LATKES (POTATO PANCAKES)

Latkes (Potato Pancakes) image

Make and share this Latkes (Potato Pancakes) recipe from Food.com.

Provided by Teresa Johnson

Categories     Breakfast

Time 50m

Yield 10 serving(s)

Number Of Ingredients 9

3 lbs potatoes
2 eggs
1 teaspoon salt
3 tablespoons all-purpose flour or 3 tablespoons matzo meal
1/2 teaspoon baking powder
1 onion, minced
black pepper, to taste
paprika, to taste
vegetable oil (for frying)

Steps:

  • Wash and peel the potatoes.
  • Grate the potatoes with a grater or food processor.
  • (You can grate them into a bowl of salted water to keep them from discoloring. Otherwise they discolor about as fast as you can grate them, although it doesn't hurt anything if you use them right away). Drain off all liquid, and squeeze the excess liquid out by hand.
  • (Do this even if you don't soak them in the salted water.) Beat the eggs and mix with the grated potatoes and other ingredients, except the oil.
  • Heat about 1/2 inch of oil in a skillet over medium high heat until very hot.
  • Drop potato mixture by heaping tablespoons into oil (about 4 at a time).
  • Use a pancake turner to flatten them out.
  • Fry to golden brown on both sides (about 3 minutes per side).
  • Drain on paper towels.
  • Serve topped with applesauce or sour cream.

SUPER SIMPLE LATKES (POTATO PANCAKES)

Super Simple Latkes (Potato Pancakes) image

We love potato pancakes in our house, but until I came up with the idea to use pre-shredded frozen potatoes, they were a once a year thing at Hanukkah. Peeling, shredding and draining the potatoes were a real pain. Now that the hard work is done, we can eat them all year long!!! At Passover I will make them with Matzoh Meal instead of flour.

Provided by LizP5885

Categories     Breakfast

Time 30m

Yield 9 Latkes

Number Of Ingredients 9

1 (30 ounce) bag frozen potatoes (shredded)
1 cup sweet onion, finely diced
2 eggs, beaten
salt
1 teaspoon black pepper
3 tablespoons flour
vegetable oil (for frying)
sour cream, for topping
applesauce, for topping

Steps:

  • Defrost grated potatoes in a medium-size colander. Press with paper towels to remove excess moisture. There won't be much.
  • Add onion, eggs, salt, pepper and flour. Mixture should be thick and cohesive.
  • Pour about 1/4 inch of oil into a heavy-bottomed frying pan. I use an electric frying pan at 375 so it doesn't get too hot and burn the latkes.
  • Use about 2 Tablespoons potato mixture and place in the oil and press into a patty.
  • Fry for about 3 minutes. Flip and fry for another 3 or so minutes. If pancake cooks too fast, reduce oil's temperature. If it takes longer, turn the oil up so they don't get soggy. Repeat with remaining potato mixture.
  • Drain on paper towels and serve immediately, or keep in a 250 oven on a baking sheet.

FOOLPROOF POTATO LATKES

Foolproof Potato Latkes image

This is my mother's latke recipe which has been a smashing hit at dozens of Chanukah parties. The secret is in the potatoes, which are crushed rather than grated, resulting in a light, crispy latke.

Provided by basg101

Categories     Side Dish     Potato Side Dish Recipes     Potato Pancake Recipes

Time 40m

Yield 5

Number Of Ingredients 7

4 potatoes, peeled and cubed
1 onion, chopped
2 eggs
2 teaspoons salt
2 tablespoons all-purpose flour, or as needed
1 teaspoon baking powder
¼ cup canola oil, or as needed

Steps:

  • Place 1/4 of the potatoes, onion, eggs, salt, flour, and baking powder in the work bowl of a food processor; pulse several times until the vegetables are finely chopped. Add the rest of the potatoes, and pulse again until all the potatoes are finely chopped and the mixture is thoroughly combined.
  • Heat canola oil in a skillet over medium heat. Scoop up about 1/3 cup of the potato mixture per latke, and place into the hot oil. Fry the patty until brown and crisp on the bottom, flip it, and cook the other side until brown, 2 to 3 minutes per side. Repeat with the rest of the potato mixture, replenishing the oil as needed. Serve hot.

Latkes (potato pancakes) are a must have at Hanukkah, but really are wonderful any time of year! This is my mother's recipe, which is honestly the best latke I've had. I usually end up having to make a second batch because they disappear so quickly. I've tried other recipes and always return to these. Lovely topped with sour cream or applesauce.

  • Bring a large pot, halfway filled with water, to a boil. Add the potatoes. When the water returns to a boil set the time for 30 minutes. Remove potatoes from the pot. Let them cool for 15 minutes, then put them in the fridge – covered with foil – for at least 2 hours or over night.
  • Line a baking tray with two layers of paper towels and set aside. Heat 2 tablespoons olive oil in a large heavy (preferably cast iron) skillet over medium heat. Sauté the onion for about 7 minutes, stirring occasionally, until softened and just starting to brown. Transfer onions to a clean plate and leave them to cool. Don’t wash the onion pan – you’ll use it to fry the latkes.
  • While the onions are cooling, peel the potatoes. You can peel them by hand, with a vegetable peeler or with a knife. The skin will come off easily. Grate the potatoes into a large bowl, using the large holes in a hand or box grater. They’re extremely easy to grate. (Or you can shred them in the food processor, using the shredding attachment) Add the beaten eggs, salt, pepper, flour and cooked onions. Toss gently to combine everything.
  • Pour enough oil into the skillet to come up to about 1/8 of an inch. Heat the pan over medium-high heat until the oil wrinkles – hot but not smoking. Form the latkes into any size you like by scooping with a tablespoon and using your hands to gently pat them into the desired shape. Lay each latke carefully into the hot oil after you form it, working in batches so you don’t crowd the pan. Cook for about 2 minutes per side or until they are golden brown. Adjust the heat so they don’t burn and add more oil, as needed. Transfer cooked latkes to a paper-towel-lined tray. You can keep them warm in a 225ºF oven until ready to serve.

From clubhouse.ca
  • Shred Potatoes 1. Using a food processor or hand grater, start by shredding 6 large potatoes (or 2 ½ pounds). 2. Be sure to choose starchy spuds, such as Idahos or russets, instead of waxy varieties like new potatoes.
  • Dry Potato Shreds. Dry your potato shreds by pressing them in a colander, squeezing them in a large kitchen towel, or in a paper towel. No one likes a sopping-wet potato latke!
  • Combine Potatoes with Spices 1. Place your potatoes into a big bowl, along with 1 chopped onion, 2 lightly beaten large eggs, and 3 tablespoons of flour or matzoh meal.
  • Flatten Potato Mixture 1. Heat ½ cup of vegetable oil in a large nonstick skillet over medium-high heat. 2. Place heaping spoonfuls of the potato mixture into the skillet, leaving at least ½-inch of room between each pancake.
  • Fry Your Potato Latkes 1. Cook 3 to 4 minutes or until golden brown on one side. 2. Flip carefully, and cook until golden brown on the other side (3 minutes more).
  • Serve Latkes with Sour Cream and More. Serve with your choice of latkes sauces: Sour cream and applesauce are traditional. Yes, you can buy a jar, but why not get into the celebratory holiday spirit with our homemade applesauce recipe instead?
