Brown Sugar and Mustard Glazed Corned Beef image

An excellent way to serve corned beef! Smells divine! (You may use the seasoning packet that comes with the corned beef if you prefer.) CROCK POT instructions included.

1 (3 -4 lb) corned beef brisket
1/2 cup light brown sugar, packed
1/2 cup water
1/2 cup brown mustard

Steps:

  • Rinse off the brisket under running water.
  • Trim off excess fat.
  • Place in large stock pot and cover with water. AT this point you may use the seasoning packet that came with the corned beef.
  • Bring to a boil.
  • Lower the heat to simmer.
  • Cook about 3 hours until very tender (skimming fat as necessary). Add more water if needed to keep covered.
  • CROCK POT DIRECTIONS: If desired, cook corned beef in crock pot until tender. Continue on past this point.
  • Preheat oven to 325º.
  • In a sauce pan, combine the brown sugar and 1/2 cup water. Bring to a simmer over medium-high heat.
  • After about 5 minutes, stir in mustard.
  • Continue simmering another 2-3 minutes.
  • Place the brisket on a rack in a roaster.
  • Thinly coat meat with glaze.
  • Put in oven and bake for 30 minutes, reglazing every 10 minutes.
  • Remove from oven and let rest at least 15 minutes.
  • Slice thin to serve.

1 (4-pound) corned beef brisket
6 to 8 small to medium red potatoes (cut in half or quarters)
2 to 3 medium carrots (pared and cut into chunks)
1 large onion (peeled and cut into eighths)
1/2 head cabbage (cut into chunks)
4 cups apple juice
1 cup brown sugar (packed)
1 tablespoon prepared mustard

Steps:

  • Gather the ingredients.
  • Place the corned beef (cut in half if necessary), potatoes, carrots, onion, and cabbage into a large slow cooker.
  • In a medium bowl, whisk together the apple juice, brown sugar, and mustard until well mixed. Pour over the corned beef and vegetables in the slow cooker. Mix gently.
  • Cover and cook on HIGH for 4 to 5 hours or on LOW for 8 to 10 hours.
  • Remove meat and vegetables and some of the cooking liquid to a platter with a lip to contain the juices.
  • Slice the meat thinly across the grain. Serve with vegetables and some of the cooking liquid. Rye bread with butter would be a nice accompaniment.

4 cups apple juice
½ cup brown sugar
1 tablespoon prepared mustard
2 (3 pound) corned beef briskets with spice packets
20 small red potatoes, scrubbed
4 carrots, cut into chunks
2 onions, cut into 8 wedges
1 head cabbage, cored and cut into large chunks

Steps:

  • Pour the apple juice into a large slow cooker, and mix in the brown sugar and mustard, stirring until the brown sugar has dissolved. Mix in the contents of the spice packets, and lay the briskets into the apple juice mixture. Top with red potatoes, carrots, onions, and cabbage chunks. Push all ingredients into the liquid.
  • Cover and cook on High until corned beef is very tender, 4 to 5 hours; or cook on Low for 8 to 10 hours. Slice meat thinly across the grain, and serve with vegetables.

4 lbs corned beef brisket
water (To Cover)
1 tablespoon mixed whole pickling spices, tied in cheesecloth
1 cup apple jelly
3/4 cup brown sugar
2 tablespoons prepared mustard
2 tablespoons ketchup
1 teaspoon ground cloves
1/2 cup sweet pickle juice
1 lb small red potato (about 1-inch round)
1 lb baby carrots
4 parsnips, sliced into 2-inch chunks
2 turnips, sliced into 2-inch chunks
4 sweet onions, peeled and quartered (Vidalias or Peruvian Sweets)
1 large head cabbage, cut into quarters (preferably savoy)

Steps:

  • Wash corned beef and place fat side up in a large stockpot or Dutch oven. Cover with enough cold water to cover; add pickling spices.
  • Bring to a boil, skimming the surface as necessary. Reduce the heat and slow-simmer, covered, until the meat is nearly fork tender, about 2 hours.
  • Cool corned beef in the broth. While meat cools, melt apple jelly, brown sugar, mustard, ketchup and cloves together in a small suacepan.
  • Preheat oven to 350 degrees F. Remove corned beef from broth and place in a shallow roasting pan lined with foil. Score fat. Brush liberally with jelly mixture. Pour pickle juice into the pan. Bake for 30 minutes, alternately basting with the jelly mixture and pan drippings.
  • Meanwhile, boil the vegetables and cabbage in the corned beef broth until crisp tender, about 20 minutes.
  • When corned beef is done, let cool slightly before thinly slicing against the grain; drizzle with any remaining glaze. On a warmed serving platter, arrange the vegetables and cabbage with several slices of corned beef on top.
  • COOK'S TIP: Buy the cheapest cut of corned beef, the fattier cuts have more flavor.

1 corned beef brisket with spice packet (3 to 4 pounds), trimmed
1 medium onion, sliced
1 celery rib, sliced
1/4 cup butter, cubed
1 cup packed brown sugar
2/3 cup ketchup
1/3 cup white vinegar
2 tablespoons prepared mustard
2 teaspoons prepared horseradish

Steps:

  • Place corned beef and contents of seasoning packet in a Dutch oven; cover with water. Add onion and celery; bring to a boil. Reduce heat; cover and simmer for 2-1/2 hours or until meat is tender. , Drain and discard liquid and vegetables. Place beef on a greased rack in a shallow roasting pan; set aside., In a small saucepan, melt butter over medium heat. Stir in the remaining ingredients. Cook and stir until sugar is dissolved. Brush over beef. , Bake, uncovered, at 350° for 25 minutes. Let stand for 10 minutes before slicing.
