THAI STYLE SWEET CHILI RIBS

Super easy homemade slow cooker ribs in a tasty Thai style sweet chili BBQ sauce!

Number Of Ingredients 12

1/3 cup sweet chili sauce
1 tablespoon red curry paste
1 tablespoon fish sauce (or soy sauce)
1 tablespoon lime juice (or rice vinegar)
1/2 cup sweet chili sauce
1/4 cup peanut butter
1 tablespoon red curry paste
1 tablespoons fish sauce (or soy sauce)
1 tablespoon lime juice (or rice vinegar)
5-6 pounds pork ribs (baby back or spare ribs) (2 racks), silver skin removed and fat trimmed
2 tablespoons roasted peanuts, chopped
1 tablespoon cilantro, chopped

Steps:

  • Mix all of the ingredients, brush over the ribs and marinade in a sealed container in the fridge overnight.
  • Mix everything in a small saucepan over medium heat until the peanut butter has melted and the sauce is smooth, about 2-3 minutes.
  • Place the ribs in the slow cooker with the bones vertical, wrapped around the inside, and cook on low until fall off the bone tender, about 6-8 hours.
  • Carefully transfer the ribs to a baking sheet, brush on half of the BBQ sauce and broil in the oven until the sauce starts to bubble and caramelize, about 3-5 minutes.
  • Sprinkle on the chopped peanuts and cilantro and enjoy with the remaining BBQ sauce!

One 3- to 4-pound rack pork spare or back loin ribs, halved
Kosher salt and freshly ground black pepper
3/4 cup Food Network Kitchen™ Inspirations Thai Style Sweet & Spicy Chili Cooking Sauce
Chopped cilantro, chopped roasted and salted peanuts and lime wedges, for serving

Steps:

  • Sprinkle the ribs all over with salt and pepper. Brush the ribs with 1/2 cup of the Thai Style Sweet & Spicy Chili Cooking Sauce. Transfer to a 6- to 8-quart slow cooker insert. Cover and cook on low for 8 hours.
  • Preheat the broiler and line a baking sheet with foil.
  • Place each rib rack half, bone-side down, on the prepared baking sheet. Brush with the remaining cooking sauce. Broil until the glaze is bubbling and browned, 3 to 5 minutes.
  • Slice the ribs between the bones. Transfer to a platter and sprinkle with cilantro and peanuts. Squeeze lime juice over the ribs.

This recipe works well with beef or pork ribs ribs too, I have made this recipe using short ribs, and they turned out very good. This is cooked at a very low temperature for a longer time to produce very flavorful and tender ribs. The sauce ingredients may be doubled or tripled for more ribs.

3 -4 lbs pork ribs (can use beef ribs also for this)
3/4 cup brown sugar
1/2 cup ketchup
1/2 cup white vinegar
2 tablespoons Worcestershire sauce
1 1/2 teaspoons chili powder (or to taste)
3/4 cup water
1 large onion, diced
1 tablespoon chopped fresh garlic (or to taste)
salt and pepper (optional and to taste)

Steps:

  • Set oven to 275 degrees.
  • Grease a small roasting pan, or a shallow baking dish.
  • Cut the ribs to desired size and place in the roaster pan.
  • Mix all ingredients in a bowl, then pour over ribs in the pan; toss with hands to combine and coat the ribs with the sauce.
  • Cook uncovered for about 2-1/2 - 3 hours, or until the ribs are cooked to desired tenderness (check ribs after about 1-1/2 hours).
  • Delicious!

1 1/2 kg beef short ribs
1/2 cup sweet chili sauce
1 tablespoon soy sauce
1/4 cup rice wine
2 cloves garlic, crushed
1 teaspoon grated fresh ginger
2 tablespoons finely chopped fresh coriander leaves

Steps:

  • Place spareribs in large shallow dish with combined suaces, wine, garlic, ginger and coriander.
  • Refrigerate for four hours, overnight or can be frozen at this point.
  • Cook ribs in covered barbeque, using indrirect heat about 30 minutes or until browned and cooked as desired.

  • Preheat oven to 275F. On the underside of the rib, remove the thin membrane and discard. Season both sides with salt and pepper.
  • Roast for 4 hours or so. Discard foil. Use a wide, flat spatula to carefully lift the ribs onto a baking sheet. Spread the sweet chili sauce generously over the ribs.
  • Place oven rack near the top of the oven. Turn broiler on and broil the ribs for 3-5 minutes, or until the sweet chili sauce begins to caramelize. Make sure you don't burn the sauce, so keep a close eye on the ribs.
