A beautiful alternative to cranberry sauce! I learned this recipe from a German chef at a private party. The blend of onions and blueberries will amaze you. It's a guaranteed winner -- I don't know how many people I've passed this on to, but you CAN'T GO WRONG!

1 large onion, chopped
1 kg frozen blueberries
1/2 cup sugar
1/2 cup butter

Steps:

  • Mix the onion and blueberries in a large saucepan over medium heat until it comes to a boil.
  • Add butter and sugar.
  • Let it simmer while stirring occasionally for at least a half hour, or until the entire mixture is soft and well blended.
  • OPTIONAL: add more butter to taste.
  • Serve it HOT with a pork/beef/bison roast that's thinly sliced.
  • Freeze the leftovers because you'll have enough left to have this tasty sauce for a few more meals.

3/4 to 1 pound pork tenderloin
2 tablespoons butter, divided
2 medium onions, sliced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons sugar
1/4 cup port wine or sweet sherry
2 tablespoons balsamic vinegar
1 cup fresh or frozen blueberries
1 cup chopped cherry tomatoes

Steps:

  • Preheat broiler. Broil pork, turning occasionally until cooked through, about 20 minutes. Remove to a platter; cover to keep warm.
  • Meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add onions, salt and pepper; cook until onions are golden, about 10 minutes. Add sugar; cook until onions are caramelized, 3 minutes longer. Add port, balsamic, blueberries and tomatoes and bring to a boil. Remove from heat. Thinly slice pork and serve with sauce.

2 cups fresh or frozen blueberries
¼ cup water
1 cup orange juice
¾ cup white sugar
¼ cup cold water
3 tablespoons cornstarch
½ teaspoon almond extract
⅛ teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
  • In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

1/4 cup plus 1 tablespoon extra-virgin olive oil
1 large Vidalia onion (about 1 pound), sliced
1 fresh thyme sprig
1 small bay leaf
Kosher salt and freshly ground black pepper
1/2 cup vegetable stock, plus more if needed

Steps:

  • Put a pot over medium heat and coat with the 1 tablespoon oil. When the oil is hot, add the onion, thyme, and bay leaf; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook and stir for 5 minutes, or until fragrant, but do not let the onion brown. Pour in the stock and bring to a simmer, then cover the pan and reduce the heat to low. Cook gently for 30 minutes, checking periodically to make sure the liquid has not completely evaporated and the onion is soupy; add a little stock if needed to keep the onion moist.
  • Remove the thyme and bay leaf. Transfer the onion to a blender and pulse until slightly chunky. Add the remaining 1/4 cup oil and puree until the sauce is thick and creamy. Season with salt and pepper. The onion sauce can be cooled, covered, and refrigerated for up to 1 day. Reheat gently before serving.

1 tablespoon minced onion flakes
2 1/2 teaspoons Dijon mustard
2 1/2 teaspoons mustard powder
3/4 teaspoon celery salt
3/4 teaspoon fresh onion juice (use a garlic press)
3/4 teaspoon poppy seed
1/2 teaspoon onion salt
1/4 teaspoon garlic salt (plus 1/8 teaspoon)
1/4 teaspoon paprika (plus 1/8 teaspoon)
1/4 teaspoon black pepper (plus 1/8 teaspoon)
1 -2 drop sesame oil

Steps:
