- 1. Preheat one Frigidaire Gallery® Double Wall Ovens to 400°F. Grease a 2-quart shallow baking dish with 1/2 tablespoon butter. 2. Spread the onions in the dish, sprinkle with salt and pepper, and dot with the remaining tablespoon butter. Roast until tender and caramelized, about 30 minutes. 3. Meanwhile, bring a large saucepan of water to a boil over high heat on a Frigidaire Induction Cooktop. Add the cauliflower and 1 tablespoon salt. Boil until very tender, about 10 minutes. Use a slotted spoon to transfer the cauliflower to a food processor. Puree until very smooth, scraping down the sides of the bowl occasionally. Add the cheese and nutmeg and process until very smooth. Season to taste with salt and pepper. 4. Fold the sauce into the roasted onions, cover tightly with foil, and return to the oven. Bake until the sauce is thickened and bubbling, about 15 minutes. Meanwhile, preheat the other Frigidaire Gallery® Double Wall Oven to the power broil setting, with a rack 6 inches from the broiler heat source. 5. Uncover the dish and transfer to the broiler. Broil until browned in spots, 1 to 2 minutes. Sprinkle with parsley and serve hot.

- Cut an X in stem end of each onion. Cook in salted boiling water for 1 to 2 minutes. Drain, and peel.
- Heat butter and water in a pan over medium-high heat. Add onions, and cook for 4 minutes. Stir in peas and 3/4 teaspoon salt, and cook for 2 minutes. Stir in mint. Serve immediately.

- Place onions into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
- Melt butter in a large skillet over medium heat; cook and stir flour and nutmeg in melted butter for about 5 minutes; season with salt and pepper. Add cream to flour mixture; cook and stir until bubbly and thick, about 5 minutes more. Stir onion and parsley into cream sauce until heated through, 2 to 3 minutes.

- 1. 1. In 3-quart sauce pan, boil 4 cups water. 2. Add onion to boiling water. 3. Partially cook onion on Max/Sear for 3- 5 minutes or until outer skin has shrunk. 4. Place onions in ice bath to stop cooking process. 5. Cut onions at tip and base and peel off skin. Set aside. 6. In 9.5-inch fry pan, cook bacon on High (425 degrees) for 2 minutes or until slightly crispy. 7. Add onions and saute, stirring occasionally, for 5 minutes or until golden brown.
GLAZED PEARL ONIONS RECIPE

- Using a paring knife, trim off the ends of each onion and score a light "X" into one cut side. Bring a medium pot of water to a boil over high heat. Add onions and cook until outer layers are soft, about 1 1/2 minutes. Drain onions and run under cool water until cold enough to handle. Peel onions with your fingers and discard peels.
- Transfer onions to a large saucepan or high-sided sauté pan and cover with water. Add butter and sugar. Bring to a boil over high heat, reduce to a simmer, and cook, stirring and shaking pan occasionally, until onions are completely tender and sauce water has reduced and emulsified with the butter into a glossy glaze, about 25 minutes (if butter looks greasy or broken, add 2 tablespoons of water and shake pan to bring glaze back together). - Rinse and pat dry the duck breasts. Place on a cutting board, fat side up. Score the fat by making diagonal cuts about 1/2 inch deep in the fat going one way, then similar diagonal cuts the other way to create a criss crossed pattern.
- Place the duck skin and fat side down in a cold non-stick pan (preferably oven proof). Season the duck breast (non fat side) with the thyme and a bit of salt to taste. Place pan over medium heat and slowly render the fat from the duck, pressing gently. The fat basically melts off the meat during this process, which takes about 10 minutes.
- Once the fat has been rendered and the skin is golden brown, flip the duck over and place the pan in the preheated oven for 5 to 10 minutes, until the internal temperature of 135 degrees.
