Time 2h15m

Yield 4

Number Of Ingredients 24

4 x 1lb - 1 1/4 lb lamb shanks
kosher salt
3-4 tablespoons oil (you will drain this off)
1/2 cup water
1 large onion- diced
6 garlic cloves, smashed
1 large fennel bulb, chopped ( or sub 2 ribs celery-diced)
1 small red beet, scrubbed and diced (optional, for glorious color, about 1/2 cup)
4-5 rosemary sprigs (or sub thyme sprigs )
2 bay leaves
3 inch x 1 inch strip of orange zest ( use a veggie peeler)
1 cinnamon stick
1 teaspoon whole fennel seeds
1 teaspoon cumin
1/2 teaspoon allspice
1/2 teaspoon salt
1 cup rich red wine or ruby port
---
1 cup pomegranate juice, unsweetened
1 cup chicken stock or broth
2 tablespoons maple syrup or honey
--
pepper to taste
splash red wine vinegar ( 1-2 teaspoons)

Steps:

  • Let lamb come to room temp (unwrap on counter 20-30 mins) and season lamb generously with kosher salt.
  • Heat oil in an extra large heavy bottomed Dutch oven. Working in batches, sear the lamb shanks on all sides over medium high (or medium) heat. Take your time here and do this well. Set the shanks aside. Drain the oil.
  • Add the water to the same pan and bring to a simmer, scraping up any browned bits. Simmer 3-4 minutes. To the water, add onion, garlic, fennel, beet, orange peel, herbs and spices and salt to the pan and stir until vegetables soften, about 5 minutes. Add the wine, and gently simmer until alcohol cooks off, another 5 mintues. Add the pomegrantate juice, chicken stock and maple syrup, stir to combine. Bring to a simmer.
  • nestle the lamb shanks down in the liquid,on their side, meaty side down, bring to a simmer on the stove, then cover well, and place in a 325 F for 1 1/2 - 2 1/2 hours or until meat is tender (internal temp 195-205F) Keep in mind that larger shanks will take longer to cook, smaller shanks, less time, so if in doubt, check at 1 1/2 hours- add more time if not tender. Basically, meat will get more tender as it braises, but you may need to add more broth or stock if using big shanks. So check liquid level.
  • When shanks are tender, remove from pan, rest on a platter or baking dish in a warm spot like the stove top 20-30 minutes. While resting make the sauce.
  • Make the sauce. Strain the braising liquid. If making ahead, you could let this cool in the fridge to allow more fat to separate (it will rise and harden) or skim off warm fat with a ladle. Place 1 1/2 cups, skimmed braising liquid in a small sauce pan and simmer, reducing just until it tastes flavorful. It really doesn't need to reduce until "thickened" (see notes) which may result in flavors getting too salty or condensed. Add a little splash of vinegar. Season it with salt and pepper. Sometimes I'll add a little squeeze of orange juice. Up to you.
  • the lamb shanks on a platter, spoon the flavorful sauce over top, garnish with fresh pomegrante seeds and a few sprigs of rosemary.
  • the lamb shank over the polenta or couscous, spoon the flavorful sauce overtop. Garnish with fresh pomegrate seeds. Fresh parsley is nice here or a sprig of rosemary, something green. ????

Grilled Lamb with Pomegranates and Israeli Couscous image

Give lamb chops a Middle Eastern twist by serving them over a couscous salad filled with crunchy almonds, pomegranate seeds, raisins, mint and warm spices. Pull the chops from the grill and drizzle with tart pomegranate molasses to complete the dish.

Time 40m

Yield 4 servings

Number Of Ingredients 17

1/4 cup olive oil
2 small cloves garlic, halved
1 lemon, 2 strips of zest removed and lemon halved
1/3 cup slivered almonds
1 cup Israeli couscous
Kosher salt
1/2 cup pomegranate arils (seeds)
1/4 cup golden raisins
1 tablespoon torn fresh mint leaves, plus more for garnish
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon turmeric
1 large sprig rosemary
1 rack of lamb, cut into double chops
Kosher salt and freshly ground black pepper
1/4 cup pomegranate molasses

Steps:

  • For the infused olive oil: In a medium saucepan, combine the olive oil with the garlic and lemon zest and cook over medium heat until the garlic just begins to brown and the oil is fragrant, 3 to 4 minutes. Set aside.
  • For the Israeli couscous: Preheat the oven to 400 degrees F.
  • Spread the slivered almonds onto a sheet tray and toast until golden, 5 minutes.
  • Heat 2 tablespoons of the infused oil in a medium pot over medium-high heat. Add the Israeli couscous and cook, stirring occasionally, until golden, 3 to 4 minutes. Add 1 1/2 cups water and 1/4 teaspoon salt, bring to a simmer over medium-low heat and cook, covered, until the water is absorbed, 5 to 7 minutes. Add the pomegranate, golden raisins, mint, cardamom, cinnamon, cumin, turmeric and toasted almonds. Stir to combine and season with more salt to taste.
  • For the lamb chops: Heat a grill pan over high heat until almost smoking.
  • Dip the rosemary into the infused oil and brush both sides of the lamb chops with the oil. Season with 3/4 teaspoon salt and 1/2 teaspoon pepper. Place onto the grill pan fat-side down and cook for 2 minutes. Cover with a metal bowl to trap the heat and continue to cook, turning on all sides, until medium rare, about 10 minutes. Set aside to rest. Place the lemon halves onto the grill and cook until caramelized, 3 to 4 minutes.
  • To serve, slice the lamb into single chops and plate on top of the couscous. Drizzle the pomegranate molasses over the lamb chops and garnish with torn mint. Serve with the grilled lemon.

