Sweet Potato and Chorizo Hash image

A traditional breakfast hash with a few twists. Some extra herbs, a sweet potato instead of an eastern or Yukon potato, and chorizo instead of corned beef, bacon, or sausage.

2 tablespoons olive oil
1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 teaspoon chopped fresh rosemary
salt and ground black pepper to taste
1 medium onion, diced
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1 link Spanish chorizo sausage, casing removed, chopped

Steps:

  • Heat oil in a skillet over medium heat. Add sweet potato to the hot oil and saute, stirring and lowering the heat if necessary to avoid burning, about 5 minutes. Add rosemary, salt, and pepper, and cook until potato begins to soften, about 5 minutes more.
  • Stir in onion, cumin, and cayenne pepper; cook until onions are soft, 5 to 7 minutes. Add chorizo and increase heat to medium-high. Cook and stir until potatoes are tender (not mushy) and brown and chorizo becomes crisp, 1 to 2 minutes.

This sweet potato chorizo skillet is a simple meal option for breakfast or dinner.

1 large sweet potato (peeled and cubed into small pieces)
2 Tbsp olive oil
salt & pepper
1/2 tsp chili powder
1/2 tsp cumin
one small onion (chopped)
1 T Gourmet Garden cilantro
1 chorizo link
1 egg (poached)

Steps:

  • Preheat the oven to 400.
  • Toss sweet potato cubes in a bowl with the olive oil, salt and pepper, chili powder and cumin.
  • Spread them on a cookie sheet in a single layer. Roast for 25 minutes until they begin to soften.
  • Meanwhile, brown the onions and chorizo in a pan.
  • Stir in Gourmet Garden cilantro
  • Stir the potatoes into the pan with the onions and chorizo.
  • Top with poached egg

600g sweet potatoes , diced
1 tbsp sunflower oil
1 large red onion , thinly sliced
400g cooking chorizo sausages , skinned and crumbled
400g can chickpeas , rinsed and drained
4 large eggs
1 green chilli , thinly sliced into rings

Steps:

  • Boil the sweet potatoes for 8 mins until tender, then drain. Meanwhile, heat the oil in a large ovenproof pan and cook the onion and chorizo for 5 mins until softened. Add the sweet potatoes and chickpeas and cook for 5 mins more. Roughly break the mixture up with a fork, then flatten it down lightly to form a cake. Cook for a further 8 mins, without stirring, until cooked through, crispy and golden on the bottom.
  • Heat grill to high. Break the eggs onto the hash, season, then place the pan under the grill and cook for 2-3 mins until the whites are set. Sprinkle with chilli to serve.

1 medium-size sweet potato (peeled if desired)
2 green onions
1 tablespoon oil
2 oz crumbly chorizo (or Soyrizo)
1 teaspoon maple syrup
⅛ teaspoon cinnamon
2 eggs
Salt to taste

Steps:

  • Cut the sweet potato into ¼-½ inch dice and finely chop the green onions (green + light green parts).
  • Heat the oil in a skillet over medium-high heat. Once the oil is shimmering, add the sweet potato. Toss to coat, then cook for 5 minutes, stirring occasionally, until just beginning to soften.
  • Add the green onions and cook for an additional 5 minutes.
  • Once the potatoes are tender, add the chorizo. Cook for 2 minutes or until cooked through. Add the maple syrup and cinnamon, and season with salt as needed. Stir to combine.
  • Make two wells in the hash and crack an egg into each. Cook the eggs to your liking - we cover our skillet with a lid for about 2 minutes to make sunny side up eggs.
  • Serve & enjoy!

A quick, easy, and healthy one-pan breakfast that is sure to satisfy any guest! Made with chorizo, tender sweet potatoes, fresh vegetables, and savory spices, this Chorizo & Sweet Potato Hash is a crowd pleaser!

Number Of Ingredients 17

1 lb - chorizo, ground
2 tbsp - extra virgin olive oil
½ cup - yellow onion, diced
½ cup - red onion, diced
1 cup - bell pepper, diced
2 cups - medium sweet potatoes, peeled and diced
1 tbsp - garlic, minced
1 tsp - paprika
1 tbsp - Italian seasoning
½ tsp - sage, ground
½ tsp - chili powder
¼ cup - chicken or vegetable stock/broth
2 cups - spinach or kale, chopped (or a mix)
4 - 6 each - eggs (optional)
2 tbsp - scallions, chopped
To Taste - kosher salt
To Taste - ground black pepper

Steps:

  • In a large skillet over medium-high heat, add the ground chorizo and brown (about 6 - 8 minutes). When browned, transfer the sausage to a bowl and set aside. Leave the fat from the chorizo in the skillet.
  • Add the extra virgin olive oil, chopped onions, chopped peppers, and diced sweet potatoes to the same skillet. Cook for 12 - 15 minutes or until the potatoes and vegetables are tender. Make sure to stir occasionally.
  • Add the minced garlic, paprika, Italian seasoning, ground sage, and chili powder. Mix until fully combined.
  • Add chorizo and spinach or kale. Cook for another 8 - 10 minutes, or until chorizo is fully cooked. Make sure to stir occasionally.
  • Add the chicken or vegetable stock or broth. Cook until the liquid evaporates (about 2 minutes).
  • Season the hash to taste with kosher salt and ground black pepper. Remove from the heat. If using eggs, fry up 4 - 6 eggs in a separate skillet to serve on top of the hash. Serve hot and enjoy!

1 large red onion, thinly sliced then quartered
14 ounces chorizo sausage, skinned and crumbled
14 ounces chickpeas, drained
6 large eggs
1 green chili pepper, thinly sliced into rings

Steps:

  • Boil the diced sweet potatoes 8 minutes , until tender.
  • Heat the oil in a large cast iron skillet, cook the chorizo 5 minutes and onions stirring frequently untill onions are soft and chorizo is done.
  • Add the sweet potatoes and chickpeas cook to the degree of doneness you prefer. I like a crust.
  • With a spoon make depressions for the eggs. Put the eggs in the depressions.
  • Move the skillet to the broiler and broil on high until the whites are set. Sprinkle with chilli and serve.
