SPICY SWEET POTATO OVEN FRIES
Fry lovers rejoice! These sweet and spicy fries are a fantastic duo. Ground chipotle chile pepper adds the mild heat. If you want less spice use regular chile powder. Want to turn up the heat? Switch the chipotle with cayenne. These fries are very versatile so play with the spice combinations you like. Soaking the fries before they are baked helps them crisp better in the oven so don't skip the step. Serve these with alongside a grilled filet for steak night or seared salmon filet and some roasted vegetables for a full plate. These fries also make a great and filling snack for movie nights at home. Mix some fat-free Greek yogurt and prepared horseradish for a great cool-yet-spicy dipper.

Steps:
- Preheat your oven to 200C.
- Wash and peel your sweet potatoes, then cut them into sticks around 1cm x 1cm wide. Lay them flat on a baking tray and drizzle over the olive oil. Toss the sweet potatoes until all the sticks are evenly coated with oil.
- Mix together the flour, paprika, garlic powder, salt and ground black pepper in a small bowl, then sprinkle the seasoning over the sweet potatoes. Lightly toss with your hands to make sure that all the potatoes are coated with the seasoning. Adding the flour helps crisp up the fries, so don't leave it out unless you want soggy fries!
- Line up the potatoes on the baking tray and bake for 18 minutes. Then, give the tray a toss to flip the fries over, before returning to the oven to bake for 5 more minutes. Transfer the fries to a oven safe dish and top with the grated cheese. Return to oven on the highest rack for 3 minutes to melt the cheese. If not, serve the fries whilst hot to ensure maximum crispness.

These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

Steps:
- Slice the sweet potatoes into long, thin strips, about 1/4-inch wide.
- Add the fries to a large bowl and cover with cold water, soak for at least 60 minutes or even overnight for best results.
- Preheat oven to 425 degrees F.
- Line a large baking sheet with parchment paper and set it aside. You can also use two medium baking sheets, it is important for the fries to have enough room.
- Drain well the fries, arrange them in one layer onto a clean towel and pat dry with paper towels. Clean the bowl in the meantime and dry it well.
- Add the fries back to the clean bowl and drizzle with the olive oil, toss until evenly coated.
- In a small bowl, whisk together the cornstarch, garlic powder, onion powder, dried parsley, smoked paprika, and black pepper until combined. Sprinkle the mixture on top of the fries, then toss until evenly coated and the cornstarch has soaked into the oil.
- Spread the fries out in an even layer on the prepared baking sheet, making sure that the fries aren't overlapping.
- Bake for 15 minutes, remove the pan from the oven, and flip each fry with a spatula, making sure they are not overlapping. Bake for another 10-15 more minutes, or until the fries are crispy and have begun to brown a bit.
- Once done, transfer the baking sheet to a cooling rack, sprinkle with your desired amount of sea salt, then let the fries rest for 5 minutes.
- Serve warm.

- Wash and peel your sweet potatoes. Cut into 1/4 inch thick fries and rinse the potatoes for about 10-15 seconds under cold water then dry with paper towels or a clean dish cloth you don't mind turning slightly orange.
- Mix the cornstarch with the water to make a slurry in a large bowl or large ziploc bag, add sweet potatoes and toss to coat.
- Heat your oil in your pot to 350 degrees and add the fries 1 at a time so they don't stick together, but make sure you don't overcrowd your pan.
- Each time you do another round of potatoes toss the potatoes in the slurry again to prevent the cornstarch from settling. This should only take a few seconds and is even easier if you have a ziploc bag you can just flip upside down a few times and shake.