PULLED LAMB SHOULDER WITH STICKY POMEGRANATE GLAZE

Pulled lamb shoulder with sticky pomegranate glaze image

Cooking the meat really slowly in fruit juice makes it meltingly tender, and the juices double up as a sweet glaze

Provided by Cassie Best

Categories     Dinner, Main course

Time 5h20m

Number Of Ingredients 12

4 garlic cloves , chopped
2 tsp ground cinnamon
2 tsp ground cumin
1 tbsp dried oregano
1 lemon , quartered, pips removed
1 ½kg bone-in lamb shoulder joint
2 red onions , cut into wedges
1l carton pomegranate juice
2 tbsp clear honey
250g natural yogurt
100g tub pomegranate seeds, or seeds from 1 fresh pomegranate
small handful mint leaves, chopped

Steps:

  • Put the garlic, cinnamon, cumin, oregano and lemon in a blender with 1 tsp salt and 2 tsp black pepper. Blend until smooth. Put the lamb in a large roasting tin and tip the marinade over the top. Massage all over the lamb and leave for 24 hrs in the fridge, or up to 2 days.
  • Remove lamb from the fridge 1 hr before cooking. Heat oven to 160C/140C fan/ gas 3. Scatter the onions around the lamb, tucking some underneath, then pour over the pomegranate juice. Cover the lamb with foil and cook for 4 hrs.
  • Remove the foil, carefully pour the meaty pomegranate juices from the tin into a large saucepan and add the honey. Increase oven to 220C/200C fan/gas 7, re-cover the lamb and continue cooking for 30 mins. Meanwhile, bubble the cooking liquid over a high heat until reduced, thick and syrupy - this may take up to 30 mins.
  • Pour the sticky pomegranate glaze over the lamb and onions and return to the oven for another 30 mins, uncovered, until the glaze is bubbling and just starting to char, and the lamb is really tender. Mix the yogurt, most of the pomegranate seeds and mint leaves in a small bowl. Shred the lamb at the table and serve with the sticky onions and the minty pomegranate yogurt. Scatter over the remaining pomegranate seeds.

SPICED LAMB AND RICE WITH WALNUTS, MINT AND POMEGRANATE

Spiced Lamb and Rice with Walnuts, Mint and Pomegranate image

A baked lamb and rice dish I tasted in Istanbul, etli pilav, inspired this one-pot meal, topped with walnuts and fresh mint and pomegranate seeds. Similar pilaf-style rice dishes are made all across the Middle East and into Asia. Kabuli pulao in Afghanistan is acclaimed; the Persian baghali polov ba gusht is justly famous, as is the Lebanese Hashwet al-ruz; and there are myriad fabled biryanis made with lamb (or goat) in India and Pakistan. Pomegranate molasses is available in Middle Eastern groceries or online. It provides a sweet-sour, fruity undertone, but you may omit it and still get good results. Try a squeeze of lime instead.

Time 2h

Yield 6 servings

Number Of Ingredients 19

1 cup dried chickpeas, soaked overnight, or 3 cups cooked or canned chickpeas
2 pounds boneless lamb shoulder, cut in 1-inch cubes
Salt and freshly ground black pepper
2 tablespoons olive oil
1 large onion, diced
1/2 cup golden raisins
2 tablespoons pomegranate molasses, optional
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground allspice
1/4 teaspoon ground mace or nutmeg
1 cinnamon stick, 2 inches long
1 1/2 cups basmati rice, soaked for 20 minutes and rinsed
1 tablespoon unsalted butter
1 cup walnut halves and pieces
1/2 cup fresh pomegranate seeds
2 tablespoons roughly chopped mint
Pinch of crushed red pepper
Thick plain yogurt, for serving

Steps:

  • If using dried chickpeas: Put soaked chickpeas in a saucepan and cover with water by 1 inch. Bring to a boil, then reduce heat to a simmer. Cook, uncovered, for 45 minutes to an hour, until tender. Top up with water as necessary to keep chickpeas covered. (If using pre-cooked or canned chickpeas, skip this step.)
  • Season lamb pieces generously with salt and pepper. In a large heavy skillet or Dutch oven with a lid, heat oil over medium-high heat. Working in batches over high heat, brown the lamb pieces on both sides, removing them to a plate as they are cooked. (Don't crowd the pan or they won't brown nicely.)
  • When all the lamb is browned and the pot is empty, reduce heat to medium high. Add onions, season with salt and pepper and cook, stirring occasionally, until softened and lightly browned, 6 to 8 minutes. Add raisins, pomegranate molasses (if using), cumin, coriander, allspice, mace, and cinnamon and stir to coat. Return lamb to the pot, along with any juices.
  • Heat oven to 350 degrees.
  • If using canned chickpeas, drain well. If using cooked chickpeas, drain and reserve the cooking liquid. Add drained chickpeas and rice to onion mixture and stir together. Turn heat to high and add 2 cups chickpea cooking liquid (or 2 cups water or broth, if using canned chickpeas). Bring to a boil, then reduce to a simmer. Cover tightly. Bake about 1 hour, until lamb is tender when probed with a fork and rice is cooked through. Let rest for at least 10 minutes before serving, or up to 30 minutes.
  • Meanwhile, in a small skillet, melt butter over medium heat until it foams. Add walnuts and cook, stirring, until lightly browned, about 2 minutes. Salt lightly and set aside. Fluff the lamb and rice gently, lifting up from the bottom. Serve directly from pot or transfer to a serving platter. Sprinkle with walnuts, pomegranate seeds, mint and crushed red pepper. Pass a bowl of yogurt at the table.
