2 sweet potatoes (about 1 lb.), peeled and cut into 1-inch cubes
2 apples, peeled, cored and cut into 1-inch cubes
1 onion, sliced
12 ounces fully cooked chicken sausage, sliced into rounds (I used Aidells Chicken & Apple Smoked Chicken Sausage)
2 tablespoons olive oil
1 envelope (1.25 ounces) Savory Herb with Garlic dry soup mix

Steps:

  • Preheat oven to 400 degrees F.
  • Spray a large baking dish (about 9 x 13 inches) with cooking spray.
  • In the prepared dish (or in a separate bowl), toss together potatoes, apples, onion, and sausage. In a separate small bowl, whisk together olive oil and dry soup mix. Pour sauce over potato mixture and toss to coat.
  • Transfer to baking dish; cover with foil, and bake for 35-40 minutes, or until potatoes are tender.

2 tablespoons olive oil
2 medium leeks, white and light green parts sliced lengthwise and thinly sliced crosswise
Salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 large sweet potato (about 1 pound), peeled and sliced into 1/2-inch-thick rounds
1 large or 2 medium red skinned apples, such as Gala or Honeycrisp (about 12 ounces), halved, cored and cut into 1/4-inch slices
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
  • In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

½ cup firmly packed brown sugar
1 teaspoon ground cinnamon

2 large cooking apples - peeled, cored and cut into 1/4 inch rings

¼ cup firmly packed brown sugar
¼ cup butter
¼ cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a small bowl, mix brown sugar, cinnamon and nutmeg.
  • Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
  • In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.

1/2 tsp salt

1/2 medium yellow onion (chopped)

4 large pre-cooked chicken sausage links (if Whole30/Paleo is important, make sure sausage is compliant)
2 tsp fresh thyme (or 1/2 tsp dried thyme)
3 cloves garlic
1/2 tsp ground cinnamon
3/4 cup broth

Steps:

  • Heat oil in a large skillet over medium high heat. Once the oil is hot, add onions, sweet potatoes and salt. Cook, stirring occasionally until the onions are translucent and potatoes are fork tender. About 10 minutes
  • Stir in the apples, garlic, thyme, cinnamon and sliced sausage. Cook for 5 minute.
  • Add broth to skillet and bring to a boil. Cook until broth has evaporated. About 5 minutes

1 large sweet potato, shredded (about 1 1/2 cups packed)
1-2 apples, shredded (about 3/4 cups packed, juices reserved for another recipe)
1 Tbsp coconut oil
1/4 tsp salt
1-2 tsp cinnamon
1/4 tsp nutmeg
2 eggs
1/2 cup full fat canned coconut milk
1/4 cup raisins
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 400F.
  • If you haven't already shred the sweet potato until you have about 1 1/2 cups, packed.
  • Shred the apple until you have about 3/4 cup, packed. As you pack the shredded apple, you'll naturally squeeze the juice out. You can save the juice for a recipe later, or drain in the sink. Be sure to press the apples into the measuring spoon very well, in order to get as much of the juice out as possible.
  • In a large bowl, whisk the salt, cinnamon, nutmeg, eggs and milk together well.
  • Heat coconut oil in a cast-iron skillet. Add the sweet potato and cook, stirring often, until the majority of the sweet potato is golden in color.
  • Pour the sweet potato into the egg/milk mixture and add the apples and half of the raisins. Stir well so the ingredients are thoroughly mixed together.
  • Pour this back into the skillet, smooth the top and sprinkle the remaining raisins and pecans on top.

1 mango, stoned and chopped
2 large sweet potatoes, cut into wedges

2 tsp ground cumin

2 tsp fennel seeds
2 tsp dried oregano
2 tbsp barbecue sauce
2 tbsp vegetable, rapeseed or olive oil
chopped coriander

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.

1 (12 ounce) package smoked sausage
2 tablespoons water
1 medium yellow onion, sliced
2 apples, cored and sliced
4 medium potatoes, peeled and sliced
4 tablespoons butter
1/4 cup apple cider vinegar
3 tablespoons sugar
2 tablespoons fresh parsley (or 1 T dry) (optional)

Steps:

  • Saute sausage with water covered, about 8 minutes. Discard grease. Set aside.
  • Saute potatos in about 2-3 T butter until tender. Set aside.
  • Saute apples and onions in remaining 1 T butter until tender.
  • Combine cider vinegar, sugar, and parsley.
  • Return the sausage and potatoes to the saute pan along with the apples and onions. Add the vinegar, sugar, and parsley to the skillet. Mix well.

3 large sweet potatoes
3 large yams
4 Red Delicious apples
1/2 cup golden raisins
1/4 cup honey
1/4 cup orange juice
2 teaspoons ground cinnamon
2 tablespoons vanilla extract
1/2 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 13- by 9- by 2-inch baking dish with margarine.
  • Peel the potatoes and yams. Place the potatoes and yams in a large pot of water. Bring to a boil; reduce the heat. Boil gently until the potatoes and yams are tender, about 20 minutes. Remove the potatoes and yams from the water. When cool enough to handle, slice into rounds and set aside. Peel, core and slice apples.
  • Place one layer of yams, apple slices and then sweet potatoes in the greased baking dish; repeat and make at least two layers of each. Top with the golden raisins.

½ cup unsalted butter (melted)
½ cup dark brown sugar
¼ cup maple syrup
2 teaspoons pumpkin pie spice
¼ cup pecans (chopped)
salt (to taste)

Steps:

  • Add the potatoes to a large pot and cover with water.
  • Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.

