These are famous sweet Filipino snacks sold in sidewalks. Very simple to make and a traditional comfort food for many households. Basics would just be the bananas, sugar and wrapper but adding the jack fruit makes all the difference and is preferred by most. Note: There are different types of spring roll wrappers. Get the non-translucent ones, if ever.

6 plantains, ripe and each cut lengthwise
12 spring roll wrappers, non-translucent or 12 egg roll wrappers or lumpia skins
3/4 cup dark brown sugar
6 slices jackfruit, cut lengthwise (optional)
1 teaspoon cinnamon (optional)
1/4 cup water
1 teaspoon starch
1 cup oil, for deep frying

Steps:

  • place a sliced banana 1 1/2 inch from the bottom edge of a spring roll wrapper, sprinkle it with some sugar and cinnamon, and top it with a sliced jack fruit.
  • seal the sides and roll the wrapper, sealing the top as well with water/starch mixture.
  • In the meantime, heat oil in non-stick wok(so sugar doesn't stick) until it's sizzling hot with the leftover sugar and fry the wrapped bananas until it's golden brown, spooning (or use spatula) the sugar from the pan on the wrapper to give it a bit of caramelized coating.
  • Drain on paper towels or sieve.
  • Serve while still warm and the wrapper's crunchy.

2 tablespoons butter
1 tablespoon brown sugar
2 bananas, cut on the bias, 1/4-inch thick
1 cup sour cream
1 tablespoon confectioners' sugar
4 crepes, recipe follows
1/2 cup toasted slivered almonds
Sweet crepes
3/4 cup cold water
3/4 cup cold milk
3 large eggs
1 tablespoon sugar
Pinch salt
1 1/2 cups flour
5 tablespoons melted butter

Steps:

  • In a saute pan over medium heat, melt butter and add brown sugar. Add the banana pieces and allow to brown on both sides.
  • In a small bowl combine the sour cream and the confectioners' sugar.
  • To assemble, place crepe on plate and thinly spread with banana mixture. Thinly spread dollop of sour cream mixture and sprinkle with toasted almonds. Wrap crepe tightly to create rolled layers. Dust with confectioners' sugar and sprinkle with crushed toasted almonds.
  • In a blender place water, milk and eggs and mix. Add sugar, salt, flour and butter. Mix until smooth. Let batter rest for 30 minutes.
  • Heat a seasoned crepe pan over medium heat. Ladle 1-ounce batter into pan and angle pan so that batter spreads to edges of pan. Let cook about 45 seconds and turn over. Cook about 30 seconds more. Remove to cool. Stack between sheets of waxed paper.

  • Dissolve yeast in warm milk with 2 tablespoons of sugar. Let stand for 10 minutes until the mixture is foamy.
  • In a stand mixer (see notes for doing this without a stand mixer), using either the paddle attachment or dough hook. Mix in the yeast mixture with the remaining sugar. Then add in the eggs, butter, salt, vanilla, and mashed bananas.
  • Add in flour and knead into a large ball. The dough will be very soft and sticky, just keep scraping down the sides, and knead for a few minutes.
  • Place dough ball in a large greased bowl. Cover bowl in plastic wrap and let rise in a warm place for 1 hour, dough should have doubled in size.

  • DOUGH: In a large mixing bowl, heat the almond milk and vegan butter in the microwave in 30 sec increments (or heat over medium heat in a large sauce pan), until warm and melted (never reaching boiling). Let cool to 110 degrees (43 C) - the temperature of bath water. It should be warm but not too hot or it will kill the yeast. (If you used a saucepan to heat the milk, transfer to a large mixing bowl now.)
  • Sprinkle on yeast and let activate for 10 minutes. Then add sugar and salt and stir. Next, add in mashed ripe banana and stir. Add flour 1/2 cup at a time, stirring as you go. The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so, adding flour as needed, until it forms a loose but still springy ball. Only use as much flour as it will take.
  • Rinse out your mixing bowl, coat it with avocado or olive oil, and add your dough ball back in seam side down. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size (see photo) - mine only took 40 minutes.
  • FILLING: On a lightly floured surface, roll out the dough into a long rectangle ~1/4 inch thick (the dough should measure roughly 12 x 20 inches). Brush with melted vegan butter and top with cane sugar (I used a little brown sugar mixed in with the cane sugar) and 1/2 - 1 Tbsp cinnamon (up to preference // amount as original recipe is written // adjust if altering batch size). Then add banana slices so it's easy to roll, and walnuts.
