3/4 cup teriyaki sauce, Lawry's brand

Steps:

  • Reserves 1/4 cup marinade.

3/4 cup soy sauce
1/3 cup water
1/3 cup brown sugar
3 garlic cloves, finely minced
2 teaspoons freshly grated ginger

1/3 cup of the reserved marinade
1/2 cup orange juice

  • If you are using wooden skewers, soak them in water for at least 60 minutes.
  • Combine the soy sauce, water, brown sugar, garlic, and ginger.

1/3 cup ketchup (low sugar)
1/4 cup honey
1/3 cup low-sodium soy sauce
1/4 cup orange or pineapple juice
4 Tbsp olive oil (divided, plus more for brushing grill)
1 1/2 Tbsp rice vinegar
3-4 garlic cloves (minced)
1 Tbsp minced ginger
1 tsp sesame oil
Salt and freshly ground black pepper
1 3/4 lb boneless (skinless chicken breast, chopped into 1 1/4-inch cube)
3 cups fresh cubed pineapple (about 3/4 of 3 lb pineapple)
1 1/2 large red peppers (diced into 1 1/4-inch piece)
1 large red onion (diced into 1 1/4-inch piece)

Steps:

  • Soak 10 wooden skewer sticks in the water for about 1 hour.
  • In a large mixing bowl, add all marinade ingredients. Whisk until well combined.
  • Place the chicken breast into a large Ziploc bag or in an air-tight container. Reserve 1/2 cup of the marinade for brushing and pour the rest over the chicken.
  • Seal the bag and gently move the chicken around until evenly coated. Refrigerate and let marinate for at least an hour.
  • Meanwhile cut the pineapple, pepper, and onion into cubes. Drizzle remaining 2 tablespoons of olive oil over the veggies.

For the Kabobs:
2 lbs boneless skinless chicken breast cut into bite-size pieces. ( about 1/2 inches)
2 bell peppers (choose your favorite colors!)
1 red onion
2 cups cubed fresh pineapple
Marinade:
Juice of 1 Lemon
Juice of 1 medium-sized orange
1/2 cup brown sugar
1/2 cup tamari soy sauce
1/3 cup olive oil
2 cloves of garlic minced

Steps:

  • Whisk together ingredients for the marinade. Reserve 1 cup for later use.
  • Add cut chicken pieces remaining marinade to a gallon-sized zip-top bag. Refrigerate for up to two hours. (or prep this part the night before)
  • Preheat oven to 450° Fahrenheit.
  • Covering a baking sheet with aluminum foil and add a oven-safe baking rack. Sprits rack with non-stick cooking spray.
  • Cute onion, peppers, and pineapple into bite-sized pieces, around 1½ inches.
  • Add chicken pieces, pineapple, peppers, and onions to skewers alternating as you go.
  • Lay Kabobs on the prepared baking rack and spritz with a little olive oil or canola oil spray.
  • Bake for 25 minutes turning halfway through.
  • While kabobs are baking add remaining marinade to a small saucepan and cook over medium heat. Bring to a simmer and stir often to prevent burning. Reduce the marinade for around 8 minutes as it simmers. Remove from heat.
  • After Kabobs have baked for 25 minutes remove from oven. Turn oven to broil setting. Baste kabobs with reduced marinade and return to oven for 5 minutes. Watch carefully as you only want to caramelize the marinade a bit not scorch the kabobs.
  • After 5 minutes or when you see the color of browning you like, remove kabobs from the oven, and let rest for 5 minutes.
  • Serve over rice or with a big green salad!

2 cans (one 20 ounces, one 8 ounces) unsweetened pineapple chunks
1/3 cup Worcestershire sauce
8 boneless skinless chicken breast halves (4 ounces each)
1 package (1 pound) sliced bacon
2 large sweet onions
4 large green peppers
32 cherry tomatoes

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small bowl, combine Worcestershire sauce and reserved juice. Cut each piece of chicken into four strips. Pour 1 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. Cover and refrigerate remaining marinade for basting. , In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; cut in half widthwise. Cut each onion into 16 wedges; cut each pepper into eight pieces. Drain and discard marinade. 16 wooden skewers, soaked in water for 30 minutes
Extra-virgin olive oil, for brushing
Kosher salt and freshly ground black pepper

Steps:

  • In a saucepan over medium heat, add the ketchup, soy sauce, honey, mustard, sugar, garlic, and lemon juice. Bring to a simmer and cook gently until thickened, about 10 minutes. Set aside and cool.
  • Heat an outdoor grill or a grill pan. Cut each chicken thigh into 2 pieces. Peel the pineapple and cut it into 1 1/2-inch chunks.