1 package Kiolbassa Smoked Meats brand sausage, sliced into 1/2 inch rounds this is a beef sausage
1 pound sweet potato, peeled, and cut into small cubes
2 medium apples I used Pink Lady
1/4 teaspoon cinnamon
1/4 teaspoon salt
olive oil

Steps:

  • Preheat oven to 400 degrees, and line a large baking sheet with parchment paper. Set aside.
  • Place the apple and sweet potatoes in a single layer. Drizzle oil over the tops. I didn't measure, I just started drizzling at one end, and went to the other. Sprinkle with cinnamon and salt. Toss to coat evenly.
  • Place the slices of sausage rounds throughout on the pan.
  • Bake for 20 minutes, or until the sweet potatoes are fork tender.

1 Tablespoon olive oil (or other healthy oil like coconut or avocado)
1 yellow bell pepper (diced, with stem, seeds, and membrane removed)
1/2 large onion (chopped (about 1 cup))
2 small to medium white sweet potatoes (or other variety of sweet potato)
3 chicken & apple sausages (diced (I like Aidell's fully cooked Chicken & Apple Sausages))
1 large apple (diced (McIntosh, Honeycrisp, Granny Smith, Golden Delicious are all good))
Salt & freshly ground black pepper (to taste)
2 Tablespoons fresh rosemary (chopped)

Steps:

  • Heat a large cast-iron skillet or nonstick pan over medium heat. Add the oil and wait until it is hot, then add the pepper and onion to the skillet and cook for 5-7 minutes, stirring frequently, just until they are beginning to soften.
  • Add the sweet potatoes and sausages and cook, stirring frequently, for 10-12 minutes, until the sweet potatoes are beginning to soften and the sausage starts to brown a bit.
  • Add the apples to the skillet with the rest of the hash and toss to combine, stirring frequently and continuing to cook for another 3-5 minutes, just until the apples are beginning to soften.
  • Season with salt & pepper, to taste, and sprinkle with the fresh chopped rosemary, stirring everything to combine just before serving.

Number Of Ingredients 14

2 tbsp of butter or olive oil (or combo of both)
1 lb ground sausage of choice
2 small sweet potatoes (½-inch cube (2 cups of ½-inch cube sweet potato. I didn't peel but you can if you want))
½ medium onion (diced)
½ red bell pepper (diced)
2 medium apples (1-inch cube (I didn't peel, but you can if you want))
1 - 1½ tsp sea salt
½ tsp dried thyme
¼ tsp pepper
3 cloves of garlic (fine chop)
1 handful of baby spinach (chopped)
1 - 1 ½ cups cheese of choice (shredded)
12 eggs
½ cup full fat coconut milk or milk

Steps:

  • Pre-heat the oven to 400 degrees and butter a 9x13 casserole dish.
  • Warm a large skillet over medium-high heat, melt the butter, and brown the sausage. Use a slotted spoon to scoop the browned sausage out of the skillet, leaving the fat behind to cook the veggies in.
  • Add the sweet potato to the fat in the skillet over medium-high heat, and cook for a few minutes. Sweet potato takes a bit longer to cook than the other veggies, so don't add the others just yet.
  • Once the sweet potato has cooked for a few minutes, add the onion, pepper, apples, sea salt, thyme, and pepper, and cook over medium-high heat, stirring occasionally. Cook the veggies for about 7-10 minutes until soft and sweet.
  • Add the garlic and spinach to the skillet, stir, and cook for one minute. Turn the skillet off, and stir in cooked sausage and the shredded cheese.
  • Dump the cooked veggie/sausage mixture from the skillet into the buttered casserole dish, and spread the mixture out evenly. Whisk the eggs and milk in a medium mixing bowl and pour over the veggie/sausage mixture.
  • Bake the breakfast casserole for 25-30 minutes at 400 degrees until the eggs are set, and the top is a pretty golden brown. Let the casserole rest for 5-10 minutes before cutting.

1/3 cup coconut sugar
1 tbsp cinnamon
1/3 cup chopped pecans
2 tbsp ghee or coconut oil* (melted)
pinch of salt
2 large apples (peeled and sliced into rings)
1/2 cup fresh apple juice or cider

Steps:

  • Preheat the oven to 375 degrees. Lightly grease a large baking sheet, and arrange the sweet potato slices into a single layer on the pan. Transfer to the oven, and bake for 15-20 minutes or until sweet potatoes are softened. Remove from oven. Turn the oven to 350 degrees.
  • In a small bowl, mix together coconut sugar, cinnamon, pecans, ghee, and salt.
  • Now prepare the casserole. Lightly grease a 9x13 inch casserole dish. Arrange a layer of sweet potatoes on the bottom, then top with a layer of apples. Spoon or spread some of the sugar/pecan mixture over the apples. Repeat for another layer. End with a layer of sweet potatoes on top. Spoon the last of the mixture on top. Finally, top with apple juice or cider.
  • Cover and transfer the casserole dish to the oven. Bake for 30 minutes, remove the lid, and bake for another 10-15 minutes.

  • Preheat oven to 375℉.
  • In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.
  • Mix until apples and sweet potatoes are evenly coated.
  • Cover with foil and bake in the oven for 40 minutes.
  • After 40 minutes, remove foil, add optional pecans, stir and bake for an additional 10-15 minutes or until sweet potatoes are cooked through to your liking.
