6 cups thinly sliced peeled tart apples
1/4 cup raisins
1-1/2 teaspoons grated lemon zest
2/3 cup biscuit/baking mix
1/4 cup packed brown sugar
1/3 cup butter, melted
Cheddar cheese slices

Steps:

  • In a large bowl, combine the sugar, cinnamon and nutmeg. Add apples, raisins and lemon zest; toss to coat. Transfer to a greased 8-in. square baking dish. , In a small bowl, combine baking mix and brown sugar. Sprinkle over apples; drizzle with butter. Bake at 350° for 55-60 minutes or until golden brown. Serve with cheese slices.

1 cup plus 2 tablespoons strawberry jam
3-1/3 cups all-purpose flour
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground nutmeg
3/4 teaspoon each ground allspice, cloves and cinnamon
1-1/2 cups buttermilk
1-3/4 cups raisins
3/4 cup chopped walnuts
3/4 cup chopped peeled apple
GLAZE:
1 cup confectioners' sugar
4 teaspoons whole milk

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Stir in jam. Combine the flour, baking soda and spices; add into creamed mixture alternately with buttermilk, beating well after each addition. Stir in the raisins, walnuts and apple. Pour into a greased and floured 10-in. fluted tube pan. , Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Combine glaze ingredients; drizzle over cake.

1 sheet refrigerated pie pastry
2 medium tart apples, peeled and thinly sliced
1 tablespoon plus 1/2 cup sugar, divided
1-1/2 teaspoons ground cinnamon
1/2 cup all-purpose flour
1/4 cup chopped walnuts
1/4 cup raisins
1/4 cup butter, melted
2 tablespoons beaten egg

Steps:

  • Cut pastry sheet in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Transfer to a 7-in. pie plate; flute edges., In a large bowl, combine the apples, 1 tablespoon sugar and cinnamon; place in crust. In a small bowl, combine the flour, walnuts, raisins, butter, egg and remaining sugar; spoon over top. Bake at 350° for 50-55 minutes or until topping is golden brown and fruit is tender, covering edges with foil to prevent overbrowning if necessary. Cool on a wire rack.

Number Of Ingredients 11

1/4 cup butter
1/2 cup granulated sugar
4 tablespoons triple-sec liqueur (Triple-Sec or I've subbed Grand Marnier)
2/3 cup apple juice
4 large golden delicious apples, peeled, cored and sliced thick
1 teaspoon cinnamon
3 tablespoons butter
1/2 cup raisins
1 cup all-purpose flour
2/3 cup granulated sugar
1/2 cup butter, softened

Steps:

  • Preheat oven 400 degrees.
  • In a heavy 12" skillet over medium heat, melt 1/4 cup butter, watching that it doesn't burn.
  • Gradually add the 1/2 cup sugar and stir the mixture until the sugar is completely dissolved, becomes carmelize and reduced.
  • Slowly add the liqueur and the apple juice, stirring constantly until all the ingredients are smooth.
  • At this point, drop in the sliced apples and sprinkle cinnamon over the top.
  • Mix together well, making sure that the apple slices are coated with the syrup.
  • Reduce the fire to low and simmer the fruit until it begins to soften, about 5 minutes. Do not over cook because the dessert will be baked later.
  • While the apples are simmering, butter a 10"x12" baking dish with the 3 tablespoons butter. Evenly sprinkle the 1/2 cup raisins on the bottom.
  • In a large bowl, mix together the 1 cup flour, 2/3 cup sugar and 1/2 cup softened butter to form a crumbly topping that resembles granola. This works best if using 2 knives to "cut" the ingredients into each other.
  • Finally, pour the apple mixture into the prepared baking pan with raisins then sprinkle the pastry mixture over the top of the apples, working a little of it into the fruit.
  • Bake in preheated oven for about 20-30 minutes or until the top turns a crunchy, crispy brown.
  • Spoon generous helpings of the apples, raisin and crunchy topping into small bowls and serve piping hot, topped with slightly softened vanilla ice cream.

4 pounds pippin or Granny Smith apples, peeled, cored, sliced
1 1/2 cups golden or brown raisins
1/2 cup sugar
1 tablespoon fresh lemon juice
1 tablespoon all purpose flour
3/4 teaspoon ground cinnamon
Vanilla ice cream

Steps:

  • Preheat oven to 375°F. Butter 9 x 13 1/2-inch glass baking dish.
  • For Topping:
  • Mix old-fashioned oats, brown sugar, all purpose flour, ground cinnamon and salt in large bowl. Add unsalted butter and rub into mixture until coarse crumbs form. Mix in chopped walnuts.
  • For Filling:
  • Combine sliced apples, raisins, sugar, fresh lemon juice, flour and ground cinnamon in large bowl. Mix well to blend. Transfer apple-raisin filling to prepared dish. Spread topping over. Bake until topping is golden brown, about 55 minutes. Serve crisp warm with scoops of vanilla ice cream.

1/3 cup raisins
1/3 cup coarse fresh bread crumbs
1/3 cup packed light brown sugar
1 1/2 tablespoons unsalted butter, melted
1/4 teaspoon cinnamon
For dough
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons granulated sugar plus 1/2 tablespoon for sprinkling
3 tablespoons cold unsalted butter, cut into pieces
2 tablespoons cold vegetable shortening
1/2 cup whole milk plus 1/2 tablespoon for brushing
For syrup
1 1/2 cups unfiltered apple cider
1 cup packed light brown sugar
Accompaniment: vanilla ice cream

Steps:

  • Make filling:
  • Toss together all filling ingredients.
  • Make dough:
  • Preheat oven to 425°F.
  • Sift together flour, baking powder, salt, and 3 tablespoons granulated sugar into a bowl. Blend in butter and shortening with a pastry blender or your fingertips until mixture resembles coarse meal. Add 1/2 cup milk and stir with a fork just until mixture is moistened.
  • Turn out dough onto a floured work surface and gently knead 7 to 8 times, or until a soft dough forms (do not overwork dough, or dumplings will be tough). Roll out dough on a well-floured surface with a floured rolling pin into a rough 16- by 11-inch rectangle (about 3/4 inch thick). Trim to a 15- by 10-inch rectangle. Halve dough lengthwise, then cut crosswise in thirds (to form 6 squares).
  • Fill dumplings:
  • Divide filling among centers of squares. Bring all 4 corners together over filling and pinch together to seal. Transfer dumplings to a well-buttered 13- by 9- by 2-inch ceramic or glass baking dish and arrange about 1 inch apart. Brush tops with remaining 1/2 tablespoon milk and sprinkle with remaining 1/2 tablespoon granulated sugar.
  • Make syrup and bake dumplings:
  • Bring cider and brown sugar to a boil, stirring until sugar is dissolved.
  • Pour syrup around dumplings, then bake dumplings until golden brown and syrup is bubbling, 20 to 25 minutes. Serve immediately.
