½ cups milk in a wide heavy bottom pan or pot. Add sugar and stir until it dissolves.
  • Meanwhile add custard powder to a small cup and stir it with ¼ cup milk (warm or at room temperature). The mixture has to be smooth without any lumps.
  • When the milk turns hot (not boiling), pour 2 tbsp of the custard mix to the hot milk. Whisk well to incorporate it with the milk.
  • Repeat adding another 2 tablespoons custard mixture to the milk and whisk well. This way incorporate all of the custard mixture to the milk in 3 batches, whisking after each addition.
  • You may taste test it at this stage and add more sugar if needed.
  • Keep stirring and cook on a low to medium heat until the custard turns thick. The custard must coat the back of the spoon well but must be yet of runny consistency. (check video)
  • Take it off the heat and whisk it well to make it super smooth. Cover immediately. Cool this completely and chill it in the fridge.
  • Whisk the custard well before serving. This ensures even and smooth fruit custard.
  • Peel and chop the fruits to bite size. Add them to serving bowl or individual serving cups.
  • Pour the custard over the fruits and gently mix. Serve fruit custard immediately.

1/2 pint blueberries
1/2 pint raspberries
1/4 cup port
1/4 cup plus 1 tablespoon sugar
4 large egg yolks

Steps:

  • Cook's Note: For a nonalcoholic version, substitute the port with 1/4 cup white grape juice mixed with 1/2 teaspoon vanilla extract.
  • In a medium bowl, combine the berries with 1 tablespoon port and 1 tablespoon sugar. Allow to sit and macerate while you prepare the zabaione.
  • Bring a small pot of water to a boil over medium heat. In a bowl that will fit over the top of the pot, beat the egg yolks with the remaining 1/4 cup sugar with an electric hand mixer until pale. Place the bowl over simmering water and, with the beater running slowly, drizzle in the remaining 3 tablespoons port. Continue to beat until the mixture becomes very thick and has doubled in volume, 5 to 10 minutes. Remove from the heat.
  • Divide half the berries among 4 serving glasses. Top each with a generous dollop of zabaione, garnish with the remaining berries and serve immediately.

6 ounces fat-free lemon yogurt
2 egg yolks
5 tablespoons sugar
1 teaspoon cornstarch
1 pinch salt
2 tablespoons grated lemon zest
1/3 cup fresh lemon juice
1 cup 1% low-fat milk
1/2 teaspoon vanilla
2 cups fresh mixed berries or 2 cups frozen mixed berries
4 sprigs of fresh mint

Steps:

  • Line a sieve with a coffee filter, spoon in the yogurt and let drain for about an hour in the refrigerator.
  • In a medium saucepan whisk together the egg yolks and sugar.
  • Add cornstarch, salt, 1 Tbsp lemon zest and lemon juice and whisk together.
  • Whisk in the milk over medium heat.
  • Switch to a wooden spoon and cook, stirring constantly, until custard is thickened to the consistency of a thin pudding - about 5-8 minutes.
  • Bring it up TO the boiling point but DO NOT let it boil.
  • Remove when it is thickened and immediately pour into a bowl.
  • Stir in vanilla, let mixture cool for 15 minutes.
  • Whisk in the yogurt cheese from first step and chill for at least 1/2 hour.
  • To serve, top berries with chilled custard sauce and garnish with the fresh mint and remaining lemon zest.

ROAST GOOSE WITH JUNIPER BERRY SAUCE AND CHESTNUT CUSTARD

Salt and pepper
4 sprigs thyme
1 sprig rosemary
3 bay leaves
1 head garlic
1 teaspoon juniper berries
2 carrots
1 celery root
2 sweet potatoes
2 turnips
2 parsnips
2 pounds chicken bones
Neck and wings from the goose
2 onions
2 stalks celery
1 carrot
1 tablespoon tomato paste
1 quart red wine
2 teaspoons juniper berries
2 sprigs thyme
1 sprig rosemary
1 bay leaf
1/2 head garlic
2 ounces butter
1/2-ounce corn oil
1-ounce gin
Salt and pepper
10 ounces cream
3 eggs
5 ounces chestnut puree
4 ounces boiled chestnuts, diced

Steps:

  • Place goose in an oiled roasting pan. Season goose, inside and out with salt and pepper. Inside goose, place thyme, rosemary, bay leaves, half a head of garlic and juniper berries. Roast in a preheated 350 degree oven for 1 1/2 to 2 hours, depending on size of goose (14 minutes per pound). During that time, peel and cut the vegetables in cubes of 1 to 1 1/2 inches, and set aside. Baste the goose with its own fat every 10 minutes. 45 minutes before the goose is done, remove the excess fat from the pan and add the vegetables and half a head of garlic.
  • Roast the bones in a 350 degree oven for 35 minutes. When half done, add the vegetables and roast together. In the last 5 minutes, add the tomato paste. Remove from the oven and transfer to pot and cover with water (or chicken stock if available). De-glaze, with red wine, the pan in which the bones had been roasted, reduce 50 percent and add to the stock. Crush the juniper berries on a cutting board with the bottom of a sauce pot, add to the stock with the thyme, rosemary, bay leaf and garlic, simmer 1 1/2 hours. Strain into a saucepan and reduce gravy to a fine chinois consistency (when it coats the back of a spoon). Finish by whisking in butter, add gin, salt and pepper and reserve in a hot bain marie (double boiler).
  • Mix all the ingredients, starting with the cream and finishing with diced chestnuts. Butter 8 small dariol molds and divide the mixture between them. Cook in a bain marie (double boiler) in a preheated 325 degree oven for 20 minutes. Cool for a few minutes before un-molding onto the serving platter with the goose and the roast vegetables.

Return to saucepan and cook over moderate heat, stirring constantly, until sauce thickens enough to coat back of a wooden spoon and registers 170°F. on an instant-read thermometer.
  • Immediately pour sauce through a fine sieve into a metal bowl and place bowl in a large bowl of ice and cold water. Stir in vanilla and whisk custard occasionally until cool, then cover surface with a piece of wax paper to prevent a skin from forming.

The crisp needn't be served piping hot straight from the oven; it's delicious served at room temperature or just slightly warm.

2 cups/480 grams half-and-half
1/2 cup/100 grams granulated sugar
1 tablespoon cardamom seeds, or 6 green cardamom pods, smashed

Steps:

  • Make the topping: Put flour, sugar, butter and ground cardamom in a medium bowl. Using your fingertips, work ingredients together until the mixture resembles wet sand with a few stray pebbles. (The topping can be made in advance and refrigerated for 1 week or frozen for up to 2 months.)
  • Heat oven to 400 degrees. Toss the blackberries with ½ cup/100 grams sugar and transfer the mixture to an 8-inch square baking dish.
  • Sprinkle topping over berries loosely, and transfer to the oven. Bake for 30 to 40 minutes, until the topping is well browned. Let cool for 10 minutes, or serve at room temperature.
  • As the crisp bakes, make the custard sauce: Put half-and-half and sugar in a small saucepan over medium-high heat. Add the cardamom seeds and bring to just under a simmer, stirring. Put yolks in a bowl and whisk until smooth, then whisk in 1 cup of hot half-and-half mixture. Pour the contents of the bowl back into the saucepan and cook, whisking, on a very low flame until the mixture barely thickens, about 5 minutes. Strain through a fine-mesh sieve. Serve sauce hot, or let cool and refrigerate until ready to use. (Sauce can be made up to 2 days in advance.)
  • To serve, scoop large spoonfuls of crisp into individual shallow bowls. Ladle the sauce around each serving or pass the sauce at the table.
