- In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. - Preheat oven to 325 degrees F. Butter 8 1/2 x 4 1/2 x 2 1/2 loaf pan.
- Combine first 3 ingredients in small bowl.
- Using electric mixer, cream butter with 1 cup sugar in large bowl until mixture is light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Add lemon peel. Mix in dry ingredients alternatively with milk, beginning and ending with dry ingredients.
- Fold in blue berries.
- Spoon batter into prepared loaf pan.
- Bake until golden brown and toothpick inserted into center comes out clean, about 1 hour 15 minutes.
- Meanwhile, bring 1/3 cup sugar and lemon juice to boil in small saucepan, stirring until sugar dissolves.
- Pierce top of cake all over with toothpick. Pour hot lemon mixture over loaf in pan.
- Cool 30 minutes in pan on rack.
- Turn bread out of pan and cool completely on rack.

Update: I made this recipe as muffins and the muffins are best as 16 muffins baked for 30 minutes. If you make 12 muffins, the topping starts to spread off of the muffins!

- Preheat the oven to 375 degrees F.
- Grease a 9 x 5 loaf pan. (Grease very! well as there are so many blueberries that only half of the loaf may come out--it is still tasty, but not presentable!).
- Stir the topping ingredients together and set aside.
- In a medium-size bowl, cream the butter and sugar. Then mix in the egg. Mix in the milk and beat until mostly smooth.
- In another bowl, mix the flour with the baking powder and salt.
- Mix the dry ingredients into the wet ingredients.
- Fold in the blueberries and the lemon zest.
- Pour the batter into the loaf pan and sprinkle with topping.
- Bake until the topping is deep golden brown and has formed a thick crust--approximately 50 minutes.
- Cool in pan 5 minutes before transferring to a wire rack to finish cooling.

- Preheat oven to 350*F and line a 9"x 5" loaf pan with parchment paper (or lightly grease with butter).
- In a medium bowl, whisk the flour, baking powder and salt, and set aside.
- In the bowl of an electric mixer, blend together the melted butter, sugar, eggs, vanilla, lemon zest and lemon juice. Mix until well combined.
- While slowly mixing, add flour mixture and milk in two batches (some flour, then some milk, then the rest of the flour and the rest of the milk). Stop mixing as soon as it's just combined.
- Rinse off the blueberries (if using fresh) so they have just a bit of moisture on them, then, in a small bowl toss the blueberries and 1 T. flour. This flour coating will help prevent the blueberries from sinking to the bottom of your loaf while baking.
- Add the flour coated berries to the batter and gently but quickly stir, by hand, to combine.
- Immediately pour batter into prepared pan and bake for 55-65 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Cool bread in the pan for about 30 minutes, then move to a wire cooling rack with a baking sheet below (to catch the glaze you're about to add).
- Prepare glaze by simply whisking together the melted butter, powdered sugar, lemon juice and vanilla, then pour glaze over the loaf. Allow to set a few minutes, then enjoy!

BLUEBERRY LEMON CRUMB BREAD

- Preheat the oven to 350 degrees. Grease a 9 x 5 inch loaf pan.
- In a large mixing bowl, combine the sugar, oil, lemon zest, and juice until thoroughly combined. In another bowl or large measuring cup, beat together the buttermilk and eggs. In a third bowl, whisk together the salt, baking powder, poppy seeds, and 2 1/2 cups flour. With the mixer on low speed, add the dry ingredients to the sugar mixture in three additions, alternating with the buttermilk mixture and scraping the bowl as needed.
- Toss the blueberries with the 2 Tablespoons of flour then gently fold them into the batter. Pour the batter into the prepared pan.
- To make the crumbs, combine the flour, sugar, and melted butter in a measuring cup until fine crumbs form. Spread the crumbs on top of the batter.
- Bake for 50-65 minutes or until a toothpick inserted in the center of the bread comes out clean. Remove the bread from the oven and place it on a rack to cool for at least 10 minutes. To release, run a knife around the edge of the bread pan and turn it over onto a piece of parchment paper. A few of the crumbs may fall off. Don't worry about it! Just scoop them up and put them back on top.
- Meanwhile, make the glaze--in a measuring cup, whisk together the powdered sugar, lemon juice, and milk until the consistency is smooth and pourable (add more milk if needed). Pour the glaze over the cake and serve or allow to dry then cover with saran wrap and store for up to 3 days.

- Preheat oven to 350 degrees F. Grease a 9 by 5 inch loaf pan with butter.
- Combine the dry ingredients: in a large bowl, combine the 1 ¾ cups flour, baking powder, sugar, and salt. Set aside
- Combine the wet ingredients: In another bowl, mix the Greek yogurt, eggs, vanilla extract, vegetable oil, lemon zest, and lemon juice until evenly combined.
- Gradually mix the dry ingredients into the wet ingredients until just combined. There should be no pockets of flour. Don't overmix. The batter will be thick.
- In another bowl, toss the 1 ½ cup of blueberries and the remaining 1 tablespoon of flour to coat. Gently fold in the floured blueberries into the batter, leaving any excess flour behind.
- Pour the prepared batter into the prepared loaf pan. Then, top with a few blueberries (I used about 10 blueberries), gently pushing them down into the batter but letting them still be visible. This will make the bread look pretty.
- Bake for about 60-65 minutes, or until a toothpick inserted in the middle comes out clean. About 45 minutes into the baking time, cover with aluminum foil to prevent it from browning too fast. Tip: To prevent the bread from sinking in the middle, only open it once when you need to cover it with foil.
- Remove from oven, remove foil, and let it cool completely before slicing. Enjoy!

MEYER LEMON AND BLUEBERRY BREAD
YUMMY! I have not yet tried this recipe with regular lemons. But since most people do not have access to Meyer lemons, I am assuming regular lemons would make a decent sub. I would add an additional tablespoon of lemon zest though. Blackberries are also good with this bread. Enjoy.

- Preheat the oven to 350 degrees F. Grease a 4-by-8-by-2-inch loaf pan.
- Toss the blueberries in 2 tablespoons of the flour in a medium bowl and set aside.
- Beat together the butter, granulated sugar, eggs, lemon zest and lemon juice in the bowl of an electric mixer. Sift together the baking powder, 1 teaspoon salt and remaining 1 1/2 cups flour in a medium bowl. I love Trader Joe's Blueberry Lemon Bread so I was looking for a recipe that was similar. This what I came up with. Actually, I can't take all of the credit. I modified recipe #19254 for Glazed Lemon Cake slightly and added blueberries, then baked it in loaf pans. My whole family loves this bread. In fact, I think it's better than Trader Joe's Blueberry Lemon Bread....geez....I know, I am so modest ;-)

- Preheat oven to 325 degrees.
- Important: grease and flour two loaf pans.
- Cream butter and sugar.
- Add eggs and beat until smooth.
- Add buttermilk.
- Mix dry ingredients together and add to buttermilk mixture.
- Blend well.
- Mix in lemon juice and zest.
- Gently fold in blueberries and only mix until incorporated.
- Pour batter into loaf pans.
- Bake loaves on the middle rack of the oven for 60 to 65 minutes.
- Cool bread 10 minutes, remove from pan and place on a large cookie sheet, top side up.
- For icing: Combind icing ingredients in a bowl.
- Beat icing with an electric mixer until smooth.
- Drizzle icing over the warm loaves.
- The icing will harden when the bread cools to room temperature.
- I thought I should mention, if you make this bread without the addition of the blueberries, the baking time is closer to 50 minutes and I recommend increasing the amount of buttermilk from 2/3 cup to 1 cup.
