A recipe by Jean Anderson for the "From the Governor's Pantry" cookbook, Lind House Association in New Ulm, Minnesota, July 1988. The book is dedicated to the many volunteers who had donated their time, talents and money to restore the John Lind home. This recipe is one of Jean's family's favorite holiday recipes. It comes for her husband's grandma of Swedish descent. Also, she likes to sour her cream and let it stand on the counter for 3 to 4 days before using. She writes, "I think the flavor is better!"

4 cups white flour
1/2 cup sugar
2 tablespoons sugar
1 teaspoon baking soda
salt
1 pint sour cream (whipping cream, soured)

Steps:

  • Mix dry ingredients together.
  • Add the sour cream.
  • Dough will be really stiff.
  • Let stand 1 to 2 hours.
  • Roll out on cloth covered board, with lefse rolling pin (very thin and rolled in graham flour).
  • Bake on ungreased cookies sheets in 350 degree oven until lightly browned (5 minutes).

225 g stone ground whole wheat flour
225 g rye meal or 225 g barley flour
1 teaspoon salt
250 -350 ml tepid water

Steps:

  • Blend flours and salt together.
  • Mix in sufficient water to bind into a dough- the quantity will depend on the types of flour used.
  • Beat until the dough leaves the sides of the bowl, then turn on to a floured board and knead thoroughly.
  • Heat a griddle or frying pan over a moderate heat and grease it.
  • Divide the dough into four and roll out one quarter into a round as thin as possible.
  • Using a plate about 20 cm (8 inch) wide, trim the edges into a neat circle.
  • Prick all over to prevent the dough bubbling during cooking.
  • Transfer to the griddle or frying pan and cook over a moderate heat for about 15 minutes or until slightly coloured, then turn and cook the other side.
  • Repeat with the rest of the dough, working up the trimmings for re-rolling and baking.
  • Cool on a wire tray.

1 1/3 cups rye flour, whole wheat is fine
3/4 teaspoon sugar
1/4 teaspoon salt
4 tablespoons butter
1/3 cup milk, plus 1 T more if needed

Steps:

  • Combine flour, sugar and salt in mixing bowl or food processor and cut or pulse in butter.
  • Gradually add the milk with a spoon or pulse until you have a stiff dough.
  • On a lightly floured board roll out as thin as you can.
  • Cut dough into strips about 2"x3" and punch lots of small holes in each.
  • Bake at 300 on lightly greased pan until lightly browned- about 10 minutes.
  • Cool on wire rack then store at room temperature.
  • Will keep 5-7 days.

Number Of Ingredients 12

2 1/4 cups warm water (105°F. to 115°F.)
1 envelope dry yeast
6 1/2 cups (about) unbleached all purpose flour
1 cup rye flour
1/2 cup sugar
1/2 cup dark corn syrup
1/4 cup plus 2 tablespoons solid vegetable shortening, melted
2 teaspoons aniseed
1 1/2 teaspoons ground coriander
1 1/2 teaspoons grated orange peel
1/2 teaspoon salt
Melted butter

Steps:

  • Place 1/4 cup warm water in small bowl. Sprinkle yeast over; stir to dissolve. Let stand 5 minutes. Combine remaining 2 cups warm water, 1 cup all purpose flour and 1 cup rye flour in bowl. Add yeast mixture. Mix to blend well. Cover bowl with kitchen towel. Let sponge rise 1 hour.
  • Mix sugar, corn syrup, shortening, aniseed, coriander, orange peel and salt into sponge. Gradually mix in enough all purpose flour, 1/2 cup at a time, to form slightly sticky dough. Knead on floured surface until smooth and elastic, adding more flour if sticky, about 10 minutes.
  • Lightly oil large bowl. Add dough, turning to coat entire surface. Cover bowl with kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.
  • Grease 2 cookie sheets. Punch dough down. Turn out onto lightly floured surface and knead until smooth. Divide dough into 3 parts. Pat each piece into 5-inch-diameter round. Place on prepared sheets. Cover and let rise in warm draft-free area until almost doubled, about 40 minutes.
  • Preheat oven to 350°F. Pierce each loaf 5 times with fork. Bake until loaves are brown and sound hollow when tapped on bottom, about 1 hour. Transfer to racks. Brush with butter and cool. Serve warm or at room temperature. (Can be made 1 month ahead. Wrap loaves tightly and freeze. Thaw before serving.)

1 1/4 ounces yeast
1/4 cup warm water
1 tablespoon honey
1 1/3 cups warm milk
2 teaspoons salt
2 tablespoons softened butter
4 -5 cups unbleached white flour

Steps:

  • Sprinkle yeast on warm water. Add honey and set aside. In large bowl, mix warm milk, salt, butter and 2 cups of flour. Beat with mixer or wooden spoon until smooth. Gradually add rest of flour. Turn onto floured board and knead until all the flour is used and dough is not sticky. Invert bowl over dough and let rest 10 minutes.
  • Knead 8 to 10 minutes until smooth and elastic. Return dough to bowl and let rise about 1 hour. Punch down, divide in 2 parts. Butter 2 round pizza pans or cookie sheets. Roll dough to fit pans. Place in pans and press the edges with fingers to make it fit the pan. Prick all over with a fork.
  • Cover with damp cloth and let rise until doubled in thickness, about 30 minutes. Bake in a 350 degree oven for about 10 to 15 minutes until golden brown. Butter the top generously with melted butter as soon as it is removed from the oven. Cool slightly on a wire rack before serving.

  • Whisk bread flour, barley flour, yeast, salt and sugar together by hand in the bowl of a stand mixer.
  • Whisk water, skyr and 1 tablespoon oil in a small bowl until fully combined. Transfer wet ingredients into mixing bowl with dry ingredients.
  • Fit mixer with dough hook and begin mixing at medium-low speed until dough just comes together. Increase mixer speed to medium and knead dough for three minutes. Stop the mixer and add the chopped fresh herbs. If dough is sticking to the sides or the bottom after the first 3 minutes of kneading, add an additional tablespoon of bread flour before continuing the kneading process. Continue kneading at medium speed until the dough is tacky but not sticky and clears the bottom and sides of the bowl, approximately 3 more minutes. Add an additional tablespoon or two of bread flour if dough continues to stick to the sides or bottom of the bowl during the kneading process.
  • Transfer dough to an oiled bowl. Cover and let rise for an hour at room temperature or until doubled in size.
