THAI QUIVERING TENDERLOINS
This Thai-inspired dish is simple enough to cook for a weeknight, yet elegant enough to serve for a dinner party.

Steps:
- Whisk together the orange juice, soy sauce, hot pepper sauce, cilantro, garlic, brown sugar, peanut butter, and ginger root in a bowl. Lie the tenderloins in a glass baking dish; pour the orange juice mixture over the tenderloins. Marinate in refrigerator at least 1 hour and up to 8 hours or overnight.
- Preheat an oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Transfer the tenderloins to the foil-lined baking sheet, reserving the marinade.
- Cook until the pork is no longer pink in the center, 30 to 35 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- While the pork cooks, combine the reserve marinade and chicken stock in a saucepan. Bring to a boil. Allow to boil 2 minutes; reduce heat to low and simmer 5 to 7 minutes. Cut the tenderloins into 1/4-inch slices; spoon the sauce over the sliced pork to serve.

Steps:
- Heat oil in wok.
- Add first 3 ingredients till fragrant.
- Add ground pork; cook till no pink.
- Add yellow onion cook about 2 minutes.
- Add green onions; cook another 2 minutes.
- Add cilantro and fish sauce; cook 1 more minute.
- When cooking last 3 ingredients, use your judgment on how you like the firmness of them--you might want to cook more or less. I like mine a little firmer.
- Serve with jasmine rice.

- Start by prepping all of your fresh ingredients -- removing the stems from the cilantro, juicing the limes, and slicing the green onions, shallots, and ginger. For the green onions, you're going to use the whole onion - the white bulb will be sliced and sautéed while the green part will be sliced and served as garnish. For the ginger, it's easiest to peel with a carot peeler, then slice into smaller pieces to add to a food processor to mince and/or slice thinly for the garnish. I have some great tips about ginger in the video below. Once you're ingredients are prepped, the recipe comes together really fast.
- Heat the oil in a medium sized sauté pan, then add the sliced white bulbs from the green onions, garlic, and minced ginger and sauté until translucent.
- Next, add the pork or chicken and cook thoroughly. When it's about half way done cooking, add the fish sauce and half the lime juice. Save the other half cup.
- Once the pork is done cooking, add it to a large mixing bowl, pour the remaining lime juice on top and stir together.
