This is a nice alternative cole slaw recipe. If you don't have raspberry chardonnay vinegar, cider vinegar, white balsamic, or champagne vinegar will work, as well.

1 red onion, finely shredded
2 carrots, peeled and finely shredded
1 large fennel bulb, finely shredded
3 tablespoons finely chopped fresh parsley
1 ½ cups mayonnaise
¾ cup raspberry chardonnay vinegar
¾ cup white sugar
¼ cup vegetable oil
2 tablespoons dry mustard
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Mix cabbage, onion, carrot, fennel, and parsley in a large bowl.
  • Whisk mayonnaise, vinegar, sugar, oil, mustard, salt, and pepper together in a separate bowl; pour over cabbage mixture and toss to coat.
  • Cover bowl with plastic wrap and refrigerate until chilled, about 30 minutes.

2 tablespoons lemon juice

Steps:

  • In a medium bowl, whisk olive oil and lemon juice. Add fennel, onion, parsley and toss. Season with salt and black pepper to taste. Serve chilled and with the pork Panini.

1/3 cup mayonnaise
1/3 cup white wine vinegar
1/4 cup olive oil
1 tablespoon prepared horseradish
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

1/2 teaspoon Italian Seasoning, recipe follows
10 cups very thinly sliced green cabbage (about 1/2 large head)
4 scallions, thinly sliced
3 medium carrots, grated
1 large bulb fennel, trimmed, halved and sliced paper thin on a mandoline
3 tablespoons chopped fresh flat-leaf parsley
3 tablespoons dried basil
3 tablespoons dried marjoram
3 tablespoons dried oregano
3 tablespoons dried parsley
1 tablespoon granulated garlic
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes

Steps:

  • In a large bowl, whisk together the mayonnaise, vinegar, olive oil, horseradish, red pepper flakes, Italian seasoning, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cabbage, scallions, carrots, fennel and parsley; toss to coat. Season to taste with salt and pepper. Let stand in the refrigerator for 15 minutes before serving.
  • In a small bowl, mix together the basil, marjoram, oregano, parsley, granulated garlic, rosemary, thyme and red pepper flakes. Store in a jar with a tight-fitting lid.

The yogurt-based dressing also lightly coats everything without being too rich, like the mayo found more traditional coleslaw recipes.

1/2 cup plain whole-milk yogurt (not Greek)
1/4 cup sour cream
2 tablespoons rice wine vinegar
1/8 teaspoon garlic powder
Pinch of sugar

6 cups shredded napa cabbage
1/2 small bulb fennel, thinly sliced, plus 1/4 cup fronds, chopped
2 Persian cucumbers, halved crosswise and cut into matchsticks
1/2 large red bell pepper, thinly sliced
1/2 cup chopped fresh parsley
1/4 cup chopped fresh chives

Steps:

  • Whisk the yogurt, sour cream, vinegar, garlic powder and sugar in a large bowl until combined. Season with 1 teaspoon salt and a few grinds of pepper. Add the cabbage, fennel and fronds, cucumbers, bell pepper, parsley and chives, then toss to combine.
  • Cover the slaw and refrigerate until the vegetables have softened, 1 to 2 hours. Toss again and season with salt and pepper.

75ml extra virgin olive oil
1 large orange, zested and juiced
1 tbsp red wine vinegar
2 tsp grated ginger
1 red chilli, deseeded and finely chopped
1 large fennel bulb, finely sliced
4 spring onions or 1 small bunch of chives, finely sliced
2 large carrots, coarsely grated
1 small red cabbage, finely sliced
1 pomegranate
30g chopped walnuts, toasted
small bunch of flat-leaf parsley, chopped

Steps:

  • Whisk the oil, orange zest and juice, the vinegar, ginger and chilli together in a large bowl with some seasoning. Add the fennel, spring onions or chives, carrots and cabbage, and toss well in the dressing.
  • Just before serving, cut the pomegranate in half and press the seeds out into the bowl, so the juices also run into the bowl. Lightly toss again, season, and serve with the walnuts and parsley scattered over.

4 pork chops , trimmed of fat
zest and juice 1 lemon
1 tsp fennel seeds
0.5 tbsp olive oil
1 large fennel bulb , finely sliced
1 red apple , cored and sliced
1 small red onion , finely sliced
2 tbsp mayonnaise and 1 tbsp natural yogurt, mixed together
50g chopped walnut

Steps:

  • Rub the pork with the lemon zest and fennel seeds, then heat the oil in a non-stick frying pan. Brown the chops for 3 mins on each side, then remove from the heat. Splash over half the lemon juice, season, then leave to rest while you make the salad.
  • Mix together the sliced fennel, apple, onion, mayo mix and nuts. Season with black pepper and squeeze in the remaining lemon juice to taste. Serve the pork with the pan juices spooned over, and the fennel slaw on the side. Great with jacket potatoes.

3 cups red cabbage, thinly sliced

2 teaspoons ground caraway seeds
1 1/2 cups buttermilk
2 tablespoons sugar
2 tablespoons cider vinegar

Steps:

  • Place fennel, green and red cabbage, apples, and celery in a bowl.
  • In a separate small bowl, whisk together the oil, caraway, buttermilk, sugar, and vinegar.

1 large onion, chopped
1/2 teaspoon mustard seeds
1/2 teaspoon celery seed
1 cup sugar
1 cup white vinegar
2/3 cup oil

Steps:

  • Mix shredded cabbage, bell pepper, onion, mustard seed, and celery seed in a bowl with a cover. Set aside.
  • In a saucepan, bring sugar, vinegar, and oil to a boil, and pour over cabbage while hot. Do NOT stir cabbage mixture until cold.
  • Cover and place in the refrigerator. This will keep for several days.

  • Prepare your vegetables. Peel your carrots (if you want), onions and any bits of the other veg. Also, seed your cucumber. Do this by slicing the cucumber in half length wise, and then use a spoon to scoop out the seeds in the centre.
  • If you have a mandolin, set it on a thin setting and slice up the carrots, fennel, onion and radishes. You can also do this for cucumber, or chop by hand. If you don't have a mandolin, use a good sharp knife and slice your veg very thinly. Place all chopped vegetables into a bowl.
  • Mix the oil, vinegar sugar with a bit of salt and pepper. Wisk and toss with the vegetables. Then set in your fridge for at least 30min.
