Provided by Neha Mathur

Categories     Accompaniment

Time 40m

Number Of Ingredients 11

2 cups peeled and chopped fresh pineapple
1 teaspoon chopped garlic
1/2 cup pineapple juice (fresh or canned)
1/4 cup rice vinegar
1/4 cup lemon juice
1 teaspoon lemon zest
1 cup brown sugar
2 teaspoon red chili flakes
1 teaspoon salt
3 tablespoon cornflour
1/4 cup water

Steps:

  • Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
  • Do not blend the pineapple too much. We are looking for a coarse texture here.
  • Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
  • Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
  • Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

PINEAPPLE MEATBALLS

Pineapple Meatballs image

This is a family favourite; my teenage son eats at least 2 servings himself. Cooking time includes the browning of the meatballs, although you can brown them in the oven on a cookie sheet and make the sauce at the same time, saving yourself a little time.

Time 1h25m

Yield 6 serving(s)

Number Of Ingredients 14

2 lbs lean ground beef
2 large eggs
1/2 cup fine dry breadcrumb
1 teaspoon salt

  • This pineapple sauce recipe is very simple. Firstof all we'll start by peeling the onion and chopping it into very small pieces. When ready, place a pan on the fire with a dash of olive oil, add the chopped onion and stir until it is lightly browned.
  • Now, cut the pineapple slices in juice into small chunks and add it to the pan with the onion. Also add the remaining ingredients, i.e., vinegar, sugar, flour and a pinch of salt. Stir and let everything simmer for at least 25 or 30 minutes.
  • After this time, check that the pineapple is tender and remove from the heat. You must place the sauce obtained in the bowl of the mixer and if you want to you can add a bit of pineapple juice. This will make the pineapple sauce more tasty and light. Beat until well blended.
  • Reheat the pineapple sauce on the hob if you want to serve it hot. You can now serve it as a perfect accompaniment to any meat dish you prepare. If you prefer, you can add the sauce to the pot in which the meat is cooking so that it acquires its full flavour and is well saturated. At OneHowto we also have other great sauces for meat that will certainly make your mouth water.

  • Cut the chicken into 1" pieces and add them to a bowl. Toss them with the garlic powder and some pepper. Add the cornstarch and toss until coated.

Cook the chicken for 4 minutes and then flip (I use tongs to do this quickly) and cook for another 3-4 minutes or so. Chicken should be browned and cooked through (165F). For the second batch, I add another tablespoon of olive oil to the pan. Transfer each batch of the chicken to a plate when it's done.
