CHEESE AND SUN-DRIED TOMATO ON COCKTAIL RYE BREAD



Cheese and Sun-Dried Tomato on Cocktail Rye Bread image

I had a few slices of cocktail rye bread left over so I threw this together. Make it as hot or as mild as you like. I forgot to take a picture of the one I made it looked so good I ate it! I made these again this time taking a picture however I used "Rug Roggebrood" snack squares (see photo) this is a very heavy almost black dense bread - the squares however want to fall apart and the flavor of the bread is too heavy it takes over the cheese and sun dried tomatoes flavor. I recommend that you stick to the light pumpernickel or even flattened 9 grain bread. I made these single layer and that works as well.

24 pieces rye cocktail bread (approx 2x2-inch)
2 tablespoons butter (approx)
2 cups cheddar cheese, shredded or 2 cups your favorite cheese
3 teaspoons chili flakes (optional) or 3 teaspoons chili powder (optional)
1/4 cup sun-dried tomato packed in oil, drained, chopped

Steps:

  • Butter the outside of 12 rye bread pieces and lay them buttered side down on a cookie sheet (I line the cookie sheet with"Release" foil).
  • Butter the top side of each piece of bread and sprinkle the cheese on the bread (use only half the cheese).
  • Put 1/2 tsp of chopped sun dried tomato on the cheese Butter both sides of the remaining 12 slices and place on top of the tomato layer, sprinkle with remaining cheese, sprinkle with chili pepper flakes Press down a bit Broil until the cheese has melted and is all bubbly.
  • The bottoms should be golden I like to cut them into 3 pieces but you can leave them large or cut into 2 pieces.

1/2 cup oil-packed sun-dried tomatoes
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh basil
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1 garlic clove, crushed
1/8 teaspoon salt
1/8 teaspoon pepper
8 slices sourdough bread
1-1/4 cups shredded part-skim mozzarella cheese
1/2 cup crumbled goat cheese
1/4 cup fresh arugula
2 tablespoons chopped roasted sweet red pepper
3 tablespoons butter, melted

Steps:

  • Place the first 8 ingredients in a food processor; process until blended., Spread over each of 4 bread slices; top with cheeses, arugula, red pepper and remaining bread. Brush outsides of sandwiches with butter., On a griddle, toast sandwiches over medium heat until golden brown and cheese is melted, 3-4 minutes per side.

This was a frequently ordered sandwich, even though it was not on the menu, at the grill at Memorial Hospital in Belleville. When working night shift, my husband and I ate our fair share of these tasty sandwiches. I think the secret to this recipe is LOTS of salted butter on the bread prior to grilling! If you like, feel free to add light sprinkle of sea salt and some cracked black pepper on the tomato when you are making the sandwich (as many swiss cheeses are low sodium). Sometimes I add pickles into the sandwich before grilling too :)

Steps:

  • Preheat pan to med-high.
  • Dip one side of one piece of bread in the butter and place it butter side down in pan.
  • On top, add 1 slice of cheese, 1 tomato slice, then 1 more slice of cheese.
  • Dip another slice of bread (one side only) in the butter and place on top of the sandwich with butter side up.
  • Make the next sandwich the same way.
  • Grill to your liking (we usually do 2-3 minutes on each side because we prefer them lightly toasted).

  • Preheat oven to 450°. In a small bowl, combine the first six ingredients. Spread a rounded tablespoonful over each slice of bread. Place on an ungreased baking sheet. Bake 6-8 minutes or until cheese is melted.

BOURSIN, TOMATO AND CUCUMBER NIBBLES

These are little bites of cucumber, cheese and sun-dried tomatoes. They are quick to prepare, but for a different presentation, you could cut rounds of cucumber and pile the cheese/basil/tomato on top. The amount of nibbles depends on the size of the cucumber, so ingredient amounts are a guide. You don't have to use Boursin, which is a soft French cheese, you can use cream cheese and in fact, the Recipezaar system wouldn't let me type in 'Boursin'. Recipe comes from my blog.

1 small cucumber
100 g cream cheese with herbs
20 -25 fresh basil leaves
20 -25 sun blushed sun-dried tomatoes packed in oil or 20 -25 semi dried tomatoes

Steps:

  • Cut the cucumber in half length-ways and slice a little off the bottom to make it sit flat on the plate. Note: you can peel the cucumber if you prefer or if the skin is tough - it's easier to do this before slicing in half.
  • Scoop out the seeds and discard them.
  • Fill the hollow of the cucumber with the Boursin or cream cheese, smooth top with a knife.
  • Cut the cucumber into bite sized pieces and top each one with a basil leaf and a tomato. Secure with a cocktail stick.
  • Drizzle with some of the olive oil from the tomatoes.
  • Chill until ready to serve.

This is a fabulous bread I make often. It is easy even for beginners, I think! Rye bread became a staple in eastern European countries because it grows well in cool climates

Number Of Ingredients 11

3 cups bread flour
1 3/4 cups rye flour
1/4 cup dry milk
1/4 cup potato flakes
1 tablespoon caraway seed
2 1/3 teaspoons salt
2 tablespoons sugar
2 teaspoons instant yeast
3 tablespoons oil
1 3/4 cups water
1 -2 tablespoon instant coffee granules, mixed with 1 tablespoon rye flour

Steps:

  • Mix all ingredients except color either by hand or a stand mixer. Knead until smooth and gluten has developed, add in water of flour as needed. Dough will be soft and sticky, as this is how rye dough feels It makes a tacky dough, not like white! This takes about 7'10 minutes. Put dough in a large, lightly oiled bowl and let rise until it is puffy, about 1 1/2 hours.
  • Remove, divide in half. Knead the color into one half. Roll each half into a 8x11 inch rectangle. Put one on top of the other, I put the lighter one on the bottom so the lighter color is the outside of the finished loaf. You, of course can decide for yourself! Roll into a loaf, jelly roll style, starting with the 8' side, tuck ends inches.
  • You can either make a free form loaf and put on a parchment lined sheet pan or use a large lightly oiled bread pan. In either case, cover with a damp towel or a piece of lightly spayed cling film. Let rise until doubled, approximately 1-11/2. In the meantime preheat the oven to 400 degrees.
  • Place the bread in, bake for 15 minutes, reduce heat to 350 and bake for an additional 20-25 minutes, until it has an internal temperature of 190 F, or sounds hollow when tapped. Remove and cool completely on a wire rack.
  • You can easily omit the dry milk, it is only there for nutrition and it makes for a more tender crumb. Also, the coffee is only to darken one half, so you get the different colors. You can't taste it! Some recipes call for cocoa,which I think you can taste, others for caramel coloring. I simply think instant coffee is easier.

RUSTIC RYE BREAD

Whilst this loaf isn't as dense as some rye breads, its definitely not as light as normal bread. It goes well with soups, but is equally good for sandwiches!

400 g strong plain brown flour
175 g rye flour
2 teaspoons salt
2 teaspoons active dry yeast
1 tablespoon black treacle or 1 tablespoon molasses
300 ml warm milk

Steps:

  • Mix the flours, salt and yeast in a large bowl. Make a well in the middle and add the treacle and enough milk to form a soft dough.
  • Turn the dough out onto the surface and knead well for about 10 minutes.
  • Put the dough back into the bowl, cover and leave to rise until doubled in size (1-2 hours).
  • Knock back the dough onto the surface and knead again briefly. Shape and place in a greased loaf tin. Cover and leave to rise again for an hour.
  • Preheat the oven to 200C/400F and bake for about 35 minutes, or until the bread is risen, lightly browned and sounds hollow when tapped on the bottom. Leave to cool on a wire rack.
