SWEET-AND-SOUR CABBAGE
Steps:
- Melt 2 tablespoons butter in a large skillet over medium heat. Add 3/4 teaspoon caraway seeds and 1 minced garlic clove; cook, stirring, 1 minute. Halve 2 pounds carrots lengthwise and cut into 2-inch pieces; add to the skillet along with 1/2 cup water, 3 tablespoons each brown sugar and cider vinegar, and salt and pepper to taste. Bring to a simmer, cover and cook 15 minutes. Stir in 4 cups shredded red cabbage and season with salt; cook 5 minutes. Remove from the heat and add a squeeze of lemon juice. Transfer to a bowl and top with torn fresh dill and parsley.
SWEET AND SOUR GERMAN RED CABBAGE

- Sauté the cabbage: Melt the butter in a large pot over medium heat. Add the thinly sliced red cabbage and toss to coat with the butter. Sauté until slightly wilted, about 5 minutes.
- Add the sugar and vinegar, simmer: Sprinkle sugar over the cabbage and toss to coat evenly. Add the balsamic vinegar to the pot. Bring to a simmer, then reduce the heat to medium low. Cover and simmer until the cabbage is completely tender but not mushy. Stir often, about 30 to 45 minutes total.
- Season: Season to taste with salt and pepper.

- Discard the outer leaves of the cabbage, quarter it, remove the hard core and finely slice the leaves.
- Heat the oil in a saucepan and sweat the cabbage with the salt and pepper and mace until it gives off a nutty aroma and is glossy and relaxed. Add the balsamic vinegar and the sugar and cook to evaporate it. Add the red wine and bay leaves, cover the pan, turn the heat down low and braise for 17 minutes, stirring halfway through.
- Add the cranberries, cover the pan, and cook for another 10 minutes, stirring halfway through.

- In a large pot heat olive oil over moderate heat and cook the onions until translucent.
- Add the minced garlic and crushed red pepper flakes and cook, stirring for 1 minute.
- Stir in the balsamic vinegar and the brown sugar and bring to a simmer.
- Add the cabbage and stir to combine.
- Add the tomatoes and the chicken stock and bring to a simmer.
- Season with salt and pepper, to taste.
- Simmer the soup uncovered, for 30-40 minutes until the cabbage is very tender.
- Taste soup and adjust seasoning with a bit more balsamic vinegar, brown sugar, salt &/or pepper.
- Stir in parsley.

- Tip the cabbage into a large pan with the sugar, vinegar, cinnamon and star anise. Season well. Put over a medium heat and bring to a simmer, then cover, reduce the heat and cook for 1 hr, simmering gently and stirring occasionally.
- Remove the lid, turn the heat up to medium and continue cooking for 20 mins, uncovered, until tender and the liquid has reduced to a sticky syrup. Once cool, will keep in an airtight container in the fridge for three days or frozen for up to two months. Reheat over a low heat. Stir in the butter before serving.
