Ingredients

1 tablespoon olive oil
12 dry shallots, peeled
4 sweet potatoes, peeled and cubed
1 tablespoon fresh parsley, chopped
salt and black pepper

Steps:

heat oil in saucepan over medium heat.
add shallots and sweet potatoes.
season well.
cover and cook for 18 to 30 minutes, stirring 3 to 4 times.
when vegetables are cooked sprinkle with parsley.
serve.
Note:the sweet potatoes will stick to the bottom of the saucepan if not stirred frequently.
