SWEET TEA QUICK PICKLES



Sweet Tea Quick Pickles image

3/4 cup brewed sweet tea
1/2 cup distilled white vinegar
2 tablespoons honey
1 tablespoon dried chives
1 teaspoon celery seeds
1 teaspoon kosher salt
One 16-ounce jar hot banana peppers
6 ounces fresh green beans, trimmed
3 mini cucumbers

Steps:

  • Place a saucepan over medium-high heat. Pour in the sweet tea, white vinegar, honey, dried chives, celery seeds, salt and brine from the banana peppers (reserve the banana peppers, refrigerated, until ready to serve). Heat until just boiling and the honey has dissolved, about 4 minutes.
  • Place the green beans in a heatproof dish or container. Slice the mini cucumbers into 8 spears each and add to the green beans. Pour the hot brine over the vegetables and set aside for at least 20 minutes.
  • Allow the pickles to cool completely before serving or storing in an airtight container. Serve with the banana peppers.

We love dilly beans, but using a sweet brine and dried chile peppers gives pickled green beans a unique twist.

2 pounds green beans, stem ends trimmed (about 9 cups)
6-18 small whole dried chile peppers
3 cups distilled white vinegar or cider vinegar
3 cups water
1 ½ cups sugar
1 tablespoon plus 1 teaspoon sea salt

Steps:

  • Place a large bowl of ice water next to the stove. Bring a large pot of water to a boil in a large pot. Add half of the green beans, cover, return to a boil and cook for 2 minutes. Use a slotted spoon to transfer the beans to the ice water to cool. Repeat with the remaining beans.
  • Drain the cooled beans and divide among 6 pint-size (2-cup) canning jars or similar-size tempered-glass or heatproof-plastic containers with lids. Add 1 to 3 chile peppers to each jar.
  • Combine vinegar, 3 cups water, sugar and salt in a large saucepan. Bring to a boil and stir until the sugar and salt dissolve. Boil for 2 minutes. Remove from the heat.
  • Carefully fill jars (or containers) with brine to within 1/2 inch of the rim, covering the beans completely. (Discard any leftover brine.)
  • Place the lids on the jars (or containers). Refrigerate for at least 24 hours before serving. Store in the refrigerator for up to 1 month.

1 teaspoon cayenne pepper
4 garlic cloves, peeled
4 teaspoons dill seed or 4 fresh dill heads
2-1/2 cups water
2-1/2 cups white vinegar
1/4 cup canning salt

Steps:

  • Pack beans into four hot 1-pint jars to within 1/2 in. of the top. Add the cayenne, garlic and dill seed to jars., In a large saucepan, bring the water, vinegar and salt to a boil. , Carefully ladle hot mixture over beans, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

1 1/2 cups water
1 teaspoon pickling salt
1 tablespoon agave syrup or 1 tablespoon honey
2 cups vinegar, 5% acidity
1/2 teaspoon mustard seeds
1/2 teaspoon dill seed
1/2 teaspoon coriander seed
bay leaf
2 teaspoons whole black peppercorns
1 chile, sliced in 8 long strips
6 garlic cloves, peeled
1 1/2 lbs string beans, trimmed
1 teaspoon salt

Steps:

  • In a small saucepan, over high heat, bring the first 9 ingredients to a boil, then turn off the heat, stirring until dissolved. Add the chilies and garlic. Remove from heat.
  • Wash and trim the green beans. Bring a large pot of water with the 1 teaspoon salt to a boil over medium heat. Add the beans. Cook until the beans begin to turn bright green and are just tender, about 3 to 4 minutes. Remove from heat and drain. Rinse immediately with cold water and put them in an ice bath for 10 minutes. Drain well.
  • Pack beans in sterilized jars then cover with the vinegar mixture.
  • Place lids and caps on cleaned rimmed jars.
  • Process in a hot water bath for 5 minutes, remove and cool in a draft free spot for 24 hours.
  • You can also put them in sterilized jars and refrigerate instead of doing the canning process. Let flavors meld for 1 week. Just keep under refrigeration and eat within 1 month.
  • I canned 2 jars and the 3rd was what I had left over for munching which was refrigerated.

This lightly spicy pickle recipe can be made with green or wax beans and is ready to eat in just 24 hours.

2 pounds green beans (or wax beans)
1 1/4 cups water
1/3 cup white wine (or cider vinegar)
1 1/2 tablespoons salt ( kosher , sea, or other coarse non-iodized salt)
1 tablespoon honey
2 sprigs fresh dill leaves or 1 teaspoon dried dill weed (divided)
2 small cloves garlic (peeled)
2 bay leaves
1 teaspoon whole mustard seeds (divided)
1/2 teaspoon whole cumin seeds (divided)

Steps:

  • Gather the ingredients.
  • Wash the green beans. Snap or cut off the stem ends and tips. Trim all of the beans so that they will fit into pint jars with at least 1/2-inch head room between the top of the vegetables and the rims of the jars.
  • Divide the dill, garlic, bay leaves, mustard seeds, cumin seeds and pepper flakes (if using) between two glass pint jars. It is not necessary to sterilize the jars for this recipe, but they should be scrupulously clean.
  • Place one of the jars on its side and start laying in the green beans. It's easier to get them to stay lined up straight if you slide them in sideways rather than loading an upright jar from above. Pack the green beans in so tightly that it is impossible to squeeze in even one more bean. If they are loosely packed they will float up out of the brine, and you want them to stay fully immersed in the brine during the pickling process.
  • Bring the water, vinegar, honey, and salt to boil in a small pot, stirring to dissolve the honey and salt. Skim off any foam and discard.
  • Pour the hot brine over the green beans and seasonings.
  • Tightly cover and store in the refrigerator.

