This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

1 -1 1/2 lb navy beans (2 1/2 to 3 cups measure)
bay leaf
2 garlic cloves
1/4 cup molasses
1/4 cup maple syrup
3/4 cup ketchup
1 medium onion, diced
2 teaspoons salt
2 teaspoons vinegar
1 1/2 teaspoons dry mustard (Keen's brand is what I use)
2 -3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
4 slices bacon (optional)
reserved bean liquid

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

This is a recipe from Thompson beans, that is the old-time recipe for baked beans, before slow-cookers, and microwaves. They are so delicious, and the hit of Saturday night, you have to add fresh brown bread with raisins - I do use the breadmaker for this one - lol

2 cups thompsons white pea beans
5 cups cold water
1 medium onion, sliced
1 1/2 teaspoons salt
2 teaspoons cider vinegar
1 tablespoon brown sugar
1/2 teaspoon prepared mustard
1/4 cup crosby molasses
1/4 cup ketchup
1 pinch black pepper
1/4 lb pork, bellies or 1/4 lb lean pork

Steps:

  • sort and rinse beans. Soak beans overnight in cold water. Drain. Add 5 cups cold water, cover, heat to boiling, then simmer 30 minutes or until nearlu tender. Drain.
  • Place onion slices on bottom of 6-cup flameproof bean crock.
  • Mix together salt, vinegar, brown sugar, mustard, molasses, ketchup and pepper. Mix well. Add beans to mixture, and stir together. Pour this mixture over onions.
  • Add enough water to cover mixture, then place sliced pork on top. Cover with lid and bake in oven at 250F for 7 hours.
  • When beans are tender, remove 1 cup beans, mash, then stir back in pot carefully. Cover and continue to bake.
  • Add water as needed to keep beans covered.
  • One hour before serving, salt to taste.

2 lbs yellow-eyed beans
1 teaspoon baking soda
1 medium onion
1/2 lb salt pork
1/4 cup brown sugar
1/2 cup molasses
2 teaspoons dry mustard
1/2 teaspoon salt

Steps:

  • Soak beans overnight, well covered with cold water.
  • Pour off soaking water and pick over beans to remove any bad ones, or debris.
  • Put beans in a pot.
  • Cover with fresh cold water and add 1 tsp. baking soda.
  • Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
  • Cut onion in quarters and put in bottom of a bean crock or large casserole.
  • Add the partially cooked beans.
  • Put cut up salt pork on top.
  • (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
  • Pour over the beans.
  • Add more boiling water, if needed, to come just to the top of the beans.
  • Also, if needed during baking tme, add more boiling water.
  • Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.

I usually increase the brown sugar to about 3/4 cup and double the molasses to sweeten the beans up and I omit the bacon/pork. I cook the beans and then throw everything in the crock pot to cook for 8-10 hours on high. This recipe comes from the package of Thompson White Beans.

1/2 tablespoon salt
2 teaspoons cider vinegar
1/2 teaspoon prepared mustard

1/4 lb bacon or 1/4 lb salt pork, sliced

Steps:

  • Pick and rinse beans.
  • In a large pot, add cold water to cover.
  • Bring the beans to boiling and then simmer for 30 minutes - do not add any salt, this toughens the beans.
  • Drain.
  • Place onions in a casserole.
  • Mix seasonings and turn into pot.
  • Add beans and hot water to cover.
  • Arrange pork on top.
  • Cover and bake in a slow oven (250*F) for 7 hours.
  • After 4 hours, mash 1 cup of beans and return to pot.
  • Add liquid to keep beans covered.
  • Enjoy.

Enjoy! I have tweaked this ever so slightly...only because we like tomatoey beans. Cooking time does not include overnight soaking.

1 lb white pea beans
2 medium onions, sliced
1/4 cup molasses
2 tablespoons tomato paste
1/2 cup ketchup, to be added near the end of cooking
1 tablespoon brown sugar, packed
1 tablespoon vinegar
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon black pepper or 1/4 teaspoon hot pepper flakes
4 cups hot water
2 slices bacon, chopped (I used thick slices of bacon, chopped)

Steps:

  • Rinse beans; discard any discoloured ones. In large saucepan, soak beans overnight; drain. Add water to cover by at least 2 inches. Bring to boil and simmer for 30 minutes; drain.
  • In bean pot or 8 cup casserole, spread onion slices.
  • Add drained beans.
  • Combine molasses, tomato paste, sugar, vinegar, salt, mustard, pepper and hot water.
  • Pour over beans and top with chopped bacon.
  • Cover and bake in 250 degree oven for 6 hours; uncover and add about 1/2 cup ketchup -- and stir. Add more water if you need to. Bake uncovered for another hour.

1/4 lb salt pork, cut up
1 cup onion, chopped
1/2 cup molasses
1/4 cup brown sugar

Steps:

  • Pick out stones, then soak beans over night.
  • Drain beans. Place in large pot with fresh water. Boil until they are tender- about 1 hour. Drain.
  • Mix all of the ingredients in bean pot, stir in beans gently. Cover with water.
  • Cover pot and bake in 350 oven for 3-4 hours until the consistency you like.
  • If you want to bake them all day but they start looking thick you can add a little more water.

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

This flavorful comfort food can be serve either breakfast, lunch or dinner and also freeze for later.

3 c navy beans
1 tsp ground himalayan sea salt
3/4 c molasses, preferably blackstrap, divided
3 Tbsp brown sugar, such as demerara
1 Tbsp prepared yellow mustard
1/4 tsp dry mustard
1/8 tsp baking soda
freshly ground black pepper, to taste (i always use mixed peppercorns)
6 slice bacon
1 large red onion, halved and cut into 8 pieces

Steps:

  • 1. Soak beans overnight in cold water at room temperature adding 2 inches of water above. Twelve (12) hours later, drain and transfer in a large pot. Cover with cold water, add sea salt and bring to a boil. Reduce heat to medium and simmer for 40 minutes or until tender. Drain but SAVE THE LIQUID. Transfer back to the large pot and set aside.
  • 2. Meantime, in a mixing bowl combine molasses, brown sugar, prepared mustard, dry mustard, baking soda and black pepper; stir and set aside. Take 1 slice of bacon and rub the sides of the interior bean pot. Cut bacon slices into pieces. Place half (4 pieces) of onion at the bottom of the pot.
  • 3. Pour sauce over the beans and mix to coat. Add bacon pieces, stir and pour half of the bean mixture into the bean pot over the onion pieces. Add the remaining onion pieces and pour the remaining sauce; add more black pepper and the remaining ¼ cup of molasses; stir just the top to spread molasses evenly. Pour the reserved liquid enough to cover the bean mixture. Place lid and transfer into a 325ºF preheated oven for 6 hours.
  • 4. Every hour, check and add more reserved liquid if needed. The last hour, pour liquid to cover and uncovered to darken the beans.
