The old-fashioned version of this soup takes hours to prepare. Here, we've cut down the cooking time by using canned broth and boneless, skinless chicken thighs for an easy, family-friendly soup perfect for lunch or dinner.

1 tablespoon olive oil
2 carrots, chopped
2 celery stalks, chopped
1 small onion, chopped
Coarse salt and ground pepper
1 can (14.5 ounces) reduced-sodium chicken broth
2 boneless, skinless chicken thighs (about 8 ounces total)
1/3 cup wild-rice blend (seasoning packet discarded)

Steps:

  • In a medium saucepan, heat oil over medium-high. Add carrots, celery, and onion; season with salt and pepper. Cook, stirring occasionally, until vegetables are crisp-tender, 3 to 5 minutes.
  • Add broth, chicken, rice, and 1 1/2 cups water to pan. Bring to a boil; reduce to a simmer, and cover. Cook until chicken is opaque throughout, 6 to 8 minutes. With a slotted spoon, transfer chicken to a cutting board. When cool enough to handle, shred with two forks.
  • Meanwhile, continue to cook soup, uncovered, until rice is tender, 6 to 8 minutes. Return chicken to pan; simmer until heated through, about 1 minute. Season with salt and pepper. (To store, place in airtight containers, and refrigerate up to 2 days; reheat over medium, about 10 minutes.)

1 1/2 cups canned or frozen cooked wild rice
1 cup half-and-half
1/3 cup slivered almonds, toasted
1/4 cup chopped fresh parsley

Steps:

  • In 3-quart saucepan, melt butter over medium-high heat. Add celery, carrot, onion and bell pepper; cook about 4 minutes, stirring occasionally, until tender.
  • Stir in Bisquick mix, salt, pepper and thyme. Stir in water, broth and wild rice. Heat to boiling, stirring frequently. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.
  • Stir in half-and-half, almonds and parsley. Heat just until hot (do not boil).

½ cup dry lentils
3 cups water
1 (6 ounce) package uncooked wild rice
1 (14.5 ounce) can vegetable broth
1 (10 ounce) package frozen mixed vegetables
1 cup milk
1 ½ cups shredded American cheese

Steps:

  • Rinse and sort lentils, discarding any debris or blemished lentils.
  • Combine lentils and water in a medium saucepan. Bring to a boil; cover, reduce heat to low and simmer for 5 minutes. Let stand for 1 hour, covered. Drain and rinse lentils.
  • Using a medium saucepan cook rice according to package directions.
  • In a medium stock pot add lentils, cooked rice, vegetable broth, frozen mixed vegetables, milk and American cheese. Bring to a boil; reduce heat to low and simmer, uncovered for 20 minutes. Garnish as desired.

1 tablespoon canola oil
1 quart water
1 medium onion, chopped

2 cups half-and-half cream
1/2 teaspoon dried rosemary, crushed
1 teaspoon salt

Steps:

  • In a medium saucepan, combine the rice, oil and water; bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Meanwhile, in a Dutch oven, cook the onion, celery and carrot in butter until vegetables are almost tender. Stir in flour until blended; cook and stir for 2 minutes. Slowly stir in broth and undrained rice. Bring to a boil; cook and stir until slightly thickened, 2 minutes. Reduce heat; stir in the cream, rosemary and salt. Simmer, uncovered, until rice is tender, about 20 minutes.

This is a quick and delicious soup with just enough sweet and nutty flavor that will have you saying, "more soup ,please." Recipe idea from Saveur Magazine, but tweaked by me. One of my daughter's favorite soups.

4 c chicken broth
2 c vegetable broth
2/3 c long-grain/wild rice blend,uncooked
1 c finely chopped onion
2 stalk(s) celery and a few leaves chopped fine
2 tsp minced garlic
2 c cream or half and half
2 1/2 Tbsp cornstarch
2 tsp chopped fresh thyme leaves
1/2 tsp chopped fresh basil
ground white pepper and kosher salt to taste
1/2 c thinly sliced button mushrooms
2 Tbsp maple syrup
sliced chives and chopped salted peanuts for garnish

Steps:

  • 1. In a 4 quart soup pot, bring both broths and rice to a boil over medium-high heat. Cover and cook, stirring occasionally for 40 minutes. Add onions,celery and garlic and continue cooking until rice is tender , about 10 minutes.
  • 2. In a small bowl, whisk the cream, cornstarch, thyme, basil, and pepper; whisk into soup. Add mushrooms and cook, stirring, until soup thickens, about 15 minutes.
  • 3. Stir in Maple syrup, salt and pepper. Serve and garnish with chopped chives and salted chopped peanuts.

2 cups wild rice, cooked

3 tablespoons slivered almonds

Steps:

  • Melt the butter in a saucepan, and saute the onions until they are tender.
  • Blend in the flour.
  • Slowly stir in the broth.
  • Cook on med-high heat, stirring constantly until the mixture comes to a boil.
  • Boil and stir for 1 minute.
  • Add the wild rice, salt, ham, carrots and almonds.
  • Simmer 5 minutes.

3/4 cup wild rice
1 tablespoon fine sea salt
2 tablespoons butter
Optional: 3 ounces ham, bacon, or pancetta
2 medium leeks or small onions, finely chopped
2 stalks celery, finely chopped
2 medium carrots, peeled and finely chopped
5 cups chicken, turkey, or vegetable broth
1 to 2 cups shredded or chopped cooked chicken or turkey
Optional: 2 sprigs fresh thyme
1/2 to 1 cup heavy cream
Dash sea salt to taste
Dash freshly ground pepper to taste

Steps:

  • Gather the ingredients.
  • Bring 4 to 6 cups of water to a boil. Add the wild rice and salt. Cook until the wild rice is tender to the bite, about 30 minutes. Drain and set the rice aside.
  • Meanwhile, melt the butter in a medium pot over medium heat. Add the ham, bacon, or pancetta to the pot if using. Cook, stirring now and again until the meat is sizzling, some of its fat has rendered, and it is just barely starting to darken on the edges, about 2 minutes.
  • Add the leeks or onions, celery, and carrots. Cook, stirring frequently, until the vegetables soften, about 3 minutes.
  • Add the broth, pre-cooked chicken, and thyme sprigs if using and reserved wild rice. Bring to a boil, reduce heat to a simmer , and cook to allow flavors to blend about 10 minutes.
  • Remove and discard the thyme sprigs. Stir in the cream (the more you use, the creamier it will be!) and bring back to a simmer. Add salt to taste.
  • Serve hot with a grinding or two of black pepper on top.
