SUPER FOOD SPINACH SALAD WITH POMEGRANATE-GLAZED WALNUTS



Super Food Spinach Salad with Pomegranate-Glazed Walnuts image

1/4 cup plus 2 tablespoons pomegranate juice
1 teaspoon sugar
Kosher salt
1/2 cup coarsely chopped walnuts
1/4 cup thinly sliced red onion
One 5-ounce container baby spinach
4 ounces white button mushrooms, trimmed and thinly sliced, about 1 cup
3/4 cup grape tomatoes, halved
1 tablespoon red wine vinegar
1 tablespoon good quality extra virgin olive oil

Steps:

  • Combine 1/4 cup juice with the sugar and 1/4 teaspoon salt in a small nonstick skillet. Bring to a simmer over medium-high heat and cook, stirring occasionally, until the mixture reduces slightly, about 5 minutes. Add the walnuts and continue to cook, stirring, until the nuts are coated and dark and the liquid evaporates in the skillet, about another 5 minutes. Transfer to a baking sheet to cool. When cool, break apart with your hands.
  • Meanwhile, soak the red onion in ice water for about 10 minutes; drain and pat dry. Place the baby spinach in a serving bowl and top with the onions, mushrooms, tomatoes and walnuts. In a bowl whisk the remaining 2 tablespoons juice with the vinegar, 1/4 teaspoon each salt and pepper, and then whisk in the oil. Drizzle over the salad and toss just before serving.

Quinoa, toasted pumpkin seeds, feta and ripe watermelon make a fabulous and filling vegetarian supper that counts as 3 of your 5-a-day

100g quinoa
2 tbsp pumpkin seeds
½ small watermelon , skin and seeds removed, cut into chunks
80g baby spinach
1 ripe avocado , peeled and sliced
½ small pack mint , finely chopped
50g feta , crumbled
juice 1 lime
1 punnet salad cress

Steps:

  • Rinse the quinoa, then put it in a pan with a fitted lid and cover with 200ml water. Cook, covered, over a medium heat for 15 mins or until fluffy and the water has been absorbed. Don't worry if it catches on the bottom at little. Fork through to separate the grains , then leave to cool.
  • Meanwhile, heat a frying pan over a medium heat and toast the pumpkin seeds for 1 min or until they start to pop. Tip into a serving bowl or on a platter with the watermelon, spinach, avocado, mint and feta. Toss through the quinoa , then squeeze over the lime juice with a pinch of seasoning. Top with the cress and serve.

2 (10 ounce) packages frozen spinach
1/2 cup sour cream
1 tablespoon dehydrated onion (or 1/2 c chopped fresh onion)
1 1/2 cups grated cheese
1 1/2 cups fresh breadcrumbs
1/4 cup parmesan cheese

Steps:

  • Thaw and drain the spinach.
  • Mix spinach, onion and sour cream.
  • Place in greased casserole dish.
  • Cover (layer!) with grated cheese, fresh bread crumbs, and parm.
  • Bake at 350 for 30 minutes.

1/2 cup vegetable oil
1/2 onion, cut into 1-inch chunks
1/4 cup firmly packed brown sugar
1/4 cup red wine vinegar
2 tablespoons catsup
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
4 bacon slices
1 spinach bunch, washed, trimmed, torn into bite-size pieces
1 1/2 cups bean sprouts
6 mushrooms, sliced
4 green onions, sliced
1/2 cup sliced canned water chestnuts
2 hard-boiled eggs, chopped
1/4 cup dry-roasted sunflower seeds

Steps:

  • Puree first 7 ingredients in blender or processor until smooth and emulsified. Set dressing aside.
  • Cook bacon in heavy medium skillet over medium heat until crisp. Drain bacon on paper towels. Crumble. Combine spinach and remaining ingredients in large bowl. Add enough dressing to season to taste. Toss well. Garnish salad with bacon and serve.

This is a fantastic dish that my mom showed me how to make. It is an easy, impressive side dish that will have everyone raving!

spinach leaves
1 tablespoon olive oil
3 slices bacon
1/4 cup feta cheese, crumbles
1/4 cup pine nuts

Steps:

  • The key to this recipe is that it has to be prepared right before serving.
  • Prepare the bacon (I like to use the already cooked kind) and crumble it.
  • Pour the olive oil into a frying pan and heat on medium heat.
  • Add the spinach leaves.
  • Once the spinach leaves have mostly wilted, add the bacon and the pine nuts.
  • Just before serving, add the feta cheese crumbles.
  • The ingredient amounts I have stated above are ballpark figures.
  • I usually use a bag of baby spinach leaves for this recipe.
  • You can use sunflower seeds instead of pine nuts and blue or gorgonzola cheeses instead of feta.
