CORN RYE BREAD

Corn Rye Bread image

This classic Jewish delicatessen rye bread doesn't actually have any corn in the dough, though plenty should be used on the baking sheet. It should be dense, but not dry, and the crust should be crisp and crunchy. Adapted from a recipe in _Better Than Store-Bought_ by Wittie and Colchie (1979). The starter will make about 2 cups, a bit more than needed for the bread. It can be fed like any sourdough starter, and stored in the refrigerator.

Time P2DT1h

Yield 1 large loaf

Number Of Ingredients 14

1/2 tablespoon dry yeast
2 cups water, divided
1 3/4 cups rye flour, divided
1 small onion, peeled and cut in half
3/4 cup warm water (110F)
1/2 tablespoon dry yeast
1/4 teaspoon sugar
2 teaspoons kosher salt
1 cup high-gluten bread flour
1 3/4 cups all-purpose flour
caraway seed (optional)
cornmeal
1 egg white
2 tablespoons water

Steps:

  • The starter must be made 48-72 hours in advance. Combine yeast and 1 c tepid water. Beat in 1 c rye flour. Add onion, cover with plastic wrap and let stand at room temperature for 24 hours. Remove onion. Beat in remaining water and rye flour. Cover and let stand at room temperature another 24 hours. It may be used at this point, or refrigerated up to another 24 hours.
  • Combine 1/4 c warm water, yeast and sugar. Let stand 10 minutes until foamy.
  • In work bowl of a heavy-duty mixer, dissolve salt in remaining warm water. Stir down sourdough starter and remove 1/2 cup (see head note). Mix remaining starter into salt water, then add yeast mixture. Add high-gluten flour and 1 c all-purpose flour; if using, add caraway seeds. Mix to form a soft dough.
  • Add remaining flour and knead until dough is soft and slightly sticky (either in the mixer or by hand). Do not overknead; the dough should not be very elastic. Form into a ball and place in an ungreased bowl. Cover and let stand at room temperature until doubled in size, about 90 minutes.
  • Punch down, knead briefly and let stand 15 minutes. Form into a 12" oval, turning the edges in toward the center to form a smooth outer surface. Pinch the seam to seal and place seam-side down on a baking sheet coated with cornmeal. Cover with a damp towel and let rise until almost double, about 45 minutes.
  • Meanwhile, place quarry tiles or baking stone in top 1/3 of oven, and an empty roasting pan in the bottom third. Preheat oven to 400°F.
  • Beat egg white with water and brush over surface of loaf. Slash loaf with a very sharp knife 2 or 3 times. Sprinkle with additional caraway seeds if desired. Place loaf on tiles and toss 4 cups of ice cubes into the hot roasting pan. Bake 30 minutes. Brush loaf with more egg white glaze and bake another 20-30 minutes.

A rustic round loaf of caraway bread is delicious eaten warm from the oven, as a base for sandwiches, alongside soup, or as toast. If you want to experiment, add sliced chives or sunflower seeds, or substitute other herbs for the caraway, such as dried rosemary or thyme. -Frances Conklin, Cottonwood, Idaho

RYE AND CORNMEAL MUFFINS WITH CARAWAY

Rye and Cornmeal Muffins With Caraway image

I like to serve these savory muffins, whose flavors are reminiscent of black bread and pumpernickel, with hearty borscht-type soups, smoked fish or cheese.

Provided by Martha Rose Shulman

Categories     breakfast, brunch, quick, main course, side dish

Time 25m

Yield 12 muffins

Number Of Ingredients 11

1 cup rye flour
1 cup whole-wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/3 cup cornmeal
2 teaspoons caraway seeds
2 eggs
1/4 cup canola oil
2 tablespoons blackstrap molasses
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 375 degrees with the rack positioned in the upper third. Oil or butter muffin tins.
  • Sift together the rye and whole-wheat pastry flours, baking powder, baking soda and salt. Stir in the cornmeal and the caraway seeds.
  • In a separate bowl, beat together the eggs, oil, blackstrap molasses and buttermilk. Using a whisk or a spatula, stir in the dry ingredients, and mix until well combined. Do not beat; a few lumps are fine, but make sure there is no flour at the bottom of the bowl.
  • Spoon into muffin cups, filling them to just below the top (about 4/5 full). Place in the oven, and bake 25 minutes until lightly browned and well risen.

CARAWAY RYE BREAD RECIPE (BREAD MACHINE)

Caraway Rye Bread Recipe (Bread Machine) image

I recently got myself a bread machine and made my first loaf with it today. I think it will take some practice to get used to using the machine, but half the fun is learning how. I tweaked the recipe to suit my tastes and didn't use any dairy. This recipe came from the site the-recipes.com. If you do make this be careful to keep the yeast away from the liquids. Best to add the liquids first and the yeast last. I added the caraway seeds right into the mix, but if your bread machine has a timer the machine will beep and let you know when you can add extra things. I'm going to serve with with a nice cold bowl of Vichyssoise.

SOURDOUGH RYE BREAD WITH CARAWAY

Sourdough Rye Bread With Caraway image

This is a strongly flavored rye bread, like from an "old country" bakery. I was forced to experiment and find a recipe when my favorite ethnic bakery closed and I could no longer buy my favorite sourdough rye bread. I hope I've done it justice. Start the day before you want the bread -- the sour flavor develops best if allowed a slow rise in the refrigerator.

Time 1h15m

Yield 2 loaves, 24 serving(s)

Number Of Ingredients 7

1 cup sourdough starter, proofed
1 cup warm water
1 1/2 cups rye flour
3 cups bread flour
2 teaspoons salt
2 tablespoons caraway seeds
2 tablespoons canola oil, for oiling the bowl

Steps:

  • Mix sourdough starter with warm water with a whisk until thoroughly combined.
  • Add rye flour a little bit at a time, incorporating well before each addition.
  • Add bread flour in the same way, first in the mixing bowl and then turned out on to a floured surface while kneading, until you get a uniformly elastic ball of dough that is tacky but not sticky. This may take about 10 minutes.
  • Make a hole into the center of the dough and add the salt and caraway seed, and continue kneading another 5 minutes or so, until the seeds are dispersed throughout the bread dough.
  • Coat a bowl with a thin layer of canola oil, add the dough and roll the dough around until all sides are covered with oil. Cover well, and refrigerate for 24 hours.
  • Punch down dough, cut in half and form loaves.
  • Leave out on a warm counter, covered, to rise until doubled in size. The length of time will depend on the vigor of your starter, but this may take a few hours.
  • Preheat oven to 350°F.
  • Bake for 30 - 35 minutes, bread will appear lightly browned.
  • Cool on racks.
  • Freezes well.

QUINOA BLUEBERRY, CHEDDAR, AND CARAWAY RYE CORNBREAD

Quinoa Blueberry, Cheddar, and Caraway Rye Cornbread image

I just finished baking this glorious cornbread as the apex of my post-exam celebration. Wonderful things happen to your brain when you're 19 and done exams - like figuring out the perfect recipe for wholegrain blueberry herb cornbread! I'm amazing! I'm also a bit of a health nut so the ingredients are really quirky, but I'm sure you can play around with things to some appropriate degree. Be creative! That's the best part. But I hope you'll enjoy this recipe just as much as I have! ***NOTE: I make 2 loaves out of this amount of batter, because it rises better (more evenly) that way.