2 pounds green beans
1/4 cup canning salt
2 1/2 cups vinegar
2 1/2 cups water
1 teaspoon cayenne pepper, divided
4 cloves garlic
4 heads dill
1-2 teaspoons mustard seeds and red pepper flakes, optional

Steps:

  • Prepare your canner, jars, lids, funnel, tongs, chopstick or thin plastic spatula (for removing air bubbles) and gather your ingredients.
  • Trim ends off green beans so they fit neatly into a jar.
  • Make your pickling brine by combining salt, vinegar and water in a large stockpot. Bring to a boil.
  • Add 1/4 teaspoon cayenne pepper, 1 clove garlic and 1 head dill to each pint jar. I like to put the garlic and cayenne in the bottom and stuff the dill in at the top.
  • Pack beans lengthwise into hot jars, leaving 1/4 inch headspace. Ladle hot brine over beans, leaving 1/4 inch headspace. Remove air bubbles with a wooden chopstick or thin plastic spatula.
  • Wipe rims clean with damp cloth. Screw on two piece lids. Process pints and quarts 10 minutes in a boiling water bath canner. When processing time is finished, remove jars from canner and place onto a towel on the counter top to cool completely.
  • Remove rings, wipe up any spills. Label with date and contents and store in a cool, dry location out of direct sunlight.

Spicy Pickled Green Beans are not difficult to make and are great with a Bloody Mary or a Caesar! They also go perfectly with any charcuterie board or simply as a snack right out of the jar!

BRINE
1 cup rice vinegar
3 cups white vinegar
2 cups water
3 Tbsp. pickling salt
PER JAR
2 dill heads
1 large clove garlic, halved
1/4 tsp. black peppercorns
1/4 tsp. mustard seed
1/4 tsp. celery seed
1/4 tsp. red pepper flakes
8 cups green beans, cleaned and ends snipped if necessary

Steps:

  • Prepare your jars by washing them in warm, soapy water or run them through the dishwasher. Submerge them in hot simmering water until ready to use. Always use new snap lids and wash them also in warm, soapy water. Leave them in a bowl of hot water until ready to use. In a large saucepan add in the vinegars, water and salt and bring to a boil. Stir to dissolve the salt. In each jar add in the dill heads, garlic, peppercorns, mustard seed, celery seed and red pepper flakes. Pack in green beans as tightly as possible. Pour in hot brine and leave 1/2" head space. Remove any bubbles carefully with a knife. Wipe top and place lid and screw the band on fingertip tight only. Process in a water bath for 10 min. or as per altitude.

Quick Refrigerator Pickled Beans image

A quick and easy recipe for Refrigerator Pickled Beans. Great for snacking, as a side, or as a garnish for Caesar or Bloody Mary cocktails.

Number Of Ingredients 10

2 cups green beans ((fresh) enough to completely fill a 16 oz. Mason jar: about 2 cups, stems removed)
1 cup vinegar, (white or apple cider)
1 cup water
2 tsp sugar
1 - 2 cloves minced garlic , (OR 1 to 2 tablespoons minced garlic scapes)
1 ½ tsp coarse sea salt
2 - 3 sprigs fresh dill
1 slice small onion
½ tsp whole black peppercorns
¼ to 1 tsp red pepper flakes, (depending on how hot you want them)

Steps:

  • Make the brine first, as it needs to cool. Combine the vinegar, water, sugar, salt and garlic in a small saucepan and heat to boiling. Remove from heat and let cool.
  • Prepare the beans. Wash the beans and remove the stems but leave the tip on. Use the straightest ones, then fill the jar so you know exactly how many to use.
  • Remove them from the jar and trim the bunch all at once with a sharp knife so that they will fit in the jar with about 1/2 inch of headroom.
  • Blanch and shock the beans to preserve their colour and crispness. Bring a pot of water to a boil, then add the beans and boil for 30 seconds. Remove the beans and immediately plunge into an ice bath (a large bowl filled with ice and water) to stop the cooking. Drain and set aside.
  • Sterilize the jar and lid by washing in hot soapy water, rinsing thoroughly and pouring boiling water over all. Let it stand for a few minutes.
  • Fill the jar with the beans. Add the peppercorns, onion slice, red pepper flakes, and fresh dill. Carefully pour the cooled brine over top so that the beans are completely covered. Put the lid on tightly. Store in the refrigerator. Allow the flavours to develop for at least 2 days.
  • These will last for about 2 weeks in the refrigerator.

1 cup white vinegar
1/2 cup water

Steps:

  • Fit as many green beans and carrots as you can into a jar, vertically.
  • Add the garlic and bay leaf to the jar, using a chopstick or something similar to slide them down the sides of the jar.
  • Add oregano, thyme, cayenne pepper, celery seed, and peppercorns directly to the jar.
  • Bring vinegar, water, sugar, and salt to a boil in a small saucepan to make a brine, stirring to make sure sugar and salt are dissolved.
  • Pour brine over vegetables in jar, making sure to cover all the vegetables and fill to the top.
  • Allow jar to cool, and keep in refrigerator for 6 months. These will taste best if you allow them to sit in the fridge at least overnight, and the flavor will intensify as time goes on.
