- Heat oven to 220C/200C fan/gas 7. Half-fill a medium saucepan with water and bring to the boil. Add the sweet potatoes and cook for 4 mins, then drain through a colander and return to the saucepan. Pour over 2 tsp of the oil and season with a little black pepper. Toss until the potatoes are lightly coated with the oil.
- Tip the potatoes onto a baking tray and cook in the oven for 15 mins, then turn with a spatula and cook for a further 10 mins or until crisp and golden.
- While the potatoes are baking, prepare the steak. Trim off any hard fat from the beef, then rub all over with the remaining oil. Season with 1 tsp coarsely ground black pepper. Put a large non-stick frying pan or griddle over a medium-high heat and, when hot, add the steaks and cook for about 2 mins each side or until done to your liking.
- Mix the salad leaves, tomatoes, cucumber, spring onions and beans in a bowl. Whisk the vinegar, oil and garlic together. Divide the steak, chips and salad between two plates and pour over the dressing just before serving.

- Heat the oven to 425 degrees. Cut the skins off the sweet potatoes, squaring off the round sides to make each potato into a large rectangle. Cut into long fries about 1/4-inch thick and 1 inch wide. (If not using potatoes immediately, soak in water for up to 1 day. Drain and pat dry before cooking.)
- Put two large sheet pans in the oven to heat. Toss the potatoes, and skins if you like, with oil, paprika and 2 teaspoons of the salt. Arrange in one layer on the hot pans. (Don't use parchment paper; it will make the potatoes soggy.) Roast until tender and starting to brown on the bottom, about 15 minutes.
- Meanwhile, grind the cumin, coriander and 1 teaspoon salt together. Mix in the brown sugar.
- Remove pans from the oven and raise the heat to 450 degrees, or set to broil. With a spatula, carefully loosen the fries and turn each one over. Sprinkle with the spice and sugar mixture. Return to the oven and bake just until the fries are blistered and sizzling vigorously, about another 5 minutes. (If your oven has a convection feature, use it.) Do not overcook, or the fries will become leathery. Cool slightly.

- Preheat air fryer to 380°F.
- Wash and dry sweet potatoes. Then cut them into thick wedges about ½ inch thick. I cut my sweet potatoes in half lengthwise then cut each half into thirds or quarters depending on the size of the sweet potato.
- Add all wedges to a mixing bowl and drizzle the 1 - 2 Tablespoons of olive oil. Toss to coat.
- Sprinkle salt, paprika, garlic powder, and black pepper on top. Mix to evenly coat each steak fry.
- Once air fryer is heated, evenly space out wedges inside the air fryer basket. Do not overcrowd. If you have a small air fryer, cook in two batches.
- Air fry for 15 - 18 minutes, turning each wedge over with tongs halfway through.

- Peel the sweet potatoes. If they are average size, cut them in half lengthwise. Lay each half flat on the cutting board and cut it into four slices. These should be between 1/4 and 1/2-inch slabs.
- Put the sweet potatoes in a large mixing bowl. Sprinkle on the seasonings and then pour on the olive oil.
- Use your clean hands to toss the potatoes with the other ingredients until all is evenly distributed.
- Set aside and allow the potatoes to marinate for 1/2-hour or more, depending upon the timing of your meal.
- When you are ready to cook, spray a shallow sheet pan with a light coat of oil to prevent sticking and then pour out the potatoes, distributing them evenly and avoiding any stacking.
- Place the pan on the middle rack of an oven preheated to 400 degrees Fahrenheit. Bake for about 30 minutes or until the fries are looking crisp. Serve hot.
CRISPY SWEET POTATO FRIES

