1/2 cup raspberry preserves
2 tablespoons balsamic vinegar
1 tablespoon raspberry-flavored liqueur, if desired
4 boneless skinless chicken breasts
3 teaspoons dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
1/2 cup chopped red onion
1/4 cup fresh raspberries

Steps:

  • In small bowl, mix preserves, vinegar and liqueur; set aside.
  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Sprinkle chicken on both sides with thyme, salt and pepper.
  • In large skillet, heat oil over medium-high heat. Cook onion in oil about 3 minutes, stirring frequently, until softened. Add chicken; cook 8 to 10 minutes, turning once, until no longer pink in center. Remove chicken to plate; cover to keep warm.
  • Leave onion in skillet. Add preserves mixture; cook 1 to 2 minutes, stirring constantly, until thickened. Spoon sauce over chicken. Top with raspberries.

4 boneless, skinless chicken breast cutlets
Kosher salt and freshly ground black pepper

1/4 cup olive oil
4 cloves garlic, chopped
1 large shallot, chopped
1 cup chicken stock
1/2 cup white wine
6 ounces cremini mushrooms, sliced
1 cup fresh raspberries
1 tablespoon unsalted butter
1 tablespoon balsamic vinegar
1 teaspoon grated lemon zest

Steps:

  • Season the chicken with some salt and pepper. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot but not burning, add the chicken and sear for 3 minutes on each side. Remove from the skillet and set aside.
  • Using the same skillet, add the garlic and shallot and cook over medium heat for 1 minute. Add the chicken stock and wine and cook until slightly reduced, about 10 minutes. Add the sliced mushrooms and lower the heat to a simmer. Return the chicken to the skillet, cover and cook until the chicken is cooked through, an additional 10 minutes. Add the raspberries, butter, balsamic vinegar and lemon zest, and continue cooking, uncovered, for 1 minute.

2 skinless, boneless chicken breasts
2 tablespoons butter
1 tablespoon vegetable oil
3 tablespoons shallots, minced
⅓ cup chicken stock
¼ cup raspberry vinegar

  • In a large saucepan, heat the butter or margarine and oil over medium heat. Add the chicken and brown lightly on each side. Once the chicken breasts are cooked (the juices should run clear) remove them from the pan and set aside.
  • Add the shallots and the chicken stock to the pan. Simmer for 3 minutes. Add the raspberry vinegar. Bring all to a boil and simmer, stirring, until the mixture thickens. Raspberry Chicken is probably my most-requested main dish at potlucks. I don't mind making it often. It's quick to fix...and always gets "cleaned up"! There are many fruit growers in our area of Oregon, and my husband and I enjoy picking fresh ingredients for recipes like this when we can.

8 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons all-purpose flour
4-1/2 teaspoons butter
1 tablespoon canola oil
1/2 to 3/4 cup chicken broth
6 tablespoons raspberry vinegar
1/2 cup heavy whipping cream
Fresh raspberries to garnish

Steps:

  • Coat chicken with flour. Melt butter with oil in large skillet. Brown chicken, turning once. Add broth and vinegar to the skillet., Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until chicken juices run clear. Remove chicken to serving platter and keep warm. Add cream to skillet. Bring to a boil. 1/2 teaspoon salt

Watch your cook time! It's critical to remove the chicken once it is cooked. If you leave it in too long, it will get tough and rubbery.

2 pounds boneless skinless chicken breasts
2 tablespoons unsalted butter
¼ cup yellow onion, chopped
¼ cup raspberry vinegar (we used raspberry white balsamic)
¼ cup chicken stock
¼ cup heavy cream
1 tablespoon crushed canned tomatoes
Optional: 16 or more fresh raspberries

Steps:

  • Cut chicken breasts to uniform thickness, about ¼ inch thick. I used a sharp flat knife to butterfly each breast, then cut them into multiple individual portions. Two pounds of chicken breasts yielded eight, 4-ounce portions, each the same thickness. These are referred to as chicken supremes.
  • In a large skillet or sauté pan, melt butter over medium heat and cook chicken pieces in two batches, about 1-2 minutes per side. Do not overcook. They should be removed from the pan when they are slightly underdone, as they will cook further later in this recipe. Repeat for second batch and hold until later.
  • In the same skillet, reduce heat to low and add the onions. Cover and cook on low for about 10-15 minutes until the onions are soft and carnalized. Ours were ready in ten minutes.
  • Add the vinegar and cook over medium heat until the mixture has reduced to a syrupy consistency, about 3-4 minutes.
  • Add the stock, cream and tomatoes and cook for one minute.
  • Add chicken back into the sauce along with any juices from the dish and cook and turn for just a few minutes or until they are cooked through. Again, do not overcook.
  • Remove chicken to a serving platter and add in the fresh raspberries to the pan sauce. The original recipe called for 16 raspberries but I added the entire package, which was a half pint.
  • Do not stir, but instead just swirl the pan around for about 30 seconds, then pour over the chicken and serve.

