2 sticks butter
3 large onions, thinly sliced
1 pound chicken livers, rinsed, dried, and trimmed of any connective tissues
8 slices sprouted wheat bread or pumpernickel bread
About 1 teaspoon salt, 1/2 palm full
1/2 teaspoon black pepper, eyeball it
1/2 teaspoon ground thyme, eyeball it
1 small jar cornichons or baby sweet gherkins
2 shallots, finely chopped
1/2 cup grainy Dijon mustard
1/4 cup capers, drained

Steps:

  • Preheat oven to 400 degrees F.
  • In a large skillet, melt butter over medium heat. Add onions and sweat them 15 minutes; - do not let brown. Once the onions are sweet and tender, add livers and raise heat just a bit. Cook until livers are firm and cooked through, another 5 to 6 minutes.
  • While livers cook, place bread on a cookie sheet and bake in oven to dry out and toast, 5 to 6 minutes. Cut toasted bread slices corner to corner. Pile toast triangles into a bread basket.
  • Combine salt, pepper and thyme and sprinkle over the livers and onions. Place mixture in food processor in batches and grind into smooth spread. Transfer to a serving bowl.
  • Fill ramekins or other small dishes with cornichons, shallots, mustard, and capers and arrange around the warm spread and toast basket.

I love this pate! This recipe makes quite a bit so it's great for parties or potlucks. Serve with baguette slices.

2 teaspoons butter
3 green onions, including tops,thinly sliced
1 lb chicken liver
1/2 cup dry red wine
1/4 teaspoon salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
2 tablespoons chopped parsley
1 cup butter, diced,at room temperature
additional chopped parsley

Steps:

  • In a wide frying pan, melt the 2 tsp butter over medium-high heat; add green onions, cook, stirring, until limp.
  • Add chicken livers; cook, turning, until browned.
  • Stir in wine, salt, thyme and pepper; reduce heat and simmer, uncovered, for 3 minutes.
  • Add the 2 T parsley.
  • Transfer mixture to a food processor and whirl until smooth; with motor running, drop in butter pieces, a few at a time, and whirl until well combined.
  • Cover and refrigerate for at least 3 hours or for up to 4 days.
  • Garnish with additional parsley, if desired.

This method of preparing the pate is new to me but since I love chicken livers - we tried it anyway. We were very pleasantly surpirsed! Served with pita chips, cocktail rye or any other crackers it is wonderful! Who needs crackers - it tasted awesome! The chicken livers are briefly simmered in water with aromatics before they're blended with butter in a food processor. If you have the opportunity to choose, shop for paler chicken livers; they tend to have a mellower, richer flavor than deep-red ones." Thinking about serving this for Passover, it will be a change; however, haven't decided yet - perhaps I'll stick with my old recipe!

1/2 lb chicken liver, well-trimmed
1/2 small onion, thinly sliced
1 small garlic clove, smashed and peeled
1 bay leaf
1/4 teaspoon thyme leaves
kosher salt
1/2 cup water
3/4 cup unsalted butter, at room temperature (we used less) or 1 1/2 sticks unsalted margarine (we used less)
2 teaspoons cognac or 2 teaspoons Scotch whisky
fresh ground pepper
toasted baguette, slices for serving

Steps:

  • In a medium saucepan, combine the chicken livers, onion, garlic, bay leaf, thyme and 1/2 teaspoon of salt.
  • Add the water and bring to a simmer; cover, reduce the heat to low and cook, stirring occasionally, until the livers are barely pink inside, about 3 minutes.
  • Remove from the heat and let stand, covered, for 5 minutes.
  • Discard the bay leaf.
  • Using a slotted spoon, transfer the livers, onion and garlic to a food processor; process until coarsely pureed.
  • With the machine on, add the butter, 2 tablespoons at a time, until incorporated.
  • Add the Cognac, season with salt and pepper and process until completely smooth.
  • Scrape the pâté into 2 or 3 large ramekins; press a piece of plastic wrap directly onto the surface of the pâté and refrigerate until firm.
  • Serve chilled.
  • Enjoy!

1 lb chicken liver (fresh & cleaned)
1 cup milk
1/2 cup cold unsalted butter (cut into pieces)
1 cup onion (chopped)
2 teaspoons garlic (minced)
2 tablespoons peppercorns (green if available & drained)
2 bay leaves
1 teaspoon thyme leaves (fresh)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup cognac (or brandy)

Steps:

  • Soak livers in milk for at least 2 hours and drain well.
  • Melt 4 tablespoons butter in a saute pan over medium heat.
  • Add onions and cook until soft (about 3 minutes).
  • Add garlic and cook for about 1 minute.
  • Add livers, 1 tablespoons peppercorns, bay leaves, thyme, salt & pepper.
  • Cook stirring until livers are brown on outside and pink inside (about 5 minutes).
  • Add cognac and cook until most of the liquid is gone.
  • Cool.
  • Discard bay leaves.
  • In food processor puree liver mixture.
  • Add remaining butter in pieces and pulsing to blend.
  • Fold in remaining tablespoon of green peppercorns and adjust seasonings to taste.
  • Pack in ramekins, cover and vacuum seal.
  • Refrigerate or freeze.

This chopped liver is is so easy, yet so simple to prepare. My family always looks forward to Passover dinner, because they know I'll be serving it with matzo crackers. It's also delicious on bagels the rest of the year. The pinch of sugar keeps the liver from having any bitter taste and makes such a difference when you use it.

1 lb chicken liver, rinsed, membranes removed
2 large onions, chopped
2 tablespoons canola oil
salt
1 pinch sugar
2 hard-boiled eggs, chopped

Steps:

  • In a frying pan, heat oil. Add onions and sautee until golden brown. Remove to a plate. Add chicken livers to pan and fry until completely cooked, and no longer wet. Remove to a plate and let onions and livers cool completely.
  • Once cool, place livers and onions together in a food processor. Process, until desired texture, taking care not to over process, as chopped liver should have a bit of texture.
  • Place mixture in a bowl and add salt to taste, and a pinch of sugar. Add eggs and stir until blended.
  • Chill several hours before serving.
