- Preheat the oven to 350 degrees F.
- In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
- In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

- If you haven't already shred the sweet potato until you have about 1 1/2 cups, packed.
- Shred the apple until you have about 3/4 cup, packed. As you pack the shredded apple, you'll naturally squeeze the juice out. You can save the juice for a recipe later, or drain in the sink. Be sure to press the apples into the measuring spoon very well, in order to get as much of the juice out as possible.
- In a large bowl, whisk the salt, cinnamon, nutmeg, eggs and milk together well.

- Pre-heat the oven to 400 degrees and butter a 9x13 casserole dish.
- Warm a large skillet over medium-high heat, melt the butter, and brown the sausage. Use a slotted spoon to scoop the browned sausage out of the skillet, leaving the fat behind to cook the veggies in.
- Add the sweet potato to the fat in the skillet over medium-high heat, and cook for a few minutes. Sweet potato takes a bit longer to cook than the other veggies, so don't add the others just yet.
- Once the sweet potato has cooked for a few minutes, add the onion, pepper, apples, sea salt, thyme, and pepper, and cook over medium-high heat, stirring occasionally. Cook the veggies for about 7-10 minutes until soft and sweet.

- Preheat the oven to 375 degrees. Lightly grease a large baking sheet, and arrange the sweet potato slices into a single layer on the pan. Transfer to the oven, and bake for 15-20 minutes or until sweet potatoes are softened. Remove from oven. Turn the oven to 350 degrees.
- In a small bowl, mix together coconut sugar, cinnamon, pecans, ghee, and salt.
- Now prepare the casserole. Lightly grease a 9x13 inch casserole dish. Arrange a layer of sweet potatoes on the bottom, then top with a layer of apples. Spoon or spread some of the sugar/pecan mixture over the apples. Repeat for another layer. End with a layer of sweet potatoes on top. Spoon the last of the mixture on top. - Cut sausage; fry until done (if bulk sausage is used, shape into small balls or break up as it cooks). Pare and slice potatoes and apples. Mix salt and sugar together and blend with cold water. Arrange layers of sweet potatoes, apples and sausage in baking dish. Pour some of the sugar mixture over each layer. Top with apples and sausage and add drippings. Cover. Steps:
- Preheat oven to 400 degrees-spray 9 x 13 pan with non stick cooking spray.
- Combine all ingredients EXCEPT sausage in a large bowl-toss to coat evenly. Place potato mixture into pan. Bake, uncovered, 30 minutes. Remove and add sausage to potato mixture-then bake 5 to 10 minutes more until sausage is heated through and potatoes are tender.

- PREHEAT oven to 450°F. TOSS potatoes, oil, salt and pepper in a large bowl until coated. Spread out in a large heavy roasting pan. Roast 20 minutes, stirring once or twice. While potatoes roast, stir sausage, apples, mustard, honey and vinegar together in the bowl. REDUCE oven temperature to 375°F. Remove roasting pan from the oven. Scrape potatoes up from the pan with a spatula. Add sausage, apples and the mustard mixture to the potatoes and toss to combine. Return to the oven and bake, stirring once or twice until the potatoes and apples are tender and the glaze is caramelized, 30 to 35 minutes. SCRAPE potato mixture into the center of the roasting pan.
