This easy recipe for pickled cherry tomatoes combines tomatoes with other garden veggies for long term storage.

8 cups cherry tomatoes
2 cups celery, coarsely chopped
4 cups onion, coarsely chopped
2 cups sweet pepper, coarsely chopped
1 cups cucamelon, optional
6-7 cloves garlic (one per jar)
6-7 heads of dill (one per jar)
6 tablespoons canning salt
4 1/2 cups water
4 cups vinegar
1 cup sugar

Steps:

  • Prepare vegetables, water bath canner, jars and lids. I kept my veggie piles separate so I could make sure to get some of each veggie in every jar.
  • In large saucepot, combine salt, water, vinegar and sugar and bring to a boil. Pack vegetables into hot jars, leaving 1/4 inch headspace. Add one head of dill and one garlic clove to each jar.
  • Ladle hot liquid over vegetables, leaving 1/4 inch headspace. Remove air bubbles and double check headspace. Wipe rims and cover with two piece caps. Process for 15 minutes in a boiling water bath canner.
  • Remove to a towel on the counter to cool for 8-12 hours. Remove rings and check seals. Store any unsealed jars in the refrigerator and use within a month. Label jars and store in a cool, dry location out of direct light. Best if used within 12-18 months.

1 pound red and yellow cherry tomatoes
2 rosemary sprigs
3 garlic cloves, halved
1 1/3 cup white vinegar
1 cup water
1/3 cup granulated sugar
2 tablespoons kosher salt
1 teaspoon black peppercorns
1/2 teaspoon red pepper flakes

Steps:

  • Gather the ingredients.
  • Wash 2 wide-mouth, 16-ounce mason jars with lids with hot, soapy water and dry thoroughly.
  • Wash and dry the tomatoes and remove and discard any stem ends still attached. Use a skewer or toothpick to poke a hole all the way through each of the tomatoes. This helps the pickling brine infuse its way into each tomato and keeps them from floating up inside of the jars.
  • Evenly divide the tomatoes, garlic cloves, and rosemary sprigs, between the two prepared jars.
  • In a medium saucepan, combine the white vinegar, water, granulated sugar, kosher salt, black peppercorns, and red pepper flakes.
  • Bring to a boil over high, stirring until sugar dissolves.
  • Remove from heat and allow to cool for 10 minutes.
  • Pour over the tomatoes in the mason jars.
  • Cover with a tight-fitting lid and chill for at least 2 days to allow the flavors to combine and infuse before enjoying.

1 1/2 cups distilled white vinegar or apple-cider vinegar
2 teaspoons sugar
1/2 teaspoon whole black peppercorns
1/2 teaspoon coriander seeds
3 whole allspice berries
2 dried bay leaves
Coarse salt
4 cups very small cherry or grape tomatoes
2 small sprigs rosemary

Steps:

  • Combine vinegar, 3/4 cup water, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with tomatoes. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.

Steps:

  • Poke holes in the top of the tomatoes with a skewer.
  • In a saucepan, heat the vinegar, salt, sugar and 1 cup water to a rolling boil.
  • In a mason jar, add the rosemary, lemon zest, peppercorns and garlic. Add the cherry tomatoes and pour over the hot vinegar mixture. Screw a top on the mason jar. Let cool, then refrigerate. The pickles will last up to 2 weeks refrigerated.

3 1/2 lbs sugar
4 cups water
1 fresh gingerroot, Grated
2 lemons (Use only the juice and grated zest of the 2 lemons.)
1 teaspoon pickling salt

Steps:

  • Wash the tomatoes and prick each one in several places with the tines of a fork.
  • Dissolve the sugar in the water, bring to a boil and boil rapidly for 5 minutes.
  • Add the tomatoes and cook for 10 minutes.
  • Remove the tomatoes and to the syrup add the ginger root, lemon juice and rind, and salt.
  • Simmer the syrup for 15 minutes, return the tomatoes to the syrup and cook about 30 minutes longer, or till the syrup is thick and the tomatoes are transparent.
  • Turn into hot jars and seal.

A Fantastic way to use up your abundant tomato crop! Use whole Cherry Tomatoes or Slice larger varieties to about 1 inch thick. Make sure tomatoes are stemmed and cleaned of any debris.

