BAKED CROISSANT BREAKFAST SANDWICHES



Baked Croissant Breakfast Sandwiches image

Baked Croissant Breakfast Sandwiches made with fluffy and cheesy scrambled eggs, sliced ham, sharp cheddar cheese, on buttery croissants. Easy to make-ahead and free for grab-n-go meals too!

8 croissants (sliced in half)
8 slices sharp cheddar cheese
8 slices deli ham
6 large eggs
⅓ cup Whole Milk
salt and pepper to taste
½ cup Shredded Mozzarella Cheese

Steps:

  • Preheat oven to 350 degrees. Arrange bottom half of croissants in Ia single layer on a large rimmed baking sheet. Place one slice of ham and one slice of cheese on each croissant.
  • In a medium bowl whisk together eggs, milk, salt, and pepper. Pour egg mixture into greased pan or skillet over medium-high heat. Cook for 2-3 minutes. Use a wooden spoon or a rubber spatula to gently stir the eggs, being sure to scrape the bottom of the pan as you are stirring so eggs cook evenly.
  • Once eggs begin to look mostly cooked, stir in shredded mozzarella cheese until melted and combined, then finish cooking eggs to your liking. Remove from heat.
  • Top ham and cheese with a large scoop of scrambled eggs. Top with second half of the croissant buns. Bake in preheated oven for 10 minutes or until cheddar cheese is melty and croissants are toasted.
  • Serve immediately OR allow to cool completely before wrapping individually in plastic wrap and freezing. To reheat, unwrap, place on a paper towel and microwave for 1 minute or until heated through.

Steps:

  • Cook the egg with the yolk broken to your taste. Fry bacon to medium doneness. In the same pan after disposing of any excess bacon grease, lightly fry the ham. Cut croissants in half, and layer egg, bacon, ham and cheese.

With crispy buttery croissants and smoky bacon, what is there not to love about this dish?! It bakes like a casserole but cuts into perfect individual sandwiches. The cheese is ooey gooey and the eggs cook up wonderfully. This will become your go-to breakfast. It's great if you're serving a crowd.

6 large croissants, cut open
1 pkg bacon, 16 oz.
8 slices provolone cheese
1 c cheddar cheese, shredded
8 eggs
2 Tbsp milk
2 Tbsp butter

Steps:

  • 1. Preheat oven to 375 degrees. Lightly grease the bottom of a 9x13 baking dish.
  • 2. Cook bacon and set aside on a plate with a paper towel to soak up the grease. Once cooled, break into 1 inch pieces (approximately).
  • 3. Place the bottom halves of the croissant in the dish, trying to get them to be as close together as possible.
  • 4. Spread provolone and cheddar over the tops of the croissants. Bake in the oven until cheese begins to melt (about 5 minutes).
  • 5. Remove from oven. Spread the bacon evenly over the top of the cheese.
  • 6. In a medium bowl, whisk the eggs and milk until well blended. Pour over the top of the bacon and croissants. Bake for 15 minutes or until egg is cooked. Remove from oven.
  • 7. Lightly butter the outside of the croissant tops and place atop the casserole. Place back in the oven for 5 minutes until croissants are toasted slightly.
  • 8. Remove and let sit for 10 minutes. Cut pieces with a knife before serving with a spatula.
