CINNAMON SWEET POTATO APPLE BAKE

Steps:
- Preheat oven to 375℉.
- In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.
- Mix until apples and sweet potatoes are evenly coated.
- Cover with foil and bake in the oven for 40 minutes.
- After 40 minutes, remove foil, add optional pecans, stir and bake for an additional 10-15 minutes or until sweet potatoes are cooked through to your liking.
- Remove from oven, toss or drizzle with 1 Tbsp. melted ghee or butter and dash with cinnamon and a little sea salt.
- Optional - Drizzle with a little maple syrup and top with additional chopped pecans.

ROASTED SWEET POTATOES AND APPLES

- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- Heat oven to 375 F degrees.
- Lightly spray 13 x 9-inch baking dish with no-stick cooking spray; set aside.
- In large skillet, heat butter over medium-high heat until melted.
- Cook and stir leeks and garlic 1 to 2 minutes or until leeks are tender.
- Add bell peppers and mushrooms; cook 4 to 6 minutes or until peppers are crisp-tender.
- Remove from heat; set aside.
- Layer 1/2 of the potatoes onto bottom of prepared dish; sprinkle with 1 1/2 cups of the cheese.
- Spoon vegetable mixture over cheese.
- Layer remaining potatoes over vegetables.
- In medium bowl, whisk together eggs, milk, salt, pepper and thyme (if desired); pour evenly over potatoes.
- Cover with aluminum foil.
- Bake 1 hour or until potatoes are almost tender.
- Remove foil; top with remaining 1 cup cheese.
- Bake an additional 10 to 15 minutes or until top is golden and potatoes are tender.
- Let stand 5 to 10 minutes; cut into 8 servings.

- Preheat an oven to 350°F.
- Heat a large frying pan over medium heat. Remove the sausage from its casings, and cook the sausage thoroughly, crumbling it into small pieces. Drain the sausage on a paper towel and set aside. Pour off the remaining fat, then add the spinach to the pan and cook until wilted, about 2 minutes. Let cool, then squeeze the spinach so that excess liquid is removed.
- Place the butter in a 2-quart baking dish, and place in the oven to melt.
- In a large bowl, mix together the eggs, 2/3 of the goat cheese, sundried tomatoes, flour, salt and pepper. Add in the diced potatoes, spinach and sausage. Mix to combine.
- Carefully remove the dish with the melted butter from the oven, then pour the egg mixture into the dish. Crumble the remaining goat cheese over the top, then carefully place back in the oven.
- Bake the strata until the eggs are set in the middle, about 50-55 minutes. Let cool for 5 minutes before eating.

Steps:
- Grease an 8-inch square baking dish.
- Place apples, butter, brown sugar, 1/2 tablespoon cinnamon, and salt into a skillet over medium heat. Saute until sugar bubbles, about 5 minutes. Set aside.
- Place eggs, half-and-half, cream cheese, and remaining cinnamon into a blender and blend until smooth.
- Scatter cubed bagels, cooked apples, and pecans in the bottom of the prepared baking dish. Pour egg mixture on top, making sure to submerge bagel cubes. Let sit in the refrigerator 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).

SWEET POTATO STRATA
A layered dish consisting of white potatoes, sweet potatoes and a maple cream sauce. This is from a local restaurant that got so many requests for the recipe that they posted it for everyone to use. Try it and you won't be disappointed. I use a mandolin to slice the potatoes.

- Prepare at least 24 hours in advance of serving.
- Preheat the oven to 400 degrees and butter a 9 x 12 baking dish.
- Layer the slices of potatoes in the pan. Begin and end with sweet potatoes. Five to eight layers depending on how thin the potatoes are sliced.
- In a sauce pan, combine the cream, syrup and brown sugar. Bring to a boil and stir constantly. Remove the mixture from the heat and pour over the layered potatoes.
- Cover with foil and bake for 40 minutes. Let cool and cut into 2 x 2 inch squares while still in the pan. Refrigerate for 24 to 48 hours. If you don't, it won't set properly and will be "soupy".
- Before serving cover and microwave on a safe plate or serving platter.
- Enjoy!

- Preheat oven to 400 degrees.
- Combine apples and lemon juice in a large bowl.
- Add the sweet potatoes and the next 4 ingredients (sweet potatoes through pepper).
- Place the sweet potato mixture in a 13 x 9-inch baking dish coated with cooking spray.
- Bake at 400 degrees for 40 minutes, stirring after 25 minutes.
- Place bread in a food processor; pulse 10 times or until coarse crumbs form to measure 1 cup.