2 lbs tomatoes, any colour (mixed is nice)
10 -12 fresh mint leaves or 10 -12 fresh basil leaves
2 pints cider vinegar or 2 pints distilled malt vinegar
1/4 pint apple juice
1 tablespoon peppercorn
1 teaspoon clove
1 tablespoon coriander seed
3 chilies (optional)

Steps:

  • Lightly prick each tomato in several places with a cocktail stick (skip this step if you are using sliced tomatoes).Arrange in a sterilised jar with the mint or basil.
  • Pour in the Sweet Vinegar, making sure it covers the tomatoes by at least 1in (2.5cm). (Vinegar should be boiling hot.)
  • Poke the tomatoes with a wooden skewer to ensure there are no air pockets.
  • Weight down the tomatoes then seal using safe canning method.The tomatoes will be ready to eat in 4 - 6 weeks,but improve with longer keeping.
  • To make Sugar Free Vinegar:.
  • Put the vinegar and fruit juice in the pan, bring to the boil and skim well.
  • Make a spice bag with remaining ingredients,add to the boiling vinegar mixture and boil for 10 minutes.
  • Remove the spice bag,pour over tomatoes.
  • NOTE: You can make this vinegar mix in larger quantities and it will keep for 2 years and can be used for loads of other things if sealed in hot sterilised jars.
  • Cook time is actually time to preserve.

12 ounces cherry tomatoes, grape tomatoes, and/or pear tomatoes
1/4 cup coarsely chopped fresh dill
2 garlic cloves, thinly sliced

Steps:

  • Pour vinegar and 3/4 cup water into small saucepan. Add salt, sugar, and lemon peel. Bring to boil, stirring to dissolve sugar and salt. Remove from heat. Let cool 20 minutes.

2 lbs onions, thinly sliced
4 -5 lbs tomatoes or 4 -5 lbs cherry tomatoes, left whole just poke a couple holes into them, large do slice into 1/8
1 bulb of garlic, peeled
6 -8 chili peppers
4 cups sugar
3 tablespoons coarse salt
4 cups vinegar
1 tablespoon turmeric
1 tablespoon celery seed
1 tablespoon mustard seeds
1 tablespoon peppercorn

Steps:

  • In a large bowl, combine onion, and tomatoes.
  • Pack mixture into 3 (1-quart) or 6 (1-pint) canning jars. Place a garlic clove and a chili or two in each jar, and set aside.
  • In a large saucepan, combine sugar, salt, vinegar, turmeric, celery seed, mustard seeds.and peppercorn. Bring to a boil over medium-high heat; stir until sugar dissolves.
  • Pour mixture over produce, leaving a 1/2-inch space at the top of each jar.
  • Wipe rims of excess; screw on lids.
  • Bring a large stock pot of water to a boil. Using canning tongs, gently place jars in boiling water, making sure the water covers the jars (if not, add additional water to cover).
  • Let jars sit in gently simmering water for 10 minutes.
  • Remove; let cool slightly.
  • Check seal by pressing in center of lid. If it doesn't pop back, it is properly sealed. If it does, return jars to water for 10 more minutes.
  • Let sealed jars cool completely.
  • Let pickled tomatoes stand until flavors have melded, at least 2 weeks. Store unopened jars in a cool, dark place up to 6 months. Once opened, jars will keep in the refrigerator for up to 1 month.

18 peppercorns
6 small hot red peppers
2 quarts water
2 cups white vinegar

  • Wash tomatoes and pack in clean, hot quart jars.
  • Add 1 dill head, 3 peppercorns and 1 red pepper to each jar.
  • Place the pickling spice in the center of a coffee filter or cheesecloth and tie.
  • Bring water, vinegar, bag of spices and salt to boil.
  • Remove bag.
  • Cover tomatoes with brine, leaving 1/2-in. headspace.
  • Process in boiling water bath 10 minutes.
  • Let set 6 weeks to mellow.

  • Pierce the bottom of each cherry tomato with a skewer. In a large bowl, place tomatoes, garlic, peppercorns and mustard seed.
