SWEET CARDAMOM CRACKERS

1/2 cup sugar
1 tablespoon finely chopped pistachios
1 tablespoon unsweetened shredded coconut
1/2 cup (1 stick) unsalted butter, room temperature
1 large egg, separated, white lightly beaten
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour, plus more for rolling
3/4 teaspoon ground cardamom
1/4 teaspoon salt

Steps:

  • Stir together 1 teaspoon sugar, the pistachios, and coconut in a small bowl.
  • Put butter and remaining sugar into the bowl on an electric mixer fitted with paddle attachment. Mix on medium speed until combined. Add egg yolk and vanilla; beat until pale and fluffy, about 2 minutes. Reduce speed to low. Add flour, cardamom, and salt; mix until smooth. Wrap dough in plastic, and refrigerate until firm, about 2 hours.
  • Preheat oven to 350 degrees. Transfer dough to a nonstick baking mat (such as Silpat), or parchment paper. With a floured rolling pin, roll out a 12 by 8-inch rectangle about 1/4 inch thick. Use a pizza wheel to create straight sides, discarding scraps. Carefully transfer mat or paper to a baking sheet. Cut into twenty-four 2-inch squares. Brush with egg white and sprinkle with pistachio mixture.
  • Bake until firm and edges are pale golden brown, 10 to 12 minutes. Remove from oven and run pizza wheel over original cuts. Gently break into individual crackers. Transfer to a wire rack to cool. Cookies can be stored in an airtight container at room temperature up to 3 days.

52 individual butter crackers, such as Club
8 tablespoons (1 stick) salted butter
1 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F.
  • Arrange the crackers in a single layer on a rimmed baking sheet so that the baking sheet is completely covered with a solid layer of crackers. Set aside.
  • In a medium saucepan, melt the butter with the brown sugar and vanilla. Bring to a gentle boil over medium heat and boil until it starts to thicken, 1 to 2 minutes. Immediately pour the mixture over the crackers in an even layer. Use an offset spatula to spread the mixture all over the crackers. Bake for 5 minutes. Sprinkle the almonds all over, then let cool completely.
  • When cool, break apart for a great snack.

1 cup butter, softened
½ cup white sugar
½ cup packed brown sugar
1 egg, separated
1 tablespoon vanilla extract
2 cups all-purpose flour
1 tablespoon cardamom
¾ teaspoon salt
⅓ cup chopped pecans
1 ½ tablespoons Butter
1 cup confectioners' sugar
½ teaspoon vanilla extract
1 tablespoon milk, or as needed

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C). Grease a 10x15 inch jellyroll pan.
  • In a large bowl, cream together 1cup of butter, white sugar and brown sugar until light and fluffy. Mix in the egg yolk and 1 tablespoon of vanilla. Combine the flour, cardamom and salt; stir into the batter until it forms a soft dough. Spread evenly in the prepared pan. Brush the top with egg white and sprinkle pecans over the top.
  • Bake for 1 hour in the preheated oven. Prepare the frosting while the cookies bake.
  • Melt the remaining butter in a saucepan over low heat until it starts to brown. Remove from the heat and stir in confectioners' sugar until smooth. Stir in enough milk to achieve a drizzling consistency. Drizzle frosting onto the bars when warm. Cool, then cut into bars.

36 buttery crackers such as Keebler Club® Crackers
12 slices bacon, cut into thirds
¾ cup packed light brown sugar

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Line two rimmed cookie sheets with aluminum foil.
  • Arrange crackers on the prepared cookie sheets in a single layer. Place a piece of bacon on top of each cracker, then put about a teaspoon of brown sugar on top of the bacon.
  • Bake in the preheated oven until bacon is browned and crackers and bacon are glazed, about 45 minutes. Drain on paper towels before serving.
