We opted for a nutty crumb topping over marshmallows to create a pleasantly crunchy contrast to the creamy and soft mashed sweet potatoes. The filling gets a pumpkin pie-like treatment, with brown sugar and vanilla for a deep caramel flavor and butter and eggs for richness. This recipe is bound to become a holiday staple.

1/2 stick (4 tablespoons) unsalted butter, melted, plus more for buttering the baking dish
3 to 4 large sweet potatoes (about 1 3/4 pounds), peeled and cubed
1/2 cup milk
1/4 cup brown sugar, packed
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
2 large eggs
1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1/2 stick (4 tablespoons) unsalted butter, melted

3/4 cup chopped pecans

Steps:

  • For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.
  • For the filling: Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
  • Whisk together the butter, mashed sweet potatoes, milk, brown sugar, vanilla, salt and eggs in a large bowl. Transfer to the prepared baking dish.
  • For the topping: Combine the flour, brown sugar, butter and salt in a medium bowl until moist and the mixture clumps together. Stir in the pecans. Spread the mixture over the top of the sweet potatoes in an even layer. Bake until mostly set in the center and golden on top, 25 to 30 minutes. Serve hot.

1 teaspoon vanilla
1/2 cup half-and-half
2 eggs, beaten

1 cup coconut
1/3 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup melted butter

Steps:

  • Mix all of the casserole ingredients in a mixer until smooth, then spread in a buttered dish.
  • Mix well topping ingredients and add melted butter.
  • Sprinkle on top of the potatoes.
  • Bake at 375 for 25 minutes.

  • Preheat oven to 350F and grease a 3 quart casserole.
  • Mix together mashed sweet potatoes, eggs, vanilla, butter, milk and coconut.
  • Pour into greased 12-inch round casserole.
  • For topping, mix together brown sugar, nuts, flour and butter.
  • Crumble over the sweet potatoes (not too thick as it's sweet).
  • Bake for 25 to 35 minutes.

I have made it each year since, and when I bring it to gatherings people rave about it, so I bring it year after year. Some people say it's more like a desert than a side dish. All I know is that it's a standby for me and always gets a nod.

1 (8 ounce) can crushed pineapple, drained
½ (14 ounce) bag flaked coconut, or more to taste
3 cups cooked mashed sweet potatoes
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup milk
½ cup butter, melted
⅓ cup all-purpose flour
1 cup firmly packed brown sugar
⅓ cup butter, melted
1 cup finely chopped pecans

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat the pineapple, coconut, sweet potatoes, white sugar, eggs, vanilla extract, milk, and 1/2 cup melted butter together in a large mixing bowl until smooth. Pour mixture into the prepared pan; set aside. Mix the flour, brown sugar, 1/3 cup butter, and pecans in a bowl. Sprinkle pecan mixture over the batter.

2 large sweet potatoes, peeled and chopped
¾ cup white sugar
½ cup milk

This is something that I found in my husbands Diabetic Cooking cookbook(Nov/Dec 2009). It sounded so good I had to make it for Turkey Day. It went over so great that I had to give it to all of you. I made it again today with 1/2 cup regular sugar instead of the subsititute.

6 cups water
1 3/4 lbs sweet potatoes, peeled and cut into 1 inch cubes
1/2 cup sucralose based sugar substitute, pourable
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon salt (optional)
1/4 cup cholesterol-free egg substitute
1/4 cup reduced fat margarine
2 teaspoons vanilla
1/4 cup quick-cooking oats
1/3 cup flaked coconut
1 1/2 ounces pecan chips (about 1/2 cup)
3 tablespoons maple syrup

Steps:

  • Prheat oven to 325 degrees. In large saucepan bring water to a boil over high heat. Add potatos,return to a boil,then reduce heat, cover and simmer 18 to 20 minutes or until very tender when pierced with fork. Drain in colander, shaking off excess liquid.
  • Meanwhile, in small bowl combine topping ingredients, except syrup. Set aside.
  • Place potatos in large bowl. Using an electric mixer beat until smooth. Add sugar substitute, cinnamon,nutmeg,salt, if desired, egg substitute, margarine and vanilla. Beat on medium speed until smooth.
  • Coat 9- inch glass deep-dish pie pan with cooking spray. Spoon potato mixture into pan. Sprinkle oat mixture evenly over all. Bake 35 minutes or until lightly browned.
  • To serve,drizzle syrup evenly over all.
  • Enjoy.
