2/3 cup quick-cooking oats
1/2 cup crushed Ritz crackers
2 large eggs, lightly beaten
1 can (5 ounces) evaporated milk
1 tablespoon dried minced onion
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon honey
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
SAUCE:
1/3 cup packed brown sugar
1/3 cup honey
1/3 cup orange marmalade
2 tablespoons cornstarch
2 tablespoons soy sauce
1 to 2 tablespoons Louisiana-style hot sauce
1 tablespoon Worcestershire sauce

Steps:

  • Preheat air fryer to 380°. In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., In batches, arrange meatballs in a single layer on greased tray in air-fryer basket. Cook until lightly browned and cooked through, 12-15 minutes. Meanwhile, in a small saucepan, combine sauce ingredients. Cook and stir over medium heat until thickened. Serve with meatballs.

After cooking meatballs in the air fryer, I will never bake them in the oven again. The insides stay nice and tender while the outsides get a slight crisp on them. The best part is that you can make them ahead of time and freeze for later use. I have included those directions in the notes. Dip meatballs in marinara, if desired.

16 ounces lean ground beef
4 ounces ground pork
1 teaspoon Italian seasoning
½ teaspoon salt
2 cloves garlic, minced
1 egg
½ cup grated Parmesan cheese
⅓ cup Italian seasoned bread crumbs

Steps:

  • Preheat the air fryer to 350 degrees F (175 degrees C).
  • Combine beef, pork, Italian seasoning, salt, garlic, egg, Parmesan cheese, and bread crumbs in a large bowl. Mix well until evenly combined. Form into 16 equally-sized meatballs using an ice cream scoop and place on a baking sheet.
  • Place 1/2 of the meatballs in the basket of the air fryer and cook 8 minutes. Shake the basket and cook 2 minutes more. Transfer to a serving plate and let rest for 5 minutes. Repeat with remaining meatballs.

Steps:

  • Preheat the oven to 375 degrees F and line 4 baking sheets with Reynolds® NonStick Aluminum Foil (dull side up).
  • Combine the meat with all other meatball ingredients and form into about 80 bite-size meatballs. Place 20 meatballs on each pan, and bake for 35 minutes or until browned all the way through.
  • While the meatballs are baking, pour the barbecue sauce and the grape jelly into a sauce pan and heat over medium until they are well combined. If you want your meatballs to have a little extra kick, add some hot sauce to the mix. Once the meatballs are finished, you can slide them right off the pan and into your serving dish. Pour your sauce on top and serve immediately. The finished dish does well in the microwave if you are taking it to a party and need to reheat it.

Steps:

  • Soak the bread in the milk in a medium bowl for 5 minutes. Squeeze out excess milk and tear the bread into bite-size pieces. Return the bread to the bowl.   • Mix this mixture with tomato products in a medium saucepan. Heat on medium high for 5 minutes or until simmering.
  • Place chicken meatballs into sauce and let simmer uncovered for 30 minutes. Serve as side, appetizer or on a bun as a sandwich.

2 tablespoons Dijon mustard
1 (16 ounce) package frozen bite-size meatballs, thawed

Steps:

  • Preheat oven to 350 degrees; lightly grease a 13x9-inch baking dish.
  • In medium saucepan, combine chili sauce, jelly and mustard; cook over low heat until jelly is melted and mixture is smooth.