- Set a pot of water on medium-high heat to boil.
- Meanwhile, peel the sweet potatoes, slice them into roughly 1/3 inch sheets, then into roughly 1/3 inch thick fries. Preheat the oven to 475 degrees F.
- Once the water has boiled, add the vinegar and a 3 finger pinch of salt, stirring to dissolve the salt. Add the sweet potato fries to the boiling water and set a timer for 6 minutes. When the time is up, drain the fries into a colander. Using a fork lightly scratch the surface of the fries to help the slurry mixture mix into the nooks and crannies.
- Meanwhile, add the 50 g cornstarch and 80 g of cold water to a bowl. Stir until completely combined with no clumps remaining. Add the still hot, drained fries to the bowl and toss until the slurry thickens and sticks to the fries. If you need a little more cornstarch feel free to add it. The mixture should lightly coat the fries.
- Using tongs, move the fries to a wire rack over a large baking sheet. Evenly space the fries so none of them are touching. Using a squirt bottle or spoon, drizzle the peanut oil over the fries trying to get an even coating over each one (you could also use a baking spray though I didn't find it works as well). Add the sweet potatoes to the oven and set a timer for 15 minutes.
- Pull the baking sheet out and flip the fries with a spatula. At this point, you should be able to see some blistering on the outside but the fries won't be overly crisp. If they look a little dry, drizzle over more peanut oil. Add them back to the oven and bake for another 10 to 15 minutes. At this point, they should be slightly browned and crispy though it could take longer depending on the size of the fry, how crowded the pan is or the oil used. If they aren't crispy, let them go longer!
- Pour in the fries into a bowl. Immediately a pinch of salt and a couple of cranks of black pepper. Toss the fries in the seasoning and enjoy with the dipping sauce of your choice. Feel free to add spices, fresh herbs, cheeses, or any flavorings of your choice during this stage.
SKIRT STEAK AND SWEET POTATO FRIES

- Preheat the oven to 425 degrees F. Preheat a grill pan over medium-high heat.
- In a bowl, combine the salt, black pepper, cumin, coriander, oregano, cayenne and sugar. Add the fries to a sheet pan and sprinkle with 1 teaspoon of the seasoning blend. Bake, tossing halfway through, until crisp, 24 to 26 minutes.
- Brush the steaks with the oil and sprinkle with the remaining seasoning mix. Grill until they are done to your liking, 3 to 4 minutes per side for medium-rare. Remove the steaks from the grill pan and let rest for 5 to 7 minutes.

- Remove the fries from the oven. Slice the steaks against the grain, and shingle around the fries on the sheet pan. Drizzle the steak with some of the herb drizzle, serving the remainder on the side.

- Mix whiskey and 1/4 cup barbecue sauce until blended.
- Heat oil in small saucepan on medium heat. Add onions; cook and stir 2 min. or until lightly browned. Add barbecue sauce mixture; cook 3 min., stirring frequently. Remove from heat. Add ice and remaining barbecue sauce; stir. Let stand 5 min.; stir until ice is completely melted.

- Fire up. Set up your grill in a 2-zone configuration. Preheat the grill so the air above the direct zone is about 325°F or higher.
- Prep. Cut the tips off the potatoes and dig out any bad spots. You can peel them if you wish but I prefer to leave the skin on. They say it is nutritious, but I just like the taste and texture. Cut the potatoes in half lengthwise, and then into quarters. If you are using really big taters, cut them again into eighths. If you prefer, you can cut them into disks about 3/8" thick.
- Dump the potatoes into a large bowl, drizzle with the oil, and toss them so they are lightly coated. Mix the seasonings in a bowl and then sprinkle them on the potatoes. Toss some more until they are evenly coated.
- Cook. Lay them on the grill so they get good horizontal grill marks, and close the lid. Hang around the grill, and after about 3 minutes, check and see if they have nice brown grill marks. If they do, rotate them to another side. Repeat until all sides are marked. When they are, they should be ready, and you can tell by poking them with a fork. It should slide in and out easily. When they are done, and they may not all get done at once, move them to the indirect side. If they have good grill marks and they are still not cooked through, move them to the indirect side, close the lid, and let them roast a bit longer, turning them as needed so they don't burn.