GRILLED CHICKEN BREASTS IN RASPBERRY VINEGAR MARINADE

1/2 cup chicken stock

  • Remove excess fat from chicken breasts; place them in sealable plastic bag or non-aluminum bowl.

  • Seal bag or cover bowl; marinate in refrigerator 4 hours or overnight.
  • Turn occasionally.
  • Remove chicken from marinade, reserving marinade.
  • Arrange in one layer in greased 9x13-inch pan.
  • Pierce skin in several places with sharp knife.
  • Cover with foil.
  • Bake at 350°F for 30-35 minutes, or until mostly cooked through; in the mean time, bring reserved marinade to a simmer in a small saucepan, simmering 15 minutes.
  • After main cooking time, uncover chicken and baste with marinade every 5 minutes until chicken is cooked through, approx 15-20 minutes.
  • For OAMC or freezing ahead, freeze this chicken, raw, in marinade -OR- freeze after cooking, making sure to include a portion of the cooking juices with each breast (keeps chicken moist while thawing).
  • Serving suggestions: bed of rice or baby spinach; side of green salad with raspberry vinaigrette; mashed potatoes; steamed carrots or broccoli; sliced thin over a bed of peppered angel hair pasta.

3 oz. balsamic vinaigrette (purchased or homemade, see below)
2 cups raspberries (red, fresh)
1/4 cup raspberry jam
2 tablespoons sherry vinegar (or red wine vinegar, or white wine vinegar)
1/2 teaspoon dried tarragon (crumbled)
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Gather the ingredients.
  • Put chicken breast halves between sheets of plastic wrap; gently pound to flatten to an even thickness. If the chicken breasts are large, slice them in half horizontally to make cutlets.
  • Sprinkle with salt and pepper; drizzle or brush with balsamic vinaigrette.
  • Cover and refrigerate.
  • Clean the raspberries and put a few aside for garnish.
  • In a saucepan, combine berries, jam, vinegar, tarragon, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Bring to a boil.

3 1/2 lbs chicken, cut up
2 tablespoons butter
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, minced
1 bay leaf
1/4 cup raspberry vinegar
2 tablespoons water
salt and pepper
chopped parsley (to garnish)

Steps:

  • Preheat oven to 375.
  • Heat the butter and oil in a large saute pan or skillet and brown chicken a few pieces at a time.
  • Transfer browned chicken to an ovenproof baking dish.
  • To the remaining oil in the pan, add onion, garlic, and bay leaf, and cook gently for 1-2 minutes until onion is transparent.
  • Add the vinegar and water and stir to loosen any browned bits from the bottom of the skillet; pour the sauce over the chicken, being sure that the onions are distributed evenly around the chicken pieces and lodge the bay leaf at the bottom.
  • Season with salt and pepper.
  • Bake for 1 hour and 15 minutes or until chicken is tender; turn chicken pieces once during baking.
  • Transfer chicken pieces to serving dish.
  • Remove fat from pan juices (I usually use a paper towel or lettuce leaf placed on the layer of fat for a few seconds) and pour over the chicken.
  • Garnish with chopped parsley and serve.
  • Great with rice or noodles.
  • MY NOTE: I put the chicken in skin side down first, then covered the baking dish with foil for the first 1/2 hour of cooking, then turned the chicken and removed the foil for the remainder of the cooking time.

  • You need large chicken breasts (or regular chicken tenderloins). Cut chicken breasts in half lengthwise by butterflying the chicken breasts and cut all the way through. Now you have 4 even thinner chicken breasts. Place chicken in a zip lock bag and pour the marinade on top. Marinade at least 30 minutes, or marinade overnight for best results.
  • While chicken is marinating, prepare the raspberry balsamic glaze. Combine 1/2 cup raspberries, balsamic vinegar, honey in a small saucepan over medium heat. Bring to a boil, reduce heat to low and cook for about 10 minutes, pressing with a spoon to break up the raspberries. Remove from heat. Chop coarsely the remaining 1/2 cup of raspberries. Combine chopped raspberries, chopped onion, jalapeno pepper and 1/8 tsp salt, and add to the raspberry balsamic mixture.
  • Preheat grill to medium high. Remove chicken from marinade, season with remaining 1/4 tsp salt and grill for about 10 minutes, turning halfway through. Serve grilled chicken on a little bed of baby greens and top it with that sweet and tangy glaze on top. You can also serve it over quinoa, mashed potatoes or with a simple light salad. Enjoy!
