One-pan Sweet Potato Breakfast Hash Recipe by Tasty image

Here's what you need: sweet potato, olive oil, red onion, garlic, bell peppers, jalapeño, green onions, fresh rosemary, eggs

1 sweet potato
1 tablespoon olive oil
½ red onion
1 clove garlic
2 bell peppers
1 jalapeño, optional
2 green onions
1 tablespoon fresh rosemary
4 eggs

Steps:

  • Dice the sweet potato
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potato, cover, and cook, stirring occasionally, for about 10 minutes, or until it begins to soften.
  • While the sweet potato cooks, dice the red onion and mince the garlic. Add to the skillet.
  • Dice and seed the bell peppers and add to the skillet.
  • Dice the jalapeño, if using, and add.
  • Chop the green onion and rosemary, if using fresh, and add to skillet. Cover and cook for about 5 minutes, or until the sweet potato is tender.
  • Create 4 wells in the vegetable mixture, not too close to the edges of the skillet, but far enough apart that they aren't touching. Crack 1 egg into each well. Cover and cook for 3-5 minutes more, or the eggs are cooked to your liking.
  • Breakfast is served!

1 sweet potato, diced
1 pound sausage
½ cup chopped onion
½ red bell pepper, diced
1 cup sliced fresh mushrooms
1 cup torn kale leaves
salt and ground black pepper to taste
5 eggs
⅓ cup water
1 teaspoon dried thyme, or to taste
1 green onion, diced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat olive oil in a large skillet over medium heat. Add sweet potato; cover and cook, stirring occasionally, until tender, 8 to 10 minutes. Transfer to a large bowl.
  • Cook and stir sausage in the same skillet over medium-high heat until crumbled and browned, about 5 minutes. Add to the sweet potato in the bowl.
  • Cook and stir onion and red bell pepper in the same skillet until tender, about 3 minutes. Season with salt and pepper. Add mushrooms and kale; cook until kale softens, about 3 minutes more. Transfer to the bowl.
  • Whisk eggs, water, thyme, salt, and pepper together in a small bowl. Stir into the sausage mixture. Pour into a large baking dish.
  • Bake in the preheated oven until sweet potato starts to brown, 20 to 25 minutes. Let stand for 5 minutes. Garnish with green onion.

5 tablespoons almond butter
⅓ cup maple syrup
½ teaspoon vanilla extract
2 ¼ cups rolled oats
½ teaspoon cinnamon
½ teaspoon ground nutmeg
⅓ cup slivered almond
⅓ cup shredded coconut

Steps:

  • Preheat the oven to 350°F (180°C). Line a 9-inch (23 cm) square baking pan with parchment paper.
  • In a large bowl, stir together the mashed sweet potatoes, almond butter, maple syrup, and vanilla until well combined. Add the oats, cinnamon, and nutmeg and stir until well combined.
  • Transfer the mixture to the baking pan and spread in an even layer with a spatula.
  • Bake for 20 minutes. Remove from oven and top with the slivered almonds and shredded coconut, pressing gently into the bars. Bake for another 10 minutes, until the coconut is lightly toasted.

With lots of fiber and slow-digesting carbs, these Sweet Potato Breakfast Bowls won't put you into a sugar coma.

2 lbs. sweet potatoes, scrubbed
8 oz. bacon, baked
2 Tbsp. coconut milk
1 tsp. vanilla extract
Pinch of sea salt
2 Tbsp. collagen powder, optional
1 pint fresh blueberries
1 ripe banana, sliced
1/4 cup chopped almonds

Steps:

  • Preheat the oven to 400°F.
  • Line a rimmed baking sheet with parchment paper. Place the sweet potatoes on the sheet and roast them for about 45 minutes, or until they're quite soft and a knife easily pierces through the flesh. Remove them from the oven, slice them open, and allow them to cool for a few minutes.
  • About 30 minutes into the roasting of the sweet potatoes, start baking the bacon. Once the bacon is cool, roughly chop it, then set it aside.
  • To make the sweet potato purée, I find it easiest to cut the ends off the sweet potatoes, then peel the skin off. Place the roasted flesh into a food processor, then add the coconut milk, vanilla, salt, and, if desired, collagen powder. Purée for about 30 seconds, or until the mixture is smooth. If it's too thick, add a splash more of the coconut milk and process again. If you don't have a food processor, combine everything in a large bowl and stir it very well with a wooden spoon.
  • Divide the sweet potato purée between serving bowls. Top it with the chopped bacon, blueberries, sliced banana, and chopped almonds, and serve.
  • The bowls can be assembled ahead of time, but it's best to leave the fruit off until they're ready to eat. They can be eaten cold or gently reheated.
