I make a basic chocolate chip cookie dough, but use white chocolate chips, dried cranberries, and brandy (instead of vanilla). Great for Christmas time!

½ cup butter, softened
½ cup packed brown sugar
½ cup white sugar
1 egg
1 tablespoon brandy
1 ½ cups all-purpose flour
½ teaspoon baking soda
¾ cup white chocolate chips
1 cup dried cranberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

  • Heat oven to 350°F. Beat butter and sugar in large bowl with mixer until light and fluffy. Add flour; mix well. Stir in chocolate and cranberries.
  • Drop rounded tablespoons of dough, 2 inches apart, onto baking sheets; flatten slightly.
  • Bake 10 to 14 min. or until lightly browned. Cool 5 min. on baking sheets. Remove to wire racks; cool completely.

1/3 cup cranberry juice

2 cups dried cranberries
2 cups vanilla or white chips
GLAZE:
2 cups vanilla or white chips
2 tablespoons plus 1-1/2 teaspoons shortening

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the eggs, cranberry juice and vanilla. In another bowl, combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Fold in cranberries and vanilla chips. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° until edges begin to brown, 10-12 minutes. Cool for 2 minutes before removing to wire racks to cool completely., For glaze, microwave vanilla chips and shortening at 70% power until melted; stir until smooth. Drizzle over cookies.

2 eggs
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup powdered sugar
1/2 cup dried cranberries

Steps:

  • Heat oven to 350°F.
  • Line 8-inch square pan with foil, with ends of foil extending over sides. Spray with cooking spray. Combine flour, baking powder and salt. Break 6 oz. chocolate into small pieces; place in large microwaveable bowl. Add butter. Microwave on HIGH 1-1/2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add granulated sugar; mix well. Blend in eggs. 1 ½ teaspoons vanilla extract
1 teaspoon ground ginger

½ (12 ounce) package white chocolate chips
Frosting:
½ (8 ounce) package cream cheese, softened
3 cups powdered sugar
4 teaspoons freshly squeezed lemon juice
½ teaspoon vanilla extract
¼ cup dried cranberries, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
  • Prepare cake: Beat brown sugar and butter with an electric mixer until smooth. Add eggs, vanilla, ginger, and salt; beat until well combined. Gradually beat in flour until smooth.
