CRUNCHY SUPERFOOD SLAW RECIPE



Crunchy Superfood Slaw Recipe image

2 tbsp macadamia nut oil (or flaxseed oil)
1 tbsp sesame oil (not the toasted kind)
3 tablespoons raw honey
2 tablespoons rice wine vinegar (unflavored/unsweetened)
Juice of 2 limes (about 1 1/2 tablespoons)
2 tablespoons almond butter or natural peanut butter
1/2 tsp salt
A few dashes of hot sauce for heat (optional)
4 cups shredded cabbage
2 carrots, shredded
1 apple, peel on, cored and julienned
1 bunch green onions (about 8), finely chopped
1 handful cilantro, chopped
1/2 cup sliced almonds
1/3 cup hemp seeds

Steps:

  • Whisk all dressing ingredients in the bottom of a large bowl. Add all salad ingredients and toss well to coat.

1/2 head green cabbage, super finely sliced with a mandoline
1/4 head red cabbage, super finely sliced with a mandoline
1/4 cup chopped fresh parsley
1/4 cup apple cider vinegar, plus more if needed
2 tablespoons stone-ground mustard
2 tablespoons light brown sugar
2 Hungarian wax peppers, seeded and ribs removed, finely julienned
2 Hungarian wax peppers, seeded and ribs removed, finely julienned
1/2 red onion, super finely sliced with a mandoline
Kosher salt and freshly ground black pepper

Steps:

  • Combine the green and red cabbage in a large bowl. Add the parsley, vinegar, mustard, sugar, peppers, onions and some salt and pepper and mix to combine. Let sit for 30 minutes.
  • Drain the excess liquid from the bowl. Transfer the slaw to a piece of cheesecloth and lightly squeeze to remove more liquid. Return the slaw to the bowl and add a little more vinegar if necessary.

2 cups thinly sliced red cabbage
2 large red or yellow bell peppers, cut into matchstick-size strips
2 medium carrots, peeled, cut into matchstick-size strips
8 large green onions, cut into matchstick-size strips
1/2 cup chopped fresh cilantro

Steps:

  • Whisk first 7 ingredients in small bowl to blend. (Dressing can be made 1 day ahead. Cover and chill. Let stand at room temperature 30 minutes before continuing.)
  • Combine remaining ingredients in large bowl. Add dressing and toss to coat. Season with salt and pepper and serve.

100g pot fat-free Greek yogurt

Steps:

  • Mix the cabbage, apple, carrots and onion in a large bowl. In a separate bowl, mix the yogurt, lemon juice, vinegar and mustard. Season, then pour over the vegetables. Give everything a good stir to coat in the dressing and eat immediately, or chill until you are ready to serve.

1 cup thinly sliced red cabbage
1 cup jicama, but into matchsticks

2 medium carrots, cut into matchsticks
8 large green onions, sliced
1 bunch fresh cilantro, chopped
2 jalapenos, minced fine, without seeds

Steps:

  • Whisk first 7 ingredients in a snall bowl to blend.
  • Combine all remaining ingredients in a large bowl.
  • Add dressing, then toss to coat well.
  • Dressing may be made one day in advance, but let sit at room temperature for 30 minutes before mixing with freshly prepared salad.
  • Sprinkle with chopped peanuts as garnish if desired.
