This main dish is a nice change of pace from traditional sweet-and-sour meatballs. It's much quicker to make, too. For variety, I like to substitute a different kind of sausage, like spicy Italian.-Nova MacIsaac, Souris, Prince Edward Island

Steps:
- In a large skillet, cook sausage until a thermometer reads 160° drain. When cool enough to handle, cut into bite-size pieces; set aside. , Combine the sugar, cornstarch, water, vinegar and ketchup; add to skillet. Bring to a boil. Reduce heat; cook for 2 minutes or until thickened. Add pineapple and sausage; heat through. Serve with rice.

Steps:
- Brown sausage on both sides.
- Add all ingredients (except italian rolls) in crock pot and cook slowly for about 3 or 4 hours.
- If you do not have a crock pot just cook slowly on the stove until sausage is done to your taste.
- Slice a roll in half lenthwise (like a hot dog bun) and place on a plate, put a sausage inside. Spoon onions, peppers and some of the sauce on top.
- Enjoy!

- Preheat oven to 350 degrees F & grease a 2-quart baking dish.
- In a large skillet, brown sausages in butter.
- In a large bowl, stir together the peaches, chili sauce, sugar, ketchup, onion & curry powder, then stir in the sausages.
- Transfer to the prepared baking dish & bake for 30 minutes, then stir, before baking for another 15 minutes or until bubbly.
SAUSAGE RAGù
Meat sauce is one of the recipes many American home cooks start with. It seems so easy; brown some hamburger, pour in a jar of marinara, and presto! Meat sauce. Not so fast, friends. Made that way, your sauce may be thin-tasting, sour, sweet, or - worst of all - dry and chewy. Meat sauce with deep flavor and succulent texture isn't harder to make; it just needs more time and a low flame. This recipe from the New York chef Sara Jenkins, who grew up in Tuscany and has cooked all over Italy, shows how it's done. Caramelization is involved; dried pasta and canned tomatoes are best practice; and pork, not beef, is the meat of choice. If your sausage meat seems timidly flavored, feel free to add chopped garlic, chile flakes, fennel seed and/or dried herbs like oregano and sage to the meat as it browns.

- With the tip of a small, sharp knife, slit open the sausage casings. Crumble the meat into a wide, heavy skillet or Dutch oven and set over medium-low heat. If the meat is not rendering enough fat to coat the bottom of the pan as it begins to cook, add olive oil one tablespoon at a time until the meat is frying gently, not steaming. Sauté, breaking up any large chunks, until all the meat has turned opaque (do not let it brown), about 5 minutes.
- Add onion, carrot, celery and parsley and stir. Drizzle in more oil if the pan seems dry. Cook over very low heat, stirring often, until the vegetables have melted in the fat and are beginning to caramelize, and the meat is toasty brown. This may take as long as 40 minutes, but be patient: It is essential to the final flavors.
- Add tomatoes and their juice, breaking up the tomatoes with your hands or with the side of a spoon. Bring to a simmer, then add thyme and rosemary and let simmer, uncovered, until thickened and pan is almost dry, 20 to 25 minutes.
- Mix tomato paste with 1 cup hot water. Add to pan, reduce heat to very low, and continue cooking until the ragù is velvety and dark red, and the top glistens with oil, about 10 minutes more. Remove herb sprigs. Sprinkle black pepper over, stir and taste.
- Meanwhile, bring a large pot of salted water to a boil. Boil pasta until just tender. Scoop out 2 cups cooking water, drain pasta and return to pot over low heat. Quickly add a ladleful of ragù, a splash of cooking water, stir well and let cook 1 minute. Taste for doneness. Repeat, adding more cooking water or ragù, or both, until pasta is cooked through and seasoned to your liking.
- Pour hot pasta water into a large serving bowl to heat it. Pour out the water and pour in the pasta. Top with remaining ragù, sprinkle with parsley and serve immediately. Pass grated cheese at the table, if desired.

- Heat olive oil on medium-high heat in a large dutch oven.
- Add half of italian sausage and saute until golden brown.
- Remove cooked sausage and repeat with remaining sausage.
- Remove all sausage and set aside.
- Add chopped onions and minced garlic to pot. Turn heat to medium low and saute 5 minutes.
- Add tomato paste and saute until onions develop nice golden color. Stir frequently and WATCH CAREFULLY to make sure the tomato paste doesn't burn.
- Once the onions are golden, add the wine and stir, incorporating all of the brown bits from the bottom of the pan. Let simmer for 5 minutes.
- Add all remaining ingredients and browned sausage to pot and stir well.
- Turn heat to medium low and simmer 45 minutes.

- To make figs combine sugar, vinegar, cinnamon , cloves and lemon slice in a saucepan. Bring to a boil , then simmer for 5 minutes. Add figs, cover and simmer til tender, about 30 minutes Cool figs in syrup,letting them sit til they come to room temperature Can do this early in day or day before.
- Cook sausages in oil and 2 tablespoons of the wine til cooked and brown. Remove from heat and slice into bite sized pieces. Pour off fat from pan and deglaze with 4 tablespoons of water and remaining wine. Add tomato sauce, salt and pepper and simmer 1 minute. Add figs with syrup to sausages and heat thru.
- To serve cut figs into bite size pieces and spear sausages and figs on tooth picks and serve warm. After cutting figs I kept everything in the pan on a low simmer til ready to serve. I assembled them immediately before serving.

- In a frying pan fry up the Italian Sausage.
- Add the minced green pepper,onion and garlic and brown til no longer pink. Drain.
- Return back to pan and add the remaining ingredients and simmer 30 minutes on medium low heat, stirring occasionally to thicken sauce.
- You can use this on pizza dough or on a plate of spaghetti.
