1/4 cup rice vinegar
2 teaspoons chopped pickled ginger
1 teaspoons toasted sesame oil
Kosher salt and freshly ground black pepper
3/4 cup vegetable oil

Steps:

  • Whisk the vinegar, ginger, sesame oil and a generous pinch of salt in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a couple grinds of pepper.

1/2 cup carrot, shredded
2 bok choy stalks (with leaves)
1 1/2 to 2 cups mung bean sprouts
2 teaspoons extra-virgin olive oil
1/4 cup rice vinegar
3/4 teaspoon sesame seed oil
2 teaspoons chopped fresh cilantro leaves, or as desired, optional, for garnish
1 tablespoon toasted sesame seeds, for garnish

Steps:

  • Gather the ingredients.
  • Wash the vegetables and drain thoroughly. Shred the cabbage and carrots.
  • Separate the bok choy stalks and leaves. Cut the stalks diagonally and the leaves straight across.
  • Toss the shredded cabbage, shredded carrots, bok choy, and mung bean sprouts in a large bowl. Set aside.
  • In a small bowl, whisk together the olive oil and rice vinegar. Whisk in the sesame seed oil.
  • Place the dressing in the bottom of a bowl, add the vegetables and toss again. Add the cilantro, if using, and sprinkle toasted sesame seeds on top. Chill until ready to serve.

1 clove garlic
Coarse salt and freshly ground pepper
1/3 cup rice vinegar
1 tablespoon mirin (rice wine)
1 tablespoon soy sauce
2 teaspoons honey
Juice of 1/2 lemon
1/2 cup canola oil
3 tablespoons toasted sesame oil
1 teaspoon black or white sesame seeds

Steps:

  • On a cutting board, crush garlic clove, and sprinkle with salt. Using the back of your knife, smear garlic and salt into a rough paste, and transfer to a medium bowl. Whisk in vinegar, mirin, soy sauce, honey, and lemon juice. While whisking constantly, slowly drizzle in canola and sesame oils. Stir in sesame seeds. Season with salt and pepper.

1 tablespoon sesame seeds
2 tablespoons white miso
2 tablespoons toasted sesame oil
1/2 cup rice vinegar, preferably unseasoned
6 tablespoons neutral vegetable oil, such as canola
2 to 3 teaspoons honey
Sea salt

Steps:

  • Sprinkle the sesame seeds into a small skillet over medium heat. Cook, shaking the pan frequently, until the sesame seeds have darkened and become fragrant, just a few minutes. Immediately transfer them to a plate to cool; if you leave them to cool in the pan, they can burn.
  • Use a fork to whisk the miso and sesame oil in a small jar fitted with a lid until smooth. Add the vinegar, vegetable oil, sesame seeds, and honey, close the lid tightly, and vigorously shake to emulsify the dressing. Taste and add more honey if desired, plus salt, and shake again. Store it in the refrigerator for up to 2 weeks.

Steps:

  • Steam or boil vegetables until tender crisp. Drain and place in a bowl. Whisk all remaining ingredients (except almonds and seeds) together in a small bowl. Pour over vegetables and stir to combine. Set aside at room temperature to marry the flavors. When ready to serve, turn vegetables onto a rimmed platter and sprinkle with nuts or seeds and finishing salt.

Steps:

  • Mix first 5 ingredients in a bowl or food processor.
  • If using a bowl: SLOWLY drizzle in the sesame and peanut oil, whisking constantly so that the dressing will emulsify.
  • If using a food processor, leave it running while you drizzle in the oil.
  • When dressing is well combined, add sesame seeds and scallions.
  • Serve immediately or refrigerate and use within a week.

WASABI-SOY VINAIGRETTE

This all-purpose salad vinaigrette is reminiscent of the wasabi-tinged soy sauce you might have with a California roll. Soy sauce, rice vinegar and sesame oil waltz in time, while the wasabi paste adds nose-clearing excitement. As with any recipe, feel free to adjust the ingredient amounts to your taste preferences, especially the wasabi, which can be scaled down or up. Be sure to shake if it's been sitting in the fridge, as it wants to separate.

  • In a small liquid measuring cup or a glass jar with a tight-fitting lid, combine 1/4 cup water, the garlic, sugar, soy sauce, rice vinegar, sesame oil and wasabi paste. Whisk to combine, or, if using a jar, seal tightly and shake vigorously until emulsified. Taste and add more wasabi if you like; the wasabi flavor will intensify as the vinaigrette sits.
