1 large Vidalia or other sweet onion (1 to 1 1/4 pounds, at least 4 inches in diameter)
8 very thin (1/4-inch) slices firm white bread, crusts discarded
1/3 cup mayonnaise
1/2 cup finely chopped fresh parsley

Steps:

  • Cut 4 (1/8-inch-thick) slices from widest part of onion, keeping rings intact.
  • Spread each slice of bread with about 1 teaspoon mayonnaise and top 4 slices with 1 onion slice each. Top with remaining bread slices, mayonnaise sides down, then trim onion flush with bread. Quarter sandwiches into small square or triangular sandwiches.
  • Arrange 2 sheets of wax paper on a work surface. Spread remaining 2 1/2 tablespoons mayonnaise in a thin layer on 1 sheet and spread parsley evenly on the other.
  • Dip all edges of 1 sandwich in mayonnaise to coat, then dip in parsley. Transfer to a tray and repeat with remaining sandwiches.

2 8- to 10-ounce red onions, cut into 1/3-inch-thick rounds
3 1/2 tablespoons red wine vinegar
6 cups trimmed large arugula leaves (about 4 ounces), divided
3/4 cup mayonnaise
8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
12 ounces thinly sliced smoked turkey
3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.
  • Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 11/2 tablespoons arugula mayonnaise over each cut side of bread. Divide turkey slices among 4 bread slices. Top with crumbled blue cheese, dividing equally. Top with red onions, then whole arugula leaves and bread.

1/2 teaspoon onion salt
1/4 teaspoon garlic salt (plus 1/8 teaspoon)

Steps:

1 pound turkey cutlets

3 cups finely chopped kale (about 3 ounces)
8 thin slices multigrain bread, toasted

Steps:

  • Heat 1 teaspoon olive oil and the bacon in a large nonstick skillet over medium heat. Cook, turning occasionally, until crisp, 12 to 15 minutes. Remove and drain on paper towels, leaving the drippings in the pan.
  • Season the turkey cutlets on both sides with the paprika, thyme and a generous pinch each of salt and pepper. Increase the skillet heat to medium high. Add the turkey and cook, turning once, until just cooked through, 6 to 8 minutes. Transfer to a cutting board; reserve the pan drippings.
  • Mix the mayonnaise and chopped peppers in a small bowl; season with salt and pepper and set aside. Put the kale in a medium bowl; add a pinch of salt and the remaining 1 teaspoon olive oil and massage with your fingers until bright green and softened, about 1 minute.
  • Brush the bread with some of the reserved bacon drippings, then spread with the pepper mayonnaise. Mound the kale on 4 bread slices. Cut the turkey into pieces so that it will fit on the bread and layer on top of the kale. Break the bacon in half and add to the sandwiches. Close with the remaining bread slices. Serve with chips.

1 tablespoon olive oil

Steps:

  • Combine mayonnaise, mustard, honey, horseradish, hot pepper sauce, and cayenne pepper in a bowl. Cover and refrigerate.
  • Mix ground turkey, grated onion, jalapeno, barbeque sauce, Worcestershire sauce, liquid smoke, steak seasoning, and mesquite seasoning in a large bowl. Form into 5 patties.
  • Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
  • Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C), about 6 minutes per side. Serve on buns topped with spicy sweet mayo and caramelized onions.

1 bunch arugula, washed and drained

Steps:

  • In a small bowl, combine mayonnaise and parsley. Season with salt and pepper. Spread 1 tablespoon mayonnaise mixture on each of the halved rolls. Place Gouda on four halves, and top with sliced onion and arugula. Top with remaining halves.

I made this sandwich up the other day - low calorie, *very low* in fat (1 gram), very rich tasting (really!), and tons of great taste! If you love onions, this is for you!

2 slices light whole wheat bread
3 slices butterball fat free turkey
1/4 cup shredded fat free mozzarella cheese, the kroger store brand is great
1/2 cup white onion, chopped
1/2 cup shredded romaine lettuce
2 teaspoons fat-free Miracle Whip
1 teaspoon plain mustard
I Can't Believe It's Not Butter! Spray

Steps:

  • Place the onions in a bowl and add a couple of teaspoons of water- I also like to add a boullion cube for extra flavor (+5 calories), but be careful with this if you're watching sodium.
  • Cover with plastic wrap and nuke onions for about 3-5 minutes or until floppy.
  • Meanwhile, spray one side of each slice of bread with the butter spray.
  • Lay one piece spray-side down in a skillet and top with the cheese.
  • You might want to add a squirt of spray over the cheese if the kind you use doesn't melt well.
  • When the onions are done, take them out and spoon them over the cheese on the bread.
  • Next, add the 3 slices of turkey.
  • Spread the unsprayed side of the other slice of bread with the Miracle Whip (or fat free mayo) and the mustard.
  • Place this slice on top- spray side up!
  • Heat the skillet over medium heat, toasting the sandwich a couple of minutes on either side or until golden brown.
  • When done, remove the sandwich, peel apart, stuff in the lettuce, smoosh back together, and CHOW DOWN!
  • I included calorie and fat counts for every ingredient so that it will be easy to make substitutions and still know the exact nutritional information- I realize that not everyone loves onions as much as I do!
  • Some other good ingredients are roasted bell peppers, mushrooms, tomato, or anything else you love!
