SAUSAGE BITES WITH SWEET & SOUR DIPPING SAUCE
Sausage Bites with Sweet & Sour Dipping Sauce ~ delicious bite-size appetizers you can easily bake, make ahead and reheat just minutes before guests arrive. Super quick and perfect to serve at your next party!

Steps:
- Remove the sausages from the package and allow them to warm up to room temperature for a few minutes.
- Preheat oven to 400 F degrees.
- Layer a baking pan with aluminum foil or parchment paper.
- Place the sausages in a single layer on the prepared baking pan, but separate them, should not be touching.
- Take a fork and lightly prick each one a few times, about 3 times in each link.
- Bake sausages for 25 - 30 minutes, until they are fully brown and cooked through.
- Remove from the oven. Use a fork and sharp knife to slice them into 4 equal parts.
- In a small saucepan, and on low heat, stir Teriyaki Marinade & Sauce with light brown sugar, ketchup, and vinegar, until the sugar is fully dissolved and allow the sauce to thicken a little, about 2 minutes. Turn off heat.
- Drop a few already cooked sausage bites (in small batches) into the heated sauce to coat them. Pick up each sausage bite (allowing the excess sauce to drip back into the pan) and place it onto a serving platter. Place toothpicks into each one. Garnish with a sprinkle on top with dried or fresh chopped chives and serve. If you need more dipping sauce, repeat the ingredients and heat up the additional sauce.
- Serve warm with extra dipping sauce on the side.

- In a large skillet, cook sausage until a thermometer reads 160° drain. When cool enough to handle, cut into bite-size pieces; set aside. , Combine the sugar, cornstarch, water, vinegar and ketchup; add to skillet. Bring to a boil. Reduce heat; cook for 2 minutes or until thickened. Add pineapple and sausage; heat through. Serve with rice.

SWEET AND SOUR SAUSAGE BALLS
I was at a church yard sale and they were selling their cookbook. I have made this recipe several times and it's a hit. Thanks to the Grace Lutheran Church of Wenatchee, WA and Bonnie Landes who submitted to her church for the cookbook. You can certainly cut this recipe in half. Also these freeze well.

- Mix together sausage, eggs, and bread crumbs. Shape mixture into walnut-sized balls. Saute in frying pan until browned on all sides. Drain.
- Combine catsup, brown sugar, vinegar, and soy sauce. Pour over sausage balls and simmer for 30 minutes, stirring occasionally. Serve hot (I put them in a crock pot to keep them hot).
- If made ahead, refrigerate or freeze sausage balls in sauce. Reheat in a 350* oven for 20 minutes. Makes 150 balls-recipe can be cut in half.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking sheet.
- In a large bowl, thoroughly mix the ground beef, eggs, bread crumbs and onion. Sprinkle with ginger, seasoning salt, pepper, Worcestershire sauce and sugar. Shape into one inch balls.
- Place meatballs in a single layer on prepared baking sheet. Bake in preheated oven for 10 to 15 minutes; set aside.
- To make the sauce, mix enough water with the reserved pineapple juice to make 1 cup. In a large pot over medium heat, combine the juice mixture, 1/3 cup water, vinegar, soy sauce, and brown sugar. Stir in cornstarch, ginger and seasoning salt, until smooth. Cover and cook until thickened.
- Stir pineapple chunks, carrot, green pepper and meatballs into the sauce. Gently stir to coat the meatballs with the sauce. Simmer, uncovered, for about 20 minutes, or until meatballs are thoroughly cooked.

- Roll sausage into 100 very small balls using no more than 1 1/2 teaspoons meat per ball.
- Stir red wine vinegar, ketchup, brown sugar, soy sauce, and ground ginger together in a large saucepan over medium heat; bring to a simmer, reduce heat to low, and cook at a simmer until beginning to thicken, about 15 minutes.
- Heat a skillet over medium heat. Fry sausage balls in batches in the hot skillet until browned on all sides and no longer pink in the center, 3 to 5 minutes per batch. Remove cooked sausage balls with a slotted spoon to the saucepan and stir into the sauce to coat.
